We stayed one night in Chico in the main lodge. The room is basic but nice, no AC but comfortable. We made reservations for dinner at the main dining area. It was SO good. Warm bread and butter and the burrata dish to start. We ordered the almandine trout and Oscar steak for our mains. Both were delicious, steak cooked perfectly medium. We had the crème brûlée for desert. We had great service and great food. I would definitely come back, especially when the weather is cooler for the heated pools.

This restaurant has been fantastic for the 30+ years since we first came here. The atmosphere is cozy and rustic, the service was super, and the food nearly five star! Highly recommend the Wellington! Well done!

What a great meal! Brian, Morgan and Kevin were wonderful, the food was even better and the wine was incredible! If you have a chance to check out the wine cellar, it is awesome. Gorgonzola filet mignon was cooked perfectly. The potatoes au gratin were fantastic, mushroom pasta was amazing and the mud pie and crepe brûlée hit the spot! Thanks again for a wonderful experience.

One of the best filet mignon dishes I've ever had! Aside from Beverly Hills and Las Vegas steakhouses I've been to, this place is absolutely incredible. Maybe it's the Wyoming beef? Wonderful crust and so tender it melted in your mouth. French onion soup - so so flavorful and incredibly delicious! I couldn't stop eating this. Kids prime rib - Impressive cut for the little guy! Great value and perfectly prepared. I was so happy to have an option other than hamburger/hotdogs, chicken nuggets or Mac and cheese. The Chico garden supplies their daily vegetables and the green beans were the freshest I've ever had! (I still need to get to French Laundry) The bread gets an honorable mention as well. Freshly baked and served with lovely soft butter. Slight doughy texture with a subtle yeasty-ness...yummy-ness. Can't wait for breakfast tomorrow!!!

While I didn't find much to recommend about Chico's Hot Spring or lodge, their food service is outstanding. Their evening menu offers a great selection of wonderful entrees, starters and desserts. I recommend the wedge salad, Gorgonzola Filet Mignon with scalloped potatoes, the crab cake and the crème brûlée for dessert.

On Wednesday evening we made a last minute decision to stop in for dinner and we are so glad we did. Sat at the bar as we like to do most visits, enjoyed a drink before ordering as we usually do but what came next was above and beyond and I have to share. We ordered our meal, and as my husband sometimes does, he ordered a rib eye and asked it to be cooked " as the chef recommendeds it". He does this all of the time...nothing more comes of it, dinner is served and it works out to be delicious most of the time. This evening there would be a different chain of events that would leave us very impressed. The bartender took it a step further, she decided to actually refer this order to The Chef... He took the time to come out to talk to us. He explained his experience cooking this choice of cut, he made a suggestion, and went into detail explaining the marbling. He offered his recommendation and we agreed. He called it "Pittsburgh Style", It was the best Ribeye we ever had, ( yes I made him share a piece ). I am sad to say we did not aquire this young man's name but we wish to recognize and commend him, not only on the result of the meal, but on his knowledge and dedication. He didn't have to take that extra step, but he did. And to our server/bartender...Kudos!

Since we couldn't guarantee our flight into BZN would arrive on time and we'd make it to a reservation, we called in advanced and were told that seats *could* be available at the bar. Recommendation: BOOK your reservation in advance and DO all that you can to make it. We arrived and were on the waitlist til a reservation holder called to cancel. We won a culinary lottery that evening -- and saw a rainbow during our after dinner stroll. The menu is Roman and a diamond in the rough. Don't confuse this cuisine with Italian. Before this trip, we eagerly anticipated the freshly caught trout. My husband was thankful for his Campione experience before ordering it from other restaurants on our trip. The pan-seared fish was richly paired with capers and parsley, funghi, leeks, and pickled fennel greens. (I almost ordered it but like a good Roman soldier, I divided to conquer the menu.) The manicotti was far from conventional. The flavorful, delicate oxtail and broth were unlike any heavy tomato-based sauce. This was simply stellar, and an ideal way to warm my belly on a rainy day. While Campione does not readily serve a chef tasting menu, each dish fully engages the senses. Rarely do I take photos when dining out; this dinner was an exception. Plating is colorful and the layers are visually engaging... but delay the gratification of the first bite especially if you order the smoked cauliflower: waft first. Hospitality by the hosts and server were top-notch, complementing the caliber of the food and living up to the motto embedded in the tiled entry: in the service of others.

Started the meal with roasted cauliflower and fritto misto. The cauliflower was really good, cooked perfect with the right amount of seasoning. The fritto misto was a fired trio of catfish, shrimp and calamari. It was fried in cornmeal, which was pretty good though it got a little gritty at the end. I had the scallops for the main. Enjoyable meal. It could have used a little more sear and the the cook was very slightly under. The seasoning was great. Keegan was our server and she was great. At a near century old establishment serving steaks the whole time is a hard thing to do. There are lots of restaurants that pivot and change and use burgers to get by, but steaks the whole time is a work that needs to be celebrated. Sure Texas is known for their cattle production and Nebraska for their grain grown to feed cattle, but the beef here, is grass grown, local that could have walked here and there is something to be said about that. That's more than dance with who brung you, but rather eat em where they lay. Apparently this used to be a Butcher Shop / Bank, interesting combo before 1937. Family owned and operated for generations. I came here 3 times while I was passing thru they do alot of things well. The BYO burger upgraded to Bison is a rarity and a must. The Fried Chicken sandwich is hearty and balanced with the horseradish, tomato, pickles. It doesn't even need cheese. Rocky Mountain oysters and tender with just enough chew. The breaded cheese curds hold up well to dipping sauces which most normal curds dont. Rocker sauce is good, but never figured out what was in it. Tangy, sweet. Loved the Wedge salad, the ranch was outstanding. Prime rib after 5pm, upgrade your sides to loaded baked potato and a wedge side salad, it's worth it. The 10 oz is more like 12 and the 16 oz is more like 18. Great crust and seasoning, zesty horseradish. Wall to wall pink, tender, juicy. No sauces here like au poive or a bernaise. Save room for dessert their carrot cake is moist, soft and sweet. the peanut butter pie is a downhome classic and the oreos, my god. Service is great, prices are good for the area. Ambiance is excellent. It's a great representation of what an area can do without trying to be like someone else. I actually had their shrimp which is odd being so far from water here, they obliged me to get them all 3 ways if I ordered 2 orders.
