I was excited to try this food truck turned restaurant that recently opened in a familiar space. Inside, you'll find the mini-bowling alley and super cute pink decor that matches their trucks and Day of the Dead themed art. The large seating area is clean, and the ordering area is modern, with large menu screens. The food is formatted so that you select your protein variation and then a presentation, which could be a quesadilla, nachos, taco, sandwich, or bowl. If you really want more, you can select a side dish. We decided to try pork nachos and a birria quesadilla. The service was top-notch, and the staff was super friendly. Unfortunately, it was a big letdown. $15 nachos had very little pork but lots of convenience store nacho cheese sauce, which was not at all what I expected. They also were missing a mess of normal nacho toppings, and those that were on it were scarce. More than half the chips were dry. The quesadilla was unremarkable. The cheese used was not high quality, and it seemed average at best. Overall, I am disappointed as I would have loved to have found another option in Brighton. With the fun atmosphere and lots of TV, it would have been a good place to grab a bite, a beer, and watch the game or meet with friends. At NDK here at Gaylord of the Rockies, not much for food options unless you want to pay an arm and a leg. That being said this being food truck, I still had to pay with a leg and half an arm for simple food to go, $17 an item. Simple service and not much else besides a snack. Food choices were chicken, pork or veggie. Bowl, tacos or quesadilla. We opted for a chicken bowl and pork tacos. Chicken bowl was small, basic, and topped with geen Chile's not really a a green chile. Food had an interesting citrus profile topped with cabbage, not a slaw. The pork tacos were a better of the two, being full of flavor and moist but drenching the single corn tortilla it was served in. By the end of the first taco, the other two were falling apart. Tacos were topped with cabbage again but all together, a very small portion filling for the tortilla being used. Overall food was edible. Not a coleslaw like labeled. Green chile was in fact just diced up green chile almost canned like. Small portions for the amount of paid. Would eat if I was hungry enough. read more

Terrible idea. First time going and this will be our last. quesadilla was soggy. Nachos were soggy. Beans tasted like they were from a can. Very salty, rice had too much butter. I really enjoyed these quesadillas. This truck came by our apt to give us a break from cooking at home! Such a nice break and made it extra delicious! This place is amazing! The quesadillas were the best I've had and the green chili tastes fantastic!

This is a fairly new food truck, and it shows in a few things for which they got dinged a star. First, the good. I had a pork quesadilla with savage sauce and a side of grilled Mexican corn. The quesadilla was well-stuffed with cheese and shredded pork, and tasted yummy. The savage sauce had a nice bite. I can't tell how the Mexican corn was, because they forgot to put it in my box and I didn't find out until I got home. The little plastic cup of sauce was only half full, and it wasn't enough for a single-tortilla quesadilla that I thought was probably $1 too much for what I got. They were a little slow to serve and slow to take my order as well, which speaks largely to what I perceive as inexperience. A little more attention to detail would go a long way to a fifth star rating. Maybe consider adding a spoonful of sour cream and/or guac to provide additional dipping enjoyment. read more

Recently named Best Food truck, Best tacos, and Beat green Chili, I knew I needed to seek out this food truck. They were within 10 min of my house and the plan came together pretty easily. Super friendly and helpful, we rolled up right as they opened and got the scoop. They put their award winning green chili (never got less than 3rd place in any competition - with many top awards) in all of their Dee-yahs! We love the heat so we definitely went with the savage. They make theirs with Carolina reapers so spicy and flavorful without being overbearing. We had the Triple B which is composed of brisket, bacon, bbq sauce, onions, and your choice of sassy or savage green chili. This thing is big and flavorful! Comes with a side of BBQ sauce for dipping. I got the pork Dee-yah with the savage which was amazing also. The pork was tender and the green chili so so good. It comes with non chunky salsa for dipping. I was happy they had their Birria today also as I am never one to turn that down. These were great as well. I would like if they offered a cheese version also as those tend to be my favorite. They seem to only do the Birria on the weekends and it is limited. They post up all over the city so keep an eye on their schedule and definitely check them out. The great part is they do an awesome job of packaging and these type of foods travel well. We brought everything home and enjoyed there. Word is they are getting a second truck also soon so they can spread the Dee-yah love!! Yay. read more

Man these guys hooked it up ! At rails end brewery I wasn't too hungry since our ladies were making dinner after this. They recommended the nachos to share. BOMB! Cheese, chiles, pork on the top. I have to mention they hooked it up with a free quesadilla and sprite/water. Also one of them had the same name as me. 100/100 score In my book. Outstanding food, even better service. The quesadilla I had was nicely filled with meat and cheese but the meat inside was too salty. I also ordered the corn, it came in a sauce container so it was a very small portion for the amount I was charged and was swimming in oil, I also thought it needed more flavor like more cilantro or lime. read more

My family and I were really excited to try this new food truck when it came to our neighborhood last weekend, however, the food was less than impressive. We ordered a mix of nachos, quesadillas and even a dessert and I can honestly say that I've had much better elsewhere, including at home. We placed our order online and did have to wait an additional 12 minutes past our scheduled pick up time, however, we were told that the nachos were being made fresh as to not get soggy so it seemed reasonable. When my husband and I received our order, we were missing one order of nachos which was somehow made and given to us in a minute or so. Now I know why - the "forgotten" nachos were literally less than half the size of the other 3 that we ordered, were completely dry and only included pieces of chips (not one whole chip!!!) as if we were given the last bits and pieces of the tortilla chip bag. It felt as if we were being penalized for letting the truck employee(s) know they forgot one of our paid items or that giving us pieces of chips was their way of getting revenge for their mistake. Not entirely sure what the deal was but the meal was definitely not worth the price paid and the "forgotten" nacho incident was anything but good customer service.
