Patience is a virtue. Your patience for a perfectly melted queso birria taco is well worth the wait! This place can also get a bit popular which adds to the wait time. The birria here is amazing and their customer service is top notch friendly. Pack a chair and table, enjoy your meal in the parking lot during covid regulations exist.

Finally made it to Cocina de Ledezma Birria Food Truck. For my husband and I, this was our first time having Birria Tacos. The food was so tasty. You can't go wrong with a Quesa Birria Taco Combo. Hard not come back! our friends from Escondido told us about it. Funny thing is we are from Valley Center! Literally 5 minutes from our house. The owners are so kind and accommodating to our group. We hungout for awhile and they never told us to leave. You all near Valley Center, treat yourself to some amazing eats!

I got to say this spot delivers a Big Bang for your buck. If your looking for a new Birria joint this spot will make you not want to not travel across the boarder or to La. The food prices are fair and the quality and of the food along with the services makes you want to come back. I definitely went all out when I stop by, me and my group got the ramen, tacos, tacos with melted chesse, mulitas and a torta soaked in all those good juices!! It up the grade but if your in northern county area definitely need to give this spot a try! I suggest come early so that you don't fight the line and can get down and dirty with all this goodness!!

Not only did I enjoy the amazing mouth watering tacos but my one year old did as well. I can definitely tell the quality of the place by the freshness and taste. Highly recommend the Birria, regardless if it's a Taco, QuesaTaco, Rambirria, or just the Birria Plate. My only regret was not ordering more, and some To-Go.. will definitely add to my Must-Go-Back list when back in town...

Fantastic Find: Cocina de Ledezma After a hike, I was on the hunt for some great local Mexican food and found La Cocina de Ledezma--what a gem! The food was incredible and tasted fresh. I tried three different tacos and a Quesabirria, each packed with great flavor. Their birria was especially impressive--it's hard to find good birria! To top it off, there's a coffee cart across the lot with refreshing drinks. I had a Lotus energy drink, and my girl had a spritzer--both hit the spot after a long day outdoors. The service was as amazing as the food. The brother at the register was super friendly, sharing how they prepare everything with care, and his sister in the truck was incredibly sweet and courteous. The two girls at the coffee cart were also lovely and added to the welcoming atmosphere. Though I live far, I'll definitely be coming back. If you're in the area, I highly recommend stopping by for delicious food and great service. read more

Food was delicious and the service was excellent! We got a few birria tacos and the pamboza. All were delicious and filling. There are tables there to eat, but we took it home. Look for the flags directly after the rite aid. You go up a small hill and it's to the left. The person taking our order was so nice when taking our order. We asked more questions than most and he never seemed bothered. More happy to answer everything about the food. Mentioned it was a family business and they are there every Saturday and Sunday! The food had a great taste but it just too much fat for me we ended up getting 2 birria bowls. For me I felt it was a bit expensive and the fat part was what I hated I did like the service and location especially if you're staying in the hotel. read more

Tucked away, open on the weekends, and completely worth a visit! This was one of those hidden gems that make you love the roads less travelled, and also where Yelp! helps direct a wary foodie to good eats. I will say, finding it was not as straight forward as it seemed - the address directed me basically to an auto repair shop, but upon Yelp! pictorial inspection, I knew I'd driven past it. It's located in the parking lot of a veterinarian office, and I'd advise looking for the red/yellow BIRRIA! signs to guide you in. Now, about that birria - it's touted to be a secret family recipe your Abuelita would be proud of, and they aren't lying. It was such a great blend of flavors, especially with the homemade salsa on top and the side of consumé to dip it in. So, tuck into some via a standard taco (crispy or soft - can't go wrong), or turn it up to 11 with an interesting concoction of potatoes, bun, toppings and a torta-meets-California-burrito-love-child they call the pambazo. Just...*drool* So, if you find yourself out for a weekend adventure, drop by and pay these guys a visit - well worth it! read more

A new hidden gem off Lizard Rocks Road in the rural 'lil town of Valley Center.... Family owned and operated they're slinging out some of the best Mexican food I've had in a while.... The staff (Ledesma Family) are all very nice and make you feel welcome... Every weekend they have a different menu, this weekend was Birria (Slow cooked meat) and man was it good...I had the Birria Taco, Birria Quesadilla, and Birria Mulita .....all excellent! You can pick for take away, or they have a nice little area set up with tables and awnings for eating there.... I will definitely go back here.... But plan accordingly, they're only open weekends right now, and they usually sell out in the afternoon..... Highly Recommend! A nice new addition to VC food choices.... read more

Hmmmmmm Birria. If you have not tried Birria, you better get a move on. This slow cooked shredded beef is both tender and flavorful and a great twist on the ever popular asada that you see throughout the area. I am glad to see birria becoming so popular. Cocina De Ledezma does birria great! As a new resident here in Valley Center this is a relief to be sure. No pretending, no gimmicks...just a great core menu centered around...the meat. The queso taco is my standing favorite, but I hear the birria ramen is no slouch either. Yes they are off a side street and only open on weekends, but damn they are worth it. Well let me tell you about Cocina de Ledezma first off friendly service all the time. The Ledezma familia is always at the top of their game. I am a local here in Valley Center and don't have many options for food but let me tell you I look forward to the weekends when this place opens and having it less than five minutes away is the awesome! Having authentic Birria on the weekends is the best especially when I know family will be in town we head over there so they can try their food and each time they do not disappoint. I've tried their gorditas, Jumbo shrimp plate and birria. For me the birria quesadilla with Consomé is my favorite. They actually had during the weekday a surprise "Aguachile en Verde o Rojo" afternoon this week and man that hit the spot. Best thing is to follow them on Instagram and that way you know of any special days they might be offering their food. Anyways come out and try this great cuisine from the state of Queretaro and enjoy the trip to North County San Diego. I am actually heading their in a bit, can't wait for it to open!! This Birria truck is LEGIT! I tried a birria bowl because on my first visit I like to judge restaurants or food spots of any kind by eating the food the way its intended. The bowl was AMAZING, full of flavor and authentic to taste. The order comes with tortillas and cilantro, chopped onion and radish. The chile was good as well. Im excited to try The Ramen Birria next time!! They also have nice tables setup with covered seating to keep you out of the sun. We are a small family-owned and operated Food Truck and we work hard every weekend to cook the most flavorful and authentic Birria for the community to enjoy with friends and family. Your "Abuelita" will be impressed! Guaranteed! Our Birria is made from the most tender parts of beef: chuck, rib, sirloin, and shank. It's marinated with our house spices and chiles and slow-cooked in a broth until tender and juicy. Garnish with lemon, onion, and cilantro.

Yesterday (Friday), I decided to take my mom on a little drive and thought "why not brunch at the casino!?". We walked through the casino all the way to the back right (near the hotel), and there was a party of two already checking in at the host station. Check-in was a fast process, they asked for my name and if I was staying at the property. We were ushered into the restaurant and told to wait to the side for a hostess to seat us. I saw it was busy, but not completely full. They still had quite a few open tables available, and we were seated quickly after about 5min. of waiting. The lady who had seated us was wonderful, and very nice. She took our drink order (2 coffees) and brought over 2 cups as well as a saucer full of hazelnut creamer packs. Our waitress visited our table shortly after introducing herself. Her name was Celine, and she was a ray of light! Very sweet and attentive. She quickly poured our coffee and brought 2 muffins to the table. These are complimentary muffins, and let me tell you... they are DELICIOUS. They have a walk up bakery right next to the café, and every single thing i've purchased from them has been top notch. It definitely was a great brunch that we had, and we were lucky to have had the service from Celine and Javier on our visit. I reached out to them a few months before and squared away the order and details through messaging. They explained everything and offered ideas for my vision that would be easiest. Once everything was chosen for the macaron order, we set a date and time for pickup that was closest to me (sunset market) and it was so easy to store the macarons for the few days leading up to our wedding. The macarons were DELICIOUS and fresh (even though we froze them for storing them in-between the pickup and event). Not only did we love the macarons but so did our guests. We couldn't have asked for anything better. Absolutely can't wait to work with them again :)

Oh my, so I've been waiting for what seems like months to try this food. I had to work their opening day but knew I would get a chance the next day. I arrived an hour and a half into their shift and pulled into close to 50 cars already there. You know it's gonna be good seeing that. But the line wasn't long at all and the staff was able to process orders in no time. I was ordering for 8 people so we went a little overboard but they turned out the order super fast even though they had plenty of mouths to feed. My truck was filled with such a heavenly aroma it was hard not pulling over and digging in. Rambirria is the most ridiculous flavor combo I've come across. The meat was beyond tender and melted in your mouth and the ramen added such a unique texture and flavor overload I would order two of them again whenever they hit the menu again. Every person who tried it couldn't say enough good things about it. Even my pickiest of kids loved his taco which clearly says something special is happening here. I wish them many years of success and know they will keep knocking it out of the park with their creations. The staff is amazing and super friendly and were very thankful of the community for turning out and supporting them.
