Found a post boasting how great this place is, so I had to check it out. First this place is hard to find, make sure you use your favorite GPS. It is in a residential area. They sell to the public but do not have a storefront. The owners were so welcoming. It is a cash only business but the prices of the cheeses are reasonable priced. Growing up in a Sicilian family gives you an Uber sensitive palate for things like, good olive oil, good bread and, really good cheese. As a child, all of our shopping was in Chicago .. from Naples, Ambrosino and Cascio, to going train car to train car to select grapes for Papa to make wine. Always saw their cheese products in various Italian stores in northwest Chicago and to my surprise, its in Joliet. The location is in the middle of a residential area on the east side of town, which isn't exactly the best area. Its a small factory, which kinda looked like an elementary school. I couldn't tell where to go since there weren't signs telling which door is which. So I knocked on some random door and I hear some Italian-sounding voice telling me to just go in where I enter into an office with three old guys lounging. I tell one of the guys if I could get 2 pounds of Parmesan, they don't make it, as a matter of fact, they only make Romano. So I say fine, I'll have 2 pounds of that. Few seconds later, he presents me 2 powder packages and says, "That'll be $8." I tell him that I preferred the brick version and he tells me that they don't make that. Talk about the biggest WTF moment, since powdered cheese originally comes in brick form. "Oh, you don't have to buy them," I hear from one of the guys, most likely sensing my displeasure, where I politely leave, feeling a tad bit awkward being in that room. They pretty much get an extra star for being the least bit cordial to me, since I don't think they're used to dealing with non-business customers that randomly walk in. I was spoiled living outside of Chicago, I was able to get Chellino Ricotta anytime I wanted. Now we have moved to SW Florida and I am having a hard time finding it. I have to make lasagna for 25 people and I can't imagine making it without your ricotta. Update, it's been a week later and I have been to many different places trying the ricotta, to no avail. I spoke to a cheese dealer who claims his is the best ricotta from New York and he g gave me some ricotta to try and it was nasty. A very nice man, but he needs to try your ricotta. I went here on a weekday, about 2:30pm. All sources indicated they were open for business. I arrived at the front of their operations, no signs or indications whatsoever where to purchase products. I hear a guy yelling that they were closed. Then he asked me what it was that I need. I said I needed some Mozzarella. He rolls his eyes, comes out. He tells me it's 15 bucks. Goes inside the factory, then comes out with a brick of cheese covered in hair and dirty. I hand him a twenty and he says he doesn't have change. I started scrambling through my wallet. He then pulled out a wad of every bill imaginable, 1s, 5s, 10s, 20s. Cute, eh? He had the change the whole time. He then gives me the cheese and tells me very arrogantly that I got lucky today. I have been eating Chellino Scamorza Cheese for many years and its always been a special treat. Lately though I have not been happy with the quality. The last three times I have bought it, the cheese has been soft, mushy and tasteless. I tried melting it and it was even worse. This is sad that the quality has gone down as the price goes up. This cheese is 6.99 a pound and not worth it. I am keeping this [pound incase the company wants to see their product that still has a sell by date of 10/24/2021. The Scamorza cheese was so salty it made my homemade pizza barely edible. It was mushy to shred & It melted weird looked like vegan cheese. And we all had upset stomaches after eating. Yucky I bought it at Caputos read more

Their ricotta is to die for. Their scamorza is 1/2 salt and 1/2 cheese. can't figure why.... They don't care to correct their problem saying that they make it by hand...so? don't you taste a few samples before sending out the packages. read more

Every holiday I make lasagnas for my big Italian family. I grew up in Chicago so would always go to the deli's that would sell the Chellino ricotta. Years later I moved to Lemont and of course the family moves here as well. Amecci's deli in Darien carries your brand. But, if you don't get there or order ahead you're out of luck. Sweetwater Deli in downtown Lemont was carrying it about a year ago. So, I placed an order with Sweetwater because there're close to my house. When I went to pick it up, I noticed immediately it was not Chellino. The store owner told me this other brand was better because it's creamier. I bought it because it was too late to do anything else. The several lasagnas that I made were noticeably different. They were American style lasagnas, not Italian style. I love your ricotta because of the texture and taste. This other creamier stuff tasted like chalk flavored cream cheese. I am so grateful that you are located right here in Joliet. Excellent cheeses. They have been in business for over 90 years. Their scamorza is excellent. When I was younger, my mother would go and get blocks of mozzarella and I would cut the ends off to eat as soon as she bought them. If you want a taste of Southern Italian cheese style, this will give you a good idea. read more
