Still a solid burger of course, but I would go back to the classic ones next time. During lent, they had their fish sandwich, which was INSANE. The best one we have ever had. The fish was crispy on the outside, flakey and buttery on the inside. The tartar sauce was perfectly tart and balanced the whole thing. I AM PRAYINGG it comes back for times other than lent. Ruined every other fish sandwich for me. We tried their fries both times we went, and honestly not a fan. They're beef tallow fries so they're supposedly "better" but they were pretty hard and oily, and have the meat taste from the beef tallow that I don't like, I would skip these. People start lining up before the truck opens so I suggest getting there 20 minutes early for quick service, otherwise you'll be looking at an hourish wait. But trust me, it's worth it

My friends and I arrived about 20 minutes before the truck opened, and there were already a few people standing in line. The line moved pretty quickly, and the total time from ordering and receiving our food was only about 15 minutes. At this time, the line wrapped around the truck. The food came out hot and fresh. Filet-o-fish is one of my favorites of all time, and the filet de fish did not disappoint at all! The first bite had us levitating and seeing stars. The tartare sauce that the fried fish was smothered in was delicious and creamy, and the fish fillet itself was tender and flaky. The toasted and soft Japanese bun was the cherry on top. Simple and comforting and nostalgic, but elevated in the best way. We also tried their popular Viva Mexico, but we felt like it lacked in flavor and only tasted spicy, if that makes sense. Beef tallow fries were okay and not anything special. Great portions, however, it was still pretty expensive for a food truck burger. I'm glad I got to try this place out and will be back if the filet de fish hits the menu again, and would try their Signature next time.

And the fish and shrimp were nice and crispy! It was so good that we had to order 2 more tacos! Plus the food came out quick, service was great. The hot sauce they put on the tacos can be overpowering so I recommend putting it on the side, especially for to-go orders. We had to scrape some off. I'd come back for shrimp tacos with sauce on the side but I'd definitely come back for the empanadas. The food was fresh and a good size. It would be great if prices were posted on the menu/truck.

The brisket was worth every single penny and was hands-down the star of the show. We had a crowd of serious BBQ fans, with about 90% of our guests originally from Kansas City, and even the biggest BBQ snobs couldn't stop talking about how good it was. More than one person commented that it was some of the best BBQ they've had in Arizona. The portions were generous, everything was served perfectly, and the food truck setup made the event feel fun and effortless. The BBQ was top notch and I think the ribs were the best followed by the pork belly. The chicken was done very well but it's hard to beat the pork. The jeow som was a perfect compliment to the bbq and the sticky rice. The smoked brisket pho was also a hit. We only missed out on the papaya salad which would've been a nice way to cut the richness of the meats, we'll try that next time. They are honing their craft and clearly know what they are doing. I'd be excited for a restaurant some day to try even more of the Lao offerings.
