Suggest make the potatoes a larger deep fried cube, or sliced and crispy. Add meat and a little sage and pepper for the sausage gravy. You have a wonderful baked beans with bacon, this would be great to have on the breakfast buffet. it would be better if both sides of buffet were accessible instead of having to reach across to get to the second tray.
