This is a 3-hour class that did not have enough time to allow the croissants to proof - when I saw that I gave up. I was looking forward to enjoying crunchy, buttery, savory and sweet croissants. This was basically how not to finish your croissants at home - don't let them proof enough. If you can't do that in the time frame make the class longer, warm up the kitchen or don't teach it. If the instructor had paid attention - a little skill building on how to roll out dough would have been helpful. Rolling dough and butter for the lamination is a thing - rectangles, smooth, even thickness, not too much flour. Well our group of 4 knew none of that. Yet the instructor just carried on. She did give a great tip to get your butter the right size so you can make your dough fit the butter. But didn't make up for all the work ending in croissants that never rose/proofed before baking. Three hours, 2 -15 min breaks for unproofed ham and cheese and cinnamon rolls. She showed us how to roll out, cut and roll up the classic croissant - one mini and moved on. Honestly class would have been better getting to a classic, well proofed croissant and looked a lot better than the flat squares and cinnamon rolls. Disappointed was looking forward to 144 layers of buttery croissant.

I went to one of her free classes at Whole Foods today. She was funny, charming and entertaining for two straight hours of vegan cooking. On the menu was salad, dressing and jambalaya. You might think learning about how to make salad would be a snoozefest, but Mayra knows how to make it fun and delicious. She doesn't measure ingredients, adds whatever she (or her audience) wants and throws in all sorts of tips during the session. She encourages everyone to try vegan food (or go vegan) by being passionate and excited, but not preaching. She and her team made every effort to ensure their guests were fed, able to ask questions and had a good time. She said she's opening a restaurant downtown in July--looking forward to that! Chef Mayra definitely cooks with lots of yummy ingredients and love.

We took our 2 year old to a different daycare that charges much less and they couldn't help our son. He's highly sensitive and he's only 2 so his whole remembered life experience is during quarantine. It was hard for him to adjust. But they laid with him until he got used to napping there and he adjusted really well They keep the kids busy with projects all the time. We get pictures of him drawing and playing outside and learning with interactive toys. Like "fishing" or "milking a cow" or figuring out fun puzzles. In the spring they gardened!!! I can't show him gardening at home. I don't have a yard or the space or time to do that. He gets to play with dirt at school!!! He loves it. He really really loves it.
