Choices range from: fresh coconut water and/or coconut mer, chopped fresh before your eyes; to more of a coconut float with sparkling coconut water and your choice of gelato mixed in. A few flavors of coconut gelato available: classic plain coconut, phenomenal, chocolate, lemon, and cinnamon. All excellent. Only downside is the location - can't miss their truck + food stand as it's essentially perched in the middle of an overlook in Honolua bay. Vendor is very personable! Everything they have is made from the coconut. They give free samples. The vanilla coconut gelato is to die for. We had shave ice made with frozen coconut water...all natural! Our ice had coconut gelato with coconut and passion fruit juice with lots of gelato on the bottom. It is a bit pricier than others, but worth the quality. We shared one and it disappeared in an instant! The caboose is parked at the Honolua lookout. Perfect setting to eat shave ice! Found this place off Yelp and SO GLAD we went. We started with a fresh coconut so the kids could try fresh coconut water and coconut, which was delicious. Then we had shaved ice, which is made from coconut water, with coconut gelato in it. OMG. One of the best desserts I've ever had and WAY better than the brightly colored place down in Front Street. Way better. Truly an island experience worth having. We also bought some coconut candy and the savory coconut. Now we know what coconut is really supposed to taste like. YUM. Went here our first day in Maui and then twice more during our stay. Loved the fresh coconuts and the shave ice over coconut gelato. Glad this place stayed in same location that also housed a couple other food trucks and a couple who sold hand wood carved art. Stumbled upon this gem on a trip back in 2018 and had been dreaming about their coconut ice cream ever since! We returned to Maui in June 2022 with the fam and I knew we had to go back. Since our first visit they have expanded their menu to include lots of other treats, including shave ice. The location of Coconut Caboose keeps the lines down, but not the wait. It is run by a lovely couple who do everything themselves, which can add a bit to the wait time. Kids loved the shave ice made with coconut water and all natural flavor toppers. I was in heaven with my ice cream, which is like no other I have found on the island. If you're going to Honolua Bay you must stop at the Coconut Caboose! I promise it is worth the wait! read more

Coconut gelato here is so amazing that I think that my favorite gelato flavor is now coconut. It's so smooth and creamy, and has the subtle coconut flavor that gets stronger as you savor it. They also serve coconut water fresh from young coconut fruit! You get to watch the guy hack it with a machete, and after you finish drinking, he'll cut the coconut open for you and scrape off the coconut meat. The water itself is alright; it's lukewarm and and tastes like water with a hint of coconut. It probably tastes better chilled. The coconut meat is similar; it doesn't have a very strong flavor but it has an interestingly smooth texture. If anything, you should try it to say you've done it. read more

Update on Coconut caboose!! Well heard from company and apparently had a employee issue not showing up. Very very humble response from them and as someone who's had employee's I know how dependent you can be with them as a small business and when a issue comes up with them whether it's personal or otherwise you are at there mercy. Still it is a terrific product with a great nitch in the marketplace and this won't hold them back at all. I loved the shake and actually wish i had bought two rather than one!! I ended up sharing mine with my wife of 50 years and since i was driving she got first dibs and wouldn't give it up!!!! Great product and very very nice people to deal with. read more

I ordered a couple coconuts and the homemade coconut gelato....The gelato was sooooo tiny , I told my husband this little cup better be great at $7.... The Caboose is adorable, and the folks working there are the epitome of Hawaiian friendliness, but the shave ice was overrated in my book. Just was not tasting that coconut flavor, or anything extraordinary in this shave ice experience. If you're craving coco, maybe go with their coconut ice cream instead? Very cool that they have a *literal* truck load of coconuts attached to the Caboose, and their syrups are made from real fruits. Also, the view from the lookout point where they park is pretty cool. On a non-windy/rainy day, you can eat your treat while staring out into the glorious Hawaiian horizon. I can say I ate fancy shave ice in Maui, but it didn't make a die hard fan out of me. read more
