Boudin blanc is the staple boudin of this region and is the one most widely consumed. Also popular is seafood boudin consisting of crab, shrimp, and rice. Boudin is also referred to as rice sausage outside of Louisiana of course, containing lots of green onions, red pepper and other Cajun spices, pork and liver all ground and cooked then mixed with rice prior to stuffing it inside a natural or synthetic casing - it can be smoked or eaten as is, it's often eaten alongside saltine crackers and Louisiana Hot Sauce.
