I have been wanting to try this place since it took over Mindful Brewing. I never went to Mindful but I was looking forward to a brewery being close to my home. Upon entering the place is very cute and spacious with plenty of seating both indoors and outside. Of course outside there are some games for the kids or adults. We were greeted immediately upon entering and was seated right away. Our server was nice but we had some things wrong with our order and just didn't complain. There is a good amount of options for Gluten Free people which is nice.When taking our order I asked how many sauces we could get I'd we got the 12 count of wings. He stated we could get 2. We ordered the Dry Rub and the Garlic Parm, we only got the Garlic Parm. We got the Buffalo Cauliflower for an appetizer. Some pieces were super mushy and I wasn't the biggest fan but my boyfriend thought it was pretty good. The wings though overcooked has a decent flavor. My son got probably the best deal in the menu but he said the Mac and Cheese had no flavor. He loved the tenders though he said they were really good. I like that they have a happy hour and they do have seltzer on tap which is nice. I got the Watmerlon one and it wasn't overbearing fake watermelon flavor it was refreshing and light. We didn't complain about the food because there was only one cook the day we went and it got pretty busy in there and he was doing it all himself. Um well didn't actually get a chance to try the food. We waited 20 minutes to be seated outside there were open tables while we waited but I'm guessing maybe short staffed so the wait. Then we were seated and that was it nobody showed up to serve us or take our order or give us waters... It was a bit odd maybe short staffed idk so we left after sitting there for another 10 minutes. Saved us a good chunk of change tho instead when to the original down the street 26$ for two gyros yes please. My husband went for drinks and food and brought me home dinner so I'm basing this off what he said as well as my takeout meal! It ended up being pricey when it's all said and done. I got a Nashville hot chicken sandwich without aioli but they, of course, put it on anyways so had to remake the sandwich. Overall I thought it had great potential. The pickles on it were fire and they give you a bunch. My biggest gripe with the sandwich is it's not a whole chicken breast, it's tenders. So then sometimes you'll take a bite and it's bread/slaw without chicken. I'm not sure the reasoning behind this but it seems like an easy fix so hopefully they'll change this one day! The fries were good as well. I wanted to get the sweet potatoes fries but they cook them with brown sugar and I'm not the sugar on my fries kind of girl. Was really happy this spot opened back up, with a different name. The layout and everything seems to have stayed the same. There are definitely some improvements and new options on the menu, which was nice to see. My wife and I started off splitting the fried cauliflower. It was very good, however the same with Mindful, they don't toss them in the buffalo sauce. They just serve it on the side. For our meal we had the buffalo chicken pizza. I thought this was delicious. It has so much flavor and is topped with buffalo chicken dip, ranch, red onion, and chicken pieces. Despite the heavy toppings, it was still super crisp. A great date spot in Castle Shannon, PA! Glad I finally checked this place out. I was a little nervous about how quickly I'd get my food when I stopped in on a Friday night and the place was full. To my surprise, it was only 15 minutes after I placed my order. I ordered the Mushroom Swiss smash burger and it was worth it. The burger was huge. The beef was flavorful and there was plenty of Swiss cheese. There were plenty of mushrooms but not a lot of bacon. I also asked for a side of ranch. The fries were very crispy with the right amount of seasoning. I didn't order any drinks, but they had an extensive draft menu. The service was very good once the waitress was able to make her way to my table. She checked on me quite a bit, keeping my water full. She was very friendly. I was very impressed with Chimera. There is a very nice seating area outside and a well lit open dining area inside. From the time we entered till the time we left, everyone we saw working there seemed to be in a great mood and truly enjoyed working there. The menu was on QR code. This made ordering easy. I enjoyed one of their smash burgers and my wife had a chicken sandwich. Both were delicious. We also had the cheese curds. They come with a tasty dipping sauce. The beer selection was good too. There was a bit of a wait but it was Saint Paddy's day and we hung out at the bar. The food was delicious. My friend got a Reuben with sweet potato fries and I got a smash burger with fries. I'm always a little leery about how the food will be at a place that seems to be "beer first," but I got the Chimera Smash burger and thought it was great. Had a tasty black pepper mustard aioli. Even the bun seemed like the perfect choice for this burger. Both the regular and sweet potato fries were good. We had the churro pretzels for dessert. They were pretty solid and came with caramel and chocolate dipping sauces. We probably should've added ice cream to moisten them up a bit more. The place is huge with a cool atmosphere all around. There's outdoor picnic table seating with large umbrellas and a couple of fire pits. We sat upstairs in a bar area to listen to some live music, which is always a welcome find. Their site is where the former Mindful Brewing was located, which we never experienced so not sure how much changed with new ownership. Started with the pickle dip and curds - very unique and tasty. In addition, we both ordered burgers - mine was the Chimera Smash and my husband went with the Mushroom Swiss. Honestly - one of the best smash burgers I've had. Super juicy and loved the bun, seasonings, and toppings. They also give you an option for regular fries or sweet potato fries (usually my preference). You can sub a gluten free bun or plant-based burger for a slight up-charge. Had a few scattered tomato pieces. No flavor. Just plain bad. Did not finish and did not take home leftovers. Reuben had a scant amount of meat on a small piece of bread. Poutin fries were supposed to have cheese curds and gravy. Had a little melted cheese and watered down gravy. Service was extremely slow. Meal did not come out as ordered. Server offered extra fries and comped a beer as an apology which was nice. At 9:45 on a Friday evening this place should be packed. Instead it was almost empty. If your aim is a specialty beer/alcohol establishment then add live music and more bar food. But if you're wanting more of a restaurant then you need to take a serious look at the food. Parking is a little tight because many of the spaces in front of the business were transformed into outdoor seating. The interior looks like they freshened it up with the new owners. I noticed they eliminated all the single cans from the coolers by the bar that the previous owners put in. Positives, large draft list. Much their own beers. I however opted for a draft from another local brewery they had on. Service was a bit spotty/slow. We ordered a pretzel as an app, it wasn't great, it seemed to be stale. The texture was dry and tough. I ordered the smash burger, it was pretty good. It was a decent size too. The fries were just normal frozen fries, so nothing special. A coworker ordered a quesadilla, she said it was just okay, needed something added to it. I would try it again for sure and probably order the smash burger again. read more

This place has amazing food but unfortunately I just had a horrible experience. My group and I walked and and asked the hostess for a table as they (seemingly oddly) had tons of available tables. She walks a few feet over to ask who is seemingly the manager if she could sit us and he yells at her about how he has a three hour wait list. She walks back over to us and explains that its a 2-3 hour wait and we question it due to the amount of open tables. The waitress explains that they have large parties coming in 45 minutes so they are unable to seat us. (This is strange as Ive been in and out within 45 mins but I understand some people like to linger) so we turn around to walk out disappointingly and the angry, temperamental manager chases us out screaming "quit shaking your heads". I feel bad for the very nice hostess and anyone else that has to work with him. Great food, great atmosphere but HORRIBLE experience tonight. I was a bit underwhelmed by this brewery. The space itself is great with plenty of room inside and outside, but the beer I wasn't super impressed by. I ordered the Unsolicited Advice, which is their house sour, and it didn't have a sour or fruity taste. It looked and tasted more like a summer shandy with the slightest aftertaste of orange. The waitress told us the beer had a flavor shot of orange cranberry, but I barely tasted it and I thought it was a way around actually brewing a real sour. The food menu is full of delicious sounding options of sandwiches, burgers, pizza, and salad. I ordered the Hades Revenge burger and it was pretty good. The smash burger patties were juicy and flavorful, the pepperjack cheese gooey, topped with fresh arugula and jalapeños. I would have liked more of the chipotle aioli to add more flavor and less dry, but it was still good. Prices are expensive too for a brewery in my opinion. My burger was $18, plus if you wanted a dessert you'd be paying $14 minimum for a small brownie. It was a fun experience, but i prefer other breweries in the South Hills read more

Great atmosphere, the Persephone light is really tasty, service was a bit slow (30 minutes to get lunch served) food was solid. Smash burger (the Hades revenge) was tasty but not hot at all. Steak sandwich was good, loved the horseradish, but wish they had Mancini bread! Fries look basic but are actually really good! (Fresh, crisp lightly seasoned) We had a small issue with a group that were really loud and obnoxious, and manager Mike helped take care of it. I got the Brewers Hash, this had just the right amount of spice and was served with the right amount of potatoes and toast to cut it. I got a mimosa and a chimera unsolicited advice sour -- both good. Definitely will try the mimosa flight next time. My husband and I stopped in for dinner and drinks. This is our second time there since new owners took over. The staff, our bartender was so nice and let us sample the beer to find the right one. We ordered a salmon BLT and the cheesesteak pizza. I got the tail piece of salmon, which I don't like. I never return food but we joked about restaurants serving the tail instead of the centers... so I had to return it. It's not the size of the salmon it's the taste of the tail end. Once I got the newly made sandwich, it just didn't taste right. They put regular tomatoes on it instead of the roasted... then put bib lettuce on it instead in the arugula. I was highly disappointed and didn't want to return it again. The bun was soggy and not toasted at all. I feel that if you need to alter the food, let the customer know in advance. This has become my weekly Tuesday night place. The beer selection is very nice (their own brews + selections from other local breweries), the food is amazing (especially the smash burgers), and the service is first class! The entire staff is good at what they do and are genuinely happy to be there and that you are there. Kylie in particular is attentive, sharp, and friendly, managing several tables during a busy night like a pro.
