I needed some pastries for a teacher appreciation thing at my kids school so we decided to go with her homemade pop tarts. Although I love everything I have ever tasted that she makes, her pop tarts are super unique. And they are DELICIOUS. I've now tried strawberry, blueberry, and chocolate and they are all phenomenal. We were able to schedule an order to pickup about a week later, and she is so nice about being willing to make an assortment of flavors, and even packaging her new "pecan pie" ones separately, just in case anyone has an allergy. Love it! Little things like that go a long way in my book as far as service goes. The shop is small, but very cute. I love how woodsy and earthy everything looks. Her cake stands are round slices of wood and she has cute earthy decor all around. She was super busy, preparing for the pecan festival the day we were in, so the cases were empty but she was happy to tell us all about the things she had available in the back still. Apparently the owner does a lot of custom work, which would be good because you know exactly what you are getting and when (and how much it will cost.) I stopped by Thursday right when they opened "for the week" since they are closed Monday through Wednesday. Several of the things we specifically came there for were out of stock or still baking. I know that she is trying to find the balance between baking enough for people to purchase, and eliminating waste, but it sort of made it look barren. The display case had one each of some of the stuff that was available, but I just didn't like how empty it made it feel. The shop also has a ton of other things displayed for you to buy, like essential oil bug spray, jewelry, woodcraft, etc, but then for a place called Honeybee BAKERY, the bakery seems like an afterthought when there is so much more other stuff than there are baked goods. The actual baked goods that we could try get sort of mixed reviews from me. I opted for a vanilla bean mini cake that ended up being $9, and a pumpkin cookie sandwich that was either $7 or $8. (There are no prices listed, so you have to ask.) The cake was cute, about the size of a really large cupcake (or two small cupcakes), and I definitely could have eaten the entire thing in one sitting, but I personally didn't care for the buttercream. I know it sounds like a totally *Karen* thing to say, but the buttercream is too buttery. Hear me out though, if you just eat something that is really butter-heavy and not a good ratio of powdered sugar and liquid, it actually just leaves this really greasy film in your mouth and on your lips in my opinion. The flavor was okay, but there was just way too much icing and therefore WAY too much butter so it was kind of unpleasant. The cookies were okay, but again, the buttercream in the center made it sort of unpleasant. Definitely eat them cold because the buttercream just slips and slides out if it is room temperature. I know for next time that I would just opt for the cookies. I would definitely suggest the bakery utilize social media way more to keep up to date on what is currently available, and list prices.

My mom ordered cupcakes for my little sister's birthday from this business. The agreement was to pickup the cupcakes at 4pm, our choice due to needing to make an event by 6pm for my little sister's 14th birthday. We arrived inside of the store on time and noticed that the woman who runs the store was dealing with a frustrated customer. The customer proceeded to ask us (my mom and I) how do we feel about the cake that was prepared for a relative's 50th. We said it looked nice. However, there were water stains that destroyed the overall photo that was printed for the cake. She requested a re-print from the worker/woman and we waited for about 10 minutes then asked how long before our cupcakes were ready. She stated "about 10 more minutes" then she proceed to yell to another worker in the back. I'm unsure what was said because I don't understand Spanish that well. A few moments later, the cupcakes were made. ** We requested pink cupcakes with glitter in the shape of an L. Super cute! However, once we served the cupcakes to the guests at the event.. we noticed the disappointment on everyone's faces. Including mine. I describe the taste as cardboard and another guest described it as metal. The taste was awful. My little sister was so embarrassed on her 14th birthday! My mom returned the box of cupcakes with no request of a refund, only a complaint. We wanted them to know they tasted awful and we wanted them to dispose of them so they could see they were not enjoyed. Their excuse was that "pink icing tastes like that and it was the glitter".. either way, there was no resolve. Very sad because this place came highly recommended and I believe they successfully did cake in the past. FYI, the cake portion of the cupcake was so good and moist but the icing destroyed the entire cupcake. We hoped for resolve but I guess we wasted money. Honest review. This meant that we had to either trust other customer reviews on vendors or beg vendors to setup meetings all on the one Sunday we were scheduled to be in town before the wedding. Katherine was willing to work with us. She made us the most perfect package of cake samples I've ever seen. She had slices of most of her cake flavors cut into bite size pieces and labeled along with several small, labeled containers of frostings and fillings. We were able to grab this little box and take it with us to be sampled later that evening. The cake was great and estimate was very affordable. We ordered a three tier cake. Chocolate and white chocolate swirl on two layers and lemon and vanilla swirl on the third. All three were sandwiched with Bavarian cream. Katherine arrived in a timely fashion on the day of the wedding, arranged some flowers we'd left for her perfectly, and placed our topper. The cake was SO GOOD! I had guests also approach me to tell me about their favorite layers multiple times. We kept the very top layer to be frozen and enjoyed on our anniversary and I'm pumped! Counting down the days.
