    Cheese Lab at the Assembly Food Hall offers pleasantly surprising fare at reasonable prices for its location. Service is efficient with a texting system to alert you when your order is ready. There is plenty of seating, we chose to sit outside as it was a nice night, and is a bit quieter. The Pulled Pork Meltstorm & Smash Grilled Cheeseburger Melty were both flavorful and hearty. The Buffalo Bill Chicken Melty was devoured in seconds, but 1/2 the Mac and Cheese was left as it was not the best option. The Cheese Lab is a good choice for quick, tasty & reasonably priced food at Assembly Food Hall.

    While downtown Nashville we went into the Assembly Food Hall (North Hall) to check out some of the various choices. We made the best choice by stopping in the CHEESE LAB! We had literally the best bagel breakfast sandwich "Good Morning Smashville" and the most yummy Jumbo Cheetos Ball 'Boudin Ball' rolled in hot Cheetos, and filled with lab sauce, beef, and rice! Out of this world!

    Firebird Honey Melty

    Sooooo good! They have really fun options and the bread is amazing. I got the Firebird Honey Melty with no pickles (pictured), other girls got southern heritage grilled ham duo and American cheese classic - loved them all!

    Date of visit: March 16, 2025 Having been to the food hall about 18 months ago, I was pleasantly surprised to see this new addition since my last visit as I am a sucker for a good grilled cheese samich. Cheese Lab offers a number of options depending on how fancy you want to get with your hot fromage, too. The Smoked Brisket Mac & Cheese was fantastic! It actually was so good that I didn't need ketchup and I really can't even complain about the price of lack of an included side, the food was just that good. Bonus points for getting to watch staff use a handheld flamethrower to melt the cheese while the samiches were on the grill! Would have liked to try the sweet potato fries but will save those for the next visit.

    Toastie was very good but a little small. Coukd have done with more in it and to be wasted more. Very quick and friendly service.

    What a cool idea! My husband and I went to Nashville for the weekend and got our first meal of the day here. I got the Smashville Breakfast and he got the Craftsman Breakfast. $9.00 each, not bad pricing for downtown Nashville. Food was hot and really tasty.

    Over priced and over rated!! I had the Smokehouse, brisket sandwich. It was swimming in Carolina BBQ sauce. So much so I thought I had a Carolina BBQ sauce sandwhich!! Infuriating. I couldn't taste the brisket or any of the mac-n-cheese, which was all of a teaspoon. I was so excited anticipating this sandwich and so dissatisfied after eating a few bites. No thanks, Nashville you can have this one!

    Cheese Lab is located on the second floor of the Assembly Food Hall in downtown Nashville. Their specialty is grilled cheese sandwiches, and they offer a variety! You can find Buffalo chicken, Nashville smokehouse with brisket, and Brie and fig, just to name a few. They also offer soups (tomato, broccoli and cheese, and French onion), tots, salads, and cookies. My husband and I stopped by before attending a concert at Bridgestone. We each had a Nashville Smokehouse sandwich with cheese, brisket, and barbecue sauce. Our sandwiches were great with plenty of meat and cheese. We shared some tots, and I had tomato soup and he a side salad. All of our sides were delicious! His salad was so fresh with fresh strawberries, dried cranberries, and feta cheese. It was a great size for a side salad. My soup was the perfect complement to my sandwich. If you are looking for a quick bite before a show you can't go wrong with a visit to the Cheese Lab.

    Tried the new Dubai chocolate today and I really disliked it. It's not sweet at all. I don't recommend. wasn't worth my 10 bucks.

    Comfort food done right! The classic grill cheese was grilled to perfection. Just look at that cheese pull. The cup of french onion soup was not salty but a compliment to the sandwich.

This was a great move for them, and their new location is just beautiful. It's bright and colorful, with lots of fun murals on the walls, while maintaining the same fast and fresh casual food. I am slowly working my way through their menu. While everything I've tried has been tasty, there are definitely some highlights. Their seasonal Greek Signature, for example, is probably my new favorite. It's full of flavor and the perfect balance of Mediterranean ingredients. I also love their new wraps - especially the BBQ Chicken and the Chicken Caesar. Finally, this location has a FroYo machine! It's just under $5 for a generous cup of frozen yogurt, and then you can add on toppings for a small charge as well. My husband I dined in last night and decided to share some, and it was a hit! It's definitely more on the tart side than the sweet side, making it a nice treat when you're eating healthy. Service is fast and friendly (just like at the other Radish locations). There is some free street parking available, along with lot behind the restaurant that they validate for inside!

I added tempeh bacon and extra dressing on the side. (It didn't need the extra dressing though.) This salad is SO good! I had to force myself to put the fork down and not overeat. It's a large portion so you can share or save half for another day. (When doing this I recommend getting the dressings on the side to prevent soggy greens.) All of the ingredients tasted super fresh, and that Szechuan tofu was thoroughly marinated. Deliciousness! The tempeh (and at home avocado) that I added wasn't necessary but it sure was tasty. This salad is gluten free. SZECHUAN BRUSSELS I love me some roasted brussels sprouts so it was a must to try theirs. I added jalapeños and Hot Tempeh. I have no idea what Hot Tempeh is but I wanted to try it. Best decision ever. The dish itself is amazing. 10/10! The sprouts are saturated in the Szechuan sauce and spices, so every tender bite bursts with tantalizing flavors in your mouth. The Hot Tempeh is tempeh with a coating. It's quite delicious and it elevated an already soaring experience for me. The Szechuan Brussels dish is gluten free, but the Hot Tempeh is not (because of the breading). DUBAI CHOCOLATE CAKE Because I had to. It was NOT gluten free, but I risked it (I have a gluten sensitivity). They did have a gluten free chocolate cake and a gluten free brownie à la mode dish, but I needed that Dubai Chocolate. It was delicious. BLUEBERRY PANCAKES I ordered a single pancake, gluten free for $1 extra. So fluffy and buttery. You'd never guess it was gluten free or vegan. ROASTED POTATOES Excellent preparation and seasonings. MOCK TUNA MELT Gluten free when ordered as a bowl. It was served on a bed of spinach instead of bread. I omitted the cheese and tomatoes. It was very good and the chipotle sauce had a great kick. TRIPLE CHOCOLATE CAKE Gluten free. Rich. Delicious. Everything I ate here exceeded my expectations. Graze is sure to be one of my go to spots for delicious food when I'm in Nashville.
