Pretty sure I ate here a few years back but was sad to see that I did not review it already. I do remember going with my brother while on a ski trip and enjoying so much food - we had the queso appetizer and the churros for dessert. Otherwise, I can't remember what we ate but I'm going to look it up! This time, also a ski trip, but with a friend. We made a reservation for two at 7 but then two friends wanted to join and the restaurant was kind to let us change from a table for two to a booth for four at the last minute. We were seated downstairs, with Lily. She was excellent. Michael was her assistant and he was on top of it as well. We ordered a skinny pomegranate margarita and a spicy margarita. They are super flexible with the options and can make cocktails to order, FYI. We had a round of drinks with friends at the table, enjoying the complimentary bread and cilantro sauce, while we sipped our margaritas. Mine was not nearly spicy enough, so for round two, I asked Lily to make sure she told the bartender DOUBLE SPICE and that was when it finally came out right. I like it so hot the tongue tingles! It's funny to not be served chips and salsa, so my friend asked for it and we got some awesomely seasoned chips with pico. I ate it all hahaha. So good. For dinner, i had to have the salmon. chile mango? yes! on top of collard greens? yes! I was stoked. My dinner was freaking amazing and I ate every bite except for the one bite that I donated to my friend so she could experience my dish. She had the wild mushroom quesadilla since she wasn't very hungry after eating every single piece of bread in that basket except the one piece that I was able to grab. I thought the quesadilla was a very small portion; I would have been disappointed. It is on the appetizer menu though, so buyer beware. As a bread pudding lover, i had to try the bread pudding. I was sad that it came doused in chocolate sauce. Not my favorite. I prefer a rum or bourbon sauce. The pecans were not overwhelming. The bread itself is croissants so it was soft and sweet. We changed from vanilla to cinnamon ice cream and they did not complain. Overall, excellent service and awesome food. Glad I came back here and glad this place is still open after all the years. On a side note, when my friend asked what was good, our server made a few recommendations and then made me laugh when she said "our ribs have been falling off the bone since 1996." HAHAHA. Funny food joke, but it shows they've been around for awhile. Awesome. Check this place out. Bathrooms are clean. They use hand towels instead of paper towels. Drinks are strong. I kid you not the first time I had eaten here. It was fabulous along with every time afterward except this recent experience. I came in. Luckily, I was able to snag a table for a big party. wait service was a bit slow for our waiter to not be handling that many tables . We had our wedding rehearsal dinner here and it was such a fantastic experience -- the food was incredible, drinks were tasty and the service was so friendly. We sat downstairs as we had a bigger party. Started with some bread, which was a sleeper hit! I wasn't expecting Chimayo to have incredible bread, but it was awesome with the dip! Ceviche and guacamole were our choices for appetizers and both were awesome. We had a watermelon salad and a soup for another starter and there were compliments galore! The entrees were so good, too. The BBQ spareribs were HUGE and fell off the bone. Everyone else loved their entrees too. Lots of compliments about the duck enchiladas! Churros for dessert were top-notch too. Hostess was super pleasant and attentive! Loved her and the cozy ambience upstairs. We waited patiently as this gal told us it would just be a minute. I think she had an upstairs table in mind, but then something changed and she guided us to follow her downstairs. Things then took a turn. Our waiter was so odd. Everything about his demeanor was not customer service facing and he was boardering on rude. I'm vegan and asked for suggestions. He had none, in fact, pretty sure he doesn't know what veganism is because the salad he brought me had egg on it ‍ When the egg was removed (by my hubs) I had a pile of lettuce, some cucumbers, and black olives. At no point did he suggest anything else. We dropped $100, no alcohol, and l left hungry. They serve Wahaka, my favorite Mescal and the bartender's pour was perfect. We had Utah Trout and beet salad for main course and topped it off with the highlight of the meal - flan. read more

My wife and I live in Park City and this is one of our favorite places for delicious food and excellent service. The complimentary basket of bread and especially the green dipping sauce are addictive! If you like game meat, I highly recommend any of their the dishes. Likewise, their famous baby back ribs are fall off the bone amazing. All of the staff are very friendly, knowledgeable, professional, and attentive especially Lilly, Shannon, and Tyler. Heavy wood with iron accents and Spanish/Moroccan lights, the ambiance is warm and inviting, including the fireplace at the back. Grab a booth and start with the miscellaneous margaritas, the Serrano with seasoned salt is stoopidly perfect. Follow with the queso fundido or elk skewer apps; what we had but I'm sure others are just as delightful. Dinner...oh the options are all delish! Sea bass, salmon, elk, pork; again, those were our picks but, whatever you choose I can pretty much guarantee you won't be disappointed. Wanna keep hanging til you finish your amazing bottle of wine? Finish with the churros (with vanilla ice cream and chocolate sauce) and some espresso and you're ready for a walk about town. General details: they open at 4:45. There's a downstairs but...meh. There are parking garages up and down town, as well as pay street parking. If you want to meander afterwards there are plenty of little shops and bars to skip to. Meat was cooked to perfection. Service was fantastic and knowledgeable about the menu items! Drinks were delicious and the place was packed! So definitely recommend reservations! I don't recall if there was a bar you could sit at but I don't think there was. Came here to celebrate our wedding anniversary, we were seated by the fireplace, which was great considering the cold night. The server was great and the food A-M-A-Z-I-N-G!!!!! We started with ceviche (it's a must try!) I believe the buffalo was better than the elk, but both were delicious. The chalice from the palace has the brew that is true! Have you ever seen that Danny Kaye movie where he says that? I can't remember the movie, but I do remember the quote. It comes to mind right now because I do very vividly remember the heavy silver chalice that they use for water cups here at Chimayo, and they sort of serve as an example of Chimayo on the whole: flashy, showy, and adherent to a theme. Bill White doesn't do anything small, and Chimayo is his upscale Mexican restaurant right in the heart of Park City. The group has a number of restaurants, but with Billy Blanco's and Chimayo, I tend to think they're partial to Mexican and have two different price points to offer. As a Main Street restaurant in a town where rent ain't cheap, the food ain't gonna be cheap so set your expectations. It's commensurate with other spots on the strip, but that is to say that this town is full of places where the dollar signs rack up. Duck enchiladas? Don't mind if I do. The duck was the star of this, and I've always found enchiladas to be a little ho-hum, so featuring a more rare bird was a good call. I also tried the fish (salmon?) and it was a nice version. I'm not sure why dishes come out with a spray of raw pasta, except for presentation purposes. That's the kind of thing that I guess you would expect from an eclectic property such as this one, that prides themselves on unique presentation and food. read more

Tasty elevated South American / Mexican with AMAZING service. Our waiter, Lyle, was always on top of it, provided great recommendations and was just plain delightful. Food was also tasty, just quite filling. The complimentary bread was actually really soft and yummy with a good green sauce. The queso fundido was perfectly flavorful with crispy chips (it's PLENTY so don't over order). The pita that came with it could've been softer. For entrees, I was already full but got the duck enchiladas, which in theory sounded amazing (filled enchiladas and also a duck leg on the side) but for me was just a bit too heavy. The space is cool but the tables are quite tight, especially if you are placed downstairs. We were luckily upstairs where ceilings are higher. What a delicious find in downtown Park City! Warm, cozy Spanish vibe. Great food-we split the elk and shared the beet salad. Service was good with waters always filled and plenty of servers that met our needs. The choices on the menu were also varied to satisfy all of our different preferences. You're in park city, so it's probably going to be expensive. That being said, this dinner was completely worth it. Portion sizes were decent, and the staff went above and beyond to honestly advise us on the size of dishes so we could get the best value. The staff was truly exceptional. The elk London broil will convert you to elk, if you've ever had elk and found it gamey or tough. It was so tender. Salads were decent sized but nothing special. The appetizer menu had a lot of hidden gems. The dip trio was the best thing we ordered. The crab dip had a generous portion on lump crab meat and the hummus and guacamole were both so fresh. Ceviche was good, large portion and a bright citrus flavor, but probably not their best dish. The decor was very warm and eclectic. There was an extensive margarita menu but considering the Utah liquor laws we stuck to wine, which was a generous pours with a comprehensive selection of varietals.There were plenty of other menu items that were really enticing, so if you're looking for a treat meal and an opportunity to sample some unique and creative dishes, this is absolutely the spot for it. read more

Upon entering this delightful southwestern establishment, one is greeted by warm tones, intricately carved wooden beams, and a general sense of absolute coziness. I started my meal with the Guacamole Azteca. It was absurdly delicious and taught me that snow crab is the addition I didn't know I needed to make already delicious guacamole next level fantastic. The watermelon salad was also an excellent choice, with multiple levels of fully packed flavor: sweet watermelon and blueberry, spiced arugula, a punch of dill, a sprinkle of feta, and a hint of mint. Complimentary bread with a delicious cilantro lime dipping sauce was also provided. The experience only continued to surpass expectations with the entrees. The trout fajitas were absurdly delicious. The trout was perfectly seared and tasted so fresh! The veggies were deeply flavorful and complimented the fish perfectly. The Elk London Broil was exceptionally tender, perfectly seasoned, and expertly prepared. The flavors of the elk combined with the very clever mashed potato quesadilla was absolutely delicious. We were a party of 12, so that in and of itself is a hard thing for the staff to manage they did a good job the service to get our food was a little slow but they got us drinks very quickly. I will sum it all up by saying this is the first time I've been to a restaurant with this many people were all 12 of us said we had a fantastic meal. Did not get a picture because he was at the end of the table but the spare ribs presentation was outstanding and then rating on the spare ribs was a 10 plus. Dinner at Chimayo was fantastic. Our server Mike (17 veteran) was all over it. I had the Buffalo Flank Steak. The mushroom and green bean sauce was on point, the tres Chile scalloped potatoes were a nice complement to the Buffalo Flank steak, which was served at the exact temperature that I request. So flavorful and tender. My spouse had the Halibut special and enjoyed every morsel. The bread basket and dipping sauce hit the spot. Arturo's Tortilla soup has just the right amount of spice and was full of flavor. The stuffed avocado salad was a delight. The Pomegranate Margarita had all the flavor one could expect in a drink. The Sangria was light and refreshing. Finally, do yourself a favor and get the Berry Taco for dessert. So for this Christmas skiing trip, we made 2 reservations for 2 different nights and were looking forward to the dining experience. Just finished dinner and were disappointed. We ordered Chile relleno, ceviche, stuffed avocado, Buffalo flank steak and Elk Steak. The breading on the Chile relleno was heavy and it was salty. Had to eat it with lots of bread. Moved on to the ceviche and stuffed avocado, both were very salty. Frankly the only thing that was not too salty was the elk steak. Service and atmosphere still as good as before. Overall a disappointing dining experience tonight and we canceled the 2nd reservation for Christmas Eve. read more
