China Mama really is everything people say it is... she is that girl. My daughter and I were on Spring Mountain and thought let's try something we haven't had before. The line was long. That is true. But we got in at around when they said we would so there wasn't an unexpected wait time. Once seated, service was quick. Food was easy to order. And everything tasted really good. We are vegetarians so we ordered veggie chow mein and fried rice, and their famous eggplant dish knowing we would have quite a bit of leftovers. And we did. Everything was good the next day too. The veggies are fresh. The noodles are cooked to perfection. And the rice tasted great too. Even my kid got a few vegetables out of all of it. I wish they had a few more vegetarian options with tofu... Because what's better than fried tofu? Haha... but overall really decent options for non-meat eaters. Will definitely be back. I can see why this place is so popular and so poppin! The food here is absolutely delicious! I tried 3 dishes: String beans - Perfectly flash fried and seasoned. It has an indescribable flavor that's equal parts savory and equal parts addicting. Nice and crispy still and there was a tiny bit of chilis so it does have a very subtle kick to it. Salted egg yolk prawns - Good, the salted egg yolk was subtle but present enough to give off a creamy yet salty boost to the prawns. Solid dish overall. Crispy beef- This was my favorite dish. The beef was crispy and sweet. Every bite made me want to take another, and another, and another. IT's honestly extremely addicting. Came here on a Friday night with a group of friends. We joined the waitlist and were seated in around 20 minutes. We ordered a few dishes and shared them family style. The highlights of the night were the Crispy Beef and the Mapo Tofu. By itself, I could honestly eat the Crispy Beef all day, it was nice and crunchy with great flavor inside. One of the best meals I had on my visit in Las Vegas. This place met the hype with the delicious amazing quality of food. The service here was fast and attentive, food came out reasonably fast for a fast busy night. They have a decent sized place which gets busy and loud at peak times, definitely get on that waitlist. We've visited quite a few restaurants in Shanghai Plaza over the years, but somehow never made it to China Mama until now. Many times we've stopped by only to find a line out the door, and after finally dining here, I completely understand why. China Mama has become a favorite among food bloggers and social media influencers, but it more than lives up to the hype. The restaurant is one of the cleanest and most beautifully decorated Chinese restaurants I've visited in quite some time, and I dine at a lot of Chinese restaurants. The service was wonderful, and the food was outstanding. Portions are generous, so we limited ourselves to just a couple of dishes: the Mapo Tofu and the Crispy Beef. Both were absolutely delicious, with bold flavors and excellent execution. I can't emphasize enough how much we enjoyed them. I've seen lots of positive reviews about this chain of restaurants and I finally decided to give it a try. I ordered the combination rice, fried duck, cucumber salad, combination chow mein and wings. Each of the dishes tasted amazing, were seasoned well and had great flavor. The portions were generous and the dishes were priced accordingly. However, without question, the duck was the most flavorful dish, especially, after Jason, the manager suggested I try mixing a small amount of soy sauce into the hoisin sauce, which, added more flavor to the duck. Jason's suggestion made my overall meal more enjoyable, which, I appreciated. I heard of China Mama, and their rave reviews, and it's right in the other end of Shanghai Plaza, so off we went. We were seated immediately (early dinner) and checked our their menu. I decided to check this place out after seeing all the hype on Instagram... Right from the start, I kinda feel this better be good with these prices. Essentially, this is koi palace 5 star Chinese dining. Everything costs 5bucks more than normal. Except, the shen jian bao and the specialties. Since I can only eat so much by myself, I just got these two items. This is probably unfair or incomplete review since I only draw from 2 dishes. In any case, the appetizer, shen jian bao is like for a table of 4. I manage to finish nearly all except one. $18 bucks is quite a premium. Usually it's about 12. But, I'm not sure u get 8. So, at 2.25 each... Well, it would be nice if I can order just 4 or 6 for under 10bucks. Since it is an app 2nd dish was deep fried duck. I eat a lot of duck. Mainly Hong Kong style roast duck and some times at more high end places peking duck. I mean usually the peking duck is like close to 75 bucks. A whole roast duck is about 25-30 at ranch99 these days. So this dish was priced correctly. I thought it was kinda dry. I also thought the peking duck sauce did not go with it. However, the leftovers the next day became oily and moist. Interesting... I left it in the box and did not put it in the fridge as I was in a hotel room without microwave. I just ate it mildly warm this morning. It was actually better than when I had it fresh. Guess I might have stewed it leaving it at room T in the sealed container... With las vegas heat 100F it was probably stewed for a few hrs in my car. The leftover save this dish.. was a 2 and became a 4. So avg 3... I even ask for salt and pepper to dip as the sauce just didn't seem to go with it being so dry when served For the portions, the price was probably correct for these 2 dishes. The bao was very good. That extra crust for showmanship shows that the dough is moist. That's my guess, I get this crust whenever I cook japanese gyoza. Essentially,part of the flour is melted or sweat into the water oil mixture in the pan while u cook/steam it with cover over them. Once the water is completely evaporated, the oil start to fried the bottom surface and also char it... I like that they kept the people waiting even when there is empty tables. They maintain service level by controlling the input. Very smart to maintain kitchen supply chain to table service by controlling the number of tables to service. I was going with 3 initially, but the leftover was so good that I change it to 4 stars... And if I do Togo on this place, the duck might taste even better... I think this is essentially like koi palace express. The place is really not meant for big table Chinese style fine dining. It's sort of too small for it. But it is charging too much in my opinion. Since they are able to continue to maintain this huge influx. Keep making the bejamins while you are hot. I would like to see this place adjust to a koi palace express for smaller parties. Came here on a Monday around noon so I already expected it to be busy, which was totally fine. This was my first time at this location (I've been to their other ones before) and I mainly came to try the pan fried pork buns. It took about 10 minutes before a server came to my table. My server Jason seemed kind of rushed from the start. When I ordered, I asked which fried rice he'd recommend-- the Mama's Special or the Spicy Shredded Pork. He responded with "Well, it's up to you." in a pretty annoyed tone. After seeing my reaction, he tried to be nicer and suggested he could make the Special Fried Rice spicy instead so I just went with that. Someone else brought my food out and after that, Jason kept checking on the tables around me but completely skipped mine. As for the food-- it was just okay. The pan fried pork buns looked really good in photos but the taste didn't quite hit like I expected. The fried rice was decent, nothing special. The only positive service moments were when Jose brought the bill-- he was much nicer than Jason and the female server who brought my to-go boxes, who was also nice. China Mama always seems to have a wait, and although the food was enjoyable, I would not be willing to wait nearly as long as some others on this platform. We arrived about 1.5 hours before closing and were quoted a 25-40 minute wait. Judging from the Yelp estimates and the crowd still gathered outside, I would lean closer to the longer end, if not beyond it. The staff operated with impressive efficiency, quickly bussing and resetting tables the moment parties left. One underrated highlight was the comfortable and clean couches. Once seated, we were served a hot teapot of wonderfully fragrant complimentary jasmine tea. Service throughout the meal was minimal but efficient. We placed our order shortly after sitting down and were only checked on once during final call. *Crispy Beef: easily my favorite dish of the night. The beef had an addictive balance of crispiness and chewiness, while the sauce delivered a pleasant sweetness that paired well with the light, crunchy batter. *Crispy Duck: the meat itself was juicy and tender, but severely underseasoned. While the skin was crunchy, its texture was almost abrasive, resembling sandpaper at times. The plain side of hoisin sauce felt more like a last minute addition than an integrated component of the dish. *Typhoon Shelter Chicken Wings: similar to the duck, these were technically cooked very well but lacked flavor. The interior remained moist, though the generous pile of garlic and green onion was misleading since very little of that flavor actually penetrated the wings. *Mama's Special Chow Mein: classic stir fried noodles with a satisfying chew. The dish avoided becoming overly oily and the assortment of proteins remained tender throughout. *Wontons In Szechuan Pepper Sauce: offered a subtle numbing sensation, though I would have appreciated more heat or vinegar for additional depth. The wonton wrappers were impressively thin and the filling was generous. This dish had plenty of potential and would have been excellent with bolder seasoning. I made a reservation a couple weeks out for a party of 8. They definitely want to keep their tables full - they called me 3 minutes after our reservation time as we were walking in. Quality of service from the main server was underwhelming, nothing warm or hospitable. The employees that brought out our food were very nice, however, and brought us spoons and bowls when we couldn't find the server that took our order. It definitely gave me the impression that they don't really think they need to or care to provide any service because gratuity is automatically included for large parties. We didn't see our server until about halfway through when she came by for water refills. We had to ask someone else for takeout boxes, but our server did bring us the check. We took an Uber from our hotel,the Horseshoe Casino-Uber cost about $14 each way on Sunday evening around 5p.When we arrived I instantly knew my idea wasn't original as their were so many people waiting in the lobby and outside the restaurant-I put my name down and for my party of 4,I was told an hour to 90 minute wait.I was kinda stuck because we already took the Uber out there,so no real choice other than to wait. The restaurant is located in a strip mall in Chinatown portion of Vegas-so there were many other options to eat with little to no wait available to us,but I had my heart on eating at China Mama as some claimed it was the best Chinese spot in the entire city,which is saying something considering what's available in Vegas. Well the wait for a table ended up taking an entire hour,so by the time we sat down I was very prepared and knew exactly what I was ordering.I ended up going with Crispy Beef (18.99) Mamas Special Pan Fried Pork Buns ($17.99) Mamas Special Chow Mein ($17.99) Mamas Special Fried Rice ($17.99) & Stir-Fried Green Beans ($15.99). The food was at our table so fast-literally in under 8 minutes we had 4 of the 5 dishes-we were told the Pork Buns would take a little longer as they are made fresh and the cooking time takes a bit longer. Szechuan wonton -- Decent flavor but nothing special. The sauce had some heat, but it didn't really stand out. Crispy beef -- Crispy at first, but more sweet than savory and got soggy pretty fast. Sizzling rice soup with seafood -- Warm and comforting, but pretty bland. Needed more flavor for a seafood soup. I had to add salt. String green beans -- Probably one of the better dishes. Garlicky and cooked well. Cucumber & shrimp dumplings -- Soft in a weird way, almost mushy, and the flavor combo didn't really work. China Mama is probably the worst Chinese restaurant my family and I have tried in Las Vegas, maybe anywhere. Given its reputation and high reviews, we were expecting the food to live up to the hype, but every dish we ordered fell short. We got crispy beef, beef roll, eggplant with minced pork, jajiang noodles, string beans, and their house special jumbo shrimp. Tell me why the beef roll wrap lacked color? The wrap looked like uncooked dough, yet it was the toughest thing to chew through. You know what else was hard to chew? The crispy beef. I understand the preparation is to deep fry the beef beforehand, but the pieces were so battered and hard and chewy that it was just so difficult to eat. Also, aside from the beef roll, everything tasted like vinegar! It was so offputting that the best part of the meal was the plain white rice! China Mama is a slightly upscale primarily American Chinese restaurant with some traditional Chinese choices. A pretty popular spot that I've seen back home in California but never went because I tend to eat at more traditional spots. The patrons at China Mama are mainly non-Asian but I'll say it's a great stepping stone to traditional Chinese food. It's a clean establishment, with excellent service, consistency, quality and no stress over communication issues that can arise in traditional restaurants where the servers might not speak much English. I was on a Vegas trip with a friend who was craving the more Americanized styled Chinese fare but at a sit down establishment that's considerably nicer than Panda Express type restaurants. China Mama certainly fit the bill. It's also been awhile since I've had Americanized Chinese food and I'd be lying if I said I wasn't craving it. I certainly do enjoy it from time to time. I let her do the ordering since I'll basically eat anything! We ended ordering the Honey Walnut Shrimp, Kung Pao Chicken, Mamas Special Chow Mein and Shrimp Fried Rice. Honestly it was all quite good, the flavors were on point. Wok hei, the complex smoky aroma that can only be achieved in a high heat gas fired wok were present. Portions are very generous and prices are reasonable. Four dishes and drinks came out to about $100 with plenty to take home which we ended up snacking on later in the night in our hotel. Even cold, it still hit! While I totally forgot to snap a few pics, I'm happy I finally made it out to China Mama to see what they offer and wasn't at all disappointed! read more

Good food at a good price. There was about a 30-minute wait when we went. The portions were generous, everything is family-style and easily shared between 3-4 people per dish. The egg fried rice was delicious. We also ordered the sizzling beef, crispy beef, dumplings, Dan Dan noodles, and orange chicken, and the table was very happy overall. The cold peach sake was refreshing, sweet and smooth , and we ordered a large beer as well. All in, it was around $150, which felt fair for the amount of food and quality. I'd personally rate it a 4/5, though the rest of the party really loved it. Definitely worth checking out. read more
