    Wild Mushrooms - Must-get item!
    Rika M.

I needed to kill some time before my Cirque du Soleil show at 7pm at Ball Area. As I wanted to avoid a hefty parking fee of $30+ near the site, I chose a parking space in a building on Wewatta and Speer that was more than half of what those expensive parking places charge. Coincidentally, my parking was in the same building as Coohills. I simply couldn't think of any other place to stop and have a little cocktail and a light meal than this French restaurant I once utilized close to 10 years ago. In a way, it was an opportunity for the to re-appreciate this forgotten establishment. I, all of a sudden, got so excited thinking about a delicious French wine and an appetizer plate or two. The time was a little after 5pm. The restaurant was still slow for the regular patron crowd (although there was a party of about 15-20 where they reserved their little room to the right.) I was warmly greeted by the man at the reception desk. Upon telling him that I was by myself where I would just need a bar seating, he immediately escorted me to it. I appeared to be the first diner for the night as if to say that I had the whole bar to myself. It took me for the bar staff to assist me as they appeared to be busy with making cocktails for the large party. I was patient though. Eventually two bartenders (a female and male) took a notice of me and assisted me with the happy hour menu (the regular menu was handed to me by the man who took me to the bar.) They were friendly and welcoming. The male staff walked me through tonight's special. They all sounded good and yet I was only looking to have some light meal (as I didn't want to show up to the Cirque du Soleil show with a full belly), I went with... 1) House EPI Bread with House Butter ($7) and, 2) Wild Mushrooms ($11) And to accompany my light dishes, I went with.... AIX, Cote de Provance Rose ($15 and yet during the happy hour, it was $2 off) I conveyed this to the male bartender. My perfect happy hour time finally began. -House EPI Bread (by the way, EPI appears to mean pain d'epi or wheat stalk bread is a rustic French loaf shaped to resemble a stalk of wheat) was a fantastic choice. Its presentation on a wooden long/skinny board was so French. The house made butter with some seasoning on it was truly the best accompaniment to the freshly baked bread. For a bread, I tend to fancy olive oil with balsamic vinegar more (well, this is more of an Italian way), the butter changed the whole game. As I have never seen a simple loaf of bread so beautifully presented in a very simple form, I am now obsessed with this bread. I finally found a place where they have the best house bread presentation! -Wild Mushrooms is a must item off the menu. A generous amount of garlic is what I tasted. And a noticeable amount of black vinaigrette did a nice harmony like a perfect dance danced by a male/female duo in the dish. This dish pairs so well with the bread. -Rose wine has been something I lately enjoy in my daily life more than ever. I used to undermine this pink wine varietal and I don't even know why that was. It's true; you can hit and miss for a rose wine and yet AIX (which I had seen it at various different liquor stores many times in the past) is more than a solid rose in my personal opinion. To be able to enjoy this rose wine at the price of $13 during the happy hour is a good value at a high-end restaurant like Coohills. The two appetizer dishes filled me up (I had to get a to-go container for the mushrooms though as it's a really good portion which two people can easily share; the same goes with the house bread as well but I finished this one.) I have decided. Coohills is now my go-to solo happy hour spot from now on. Although they do emit the high-end restaurant ambiance, you can casually walk in and have your little "me time" moment with no intimidation. If you've been looking for a restaurant like that, then go to Coohills. They also have a nice patio space; you can sit there as long as the weather cooperates.

AMAZING food at Coohills last light. Charcuterie board was great; the pâtè was ridiculously good. Perfect Duck Leg Confit with Lentils. House made bread is delicious. Chef Tom Coohill Jr. is one of Denver's very best and Diane Schapiro Coohill runs a great front of the house! Have you been? You need to!

I love this place because of the convenient location, friendly staff, good cocktails and creative dishes. It's nice that they update their menu frequently and really focus on fresh ingredients and high-end entrees. We have been a few times, but these are pics from our most recent visit. The soup of the day was our favorite... definitely recommend splitting it! Only a few steps away from Ball Arena, so a nice place to visit before a concert, although it may be too fancy for children (and some adults).

We came for the prix fixed valentines dinner and had some house wine. The house wine recommended was actually pretty good for a house wine. The place was definitely busy, given since the holiday! The waiter took good care of us regardless. The food was yummy and we left feeling full. The restaurant gives the vibe of an upper grade restaurant with mood lighting and new century decor. Given the atmosphere, we were expecting the food to be amazing. Maybe this was because of the holiday? We will definitely be back since the service was great, and the food was good. Everything had a nice profile to it.

Incredible wine, food, service, company. Cannot believe I've never been here before now. Can't wait to return. The bread pudding was hands down the best thing I've eaten in YEARS. Perhaps DECADES. No joke.

We loved the ambiance, feeling like we'd really discovered a gem off the beaten track, pun intended. By joining the club, it was a monthly excuse to plan a special night out to what became one of our favorite places for date night. It's been a couple of years now, but we had occassion to meet the owners, when we mistook their closing time for an hour later. The lights were still on, so we didn't realize our mistake, until they'd already invited us in to exchange our monthly growler with such warmth. Super nice people, reflecting the vibe we always felt on our other visits. The staff echoes that disposition, always friendly and knowledgeable. Though the winery isn't on-site, I've always been impressed with their tasting experience. I've now been a member for over 5 years, going in at least once a month, and they still suggest trying seasonal options and have broadened my palette... Though my ex and I have parted ways for a long while now and he moved away, he's kept our membership current, calling it my "alimony," and a nod to remembering the good times we had together. I recommend Bigsby's for all the good memories for all the folks, be it a lazy summer afternoon on the patio or a cozy evening in the lounge area with a glass of red when it's cold outside!

Then when he did acknowledge me and I stated I would sit at the bar, it took several minutes for the bartender to acknowledge me. The staff was busy speaking to each other and doing side work. Once I was acknowledged, things started getting a little better. When I arrived during breakfast/brunch, I was informed they were in the middle of a menu change, so my choices were limited. Breakfast items include bacon and burritos. I started off with a charcuterie board (though I had asked for a fromage board). This was not only because I wanted some tasty cheese, but I was trying to kill time until the lunch/dinner menu started. The board was a great board, two different meats, three cheeses, a loaf of bread, some nuts and jellies. But it was 40 dollars! I had a few small plates (which was still a lot of food). I had a melon and cucumber salad, which was a good palate cleanser. I also had the roasted king mushrooms, which were underwhelming with no seasoning, and they were a little chewy. The best thing was the wild boar meatballs, which were seasoned really well and in a savory, delicious marinara sauce. All the cocktails were fruity (but not sweet) and refreshing. I had one that was carrot based (Kiss my Carrot with tequila, cointreau, carrot, orange, and ginger), one that had pineapple flavor (paper boat with rum, falernum, aperol, lemon, pineapple), and the smoky smoke and flower (hibiscus mezcal, cointreau, pama, rose water). This spot is a winery, so they have a large wine list. They have handhelds like burgers and flatbreads. Starters like artichoke dip and bruschetta. Some of the current entrees, which might change, are hanger steak, chilean salmon, cauliflower steak. They had a gnocchi dish I was interested in, but it's already been removed from the menu. The restaurant is classy and just like a winery is expected to be. The food is pretty good. But the service was really subpar.

Not a big deal, I was just thinking not everyone wants a whole and if someone is extra hungry they can take two halves. Just thought it would make things a tad easier. They tell me no. They can't/won't cut in half. Ok, whatever. I don't understand what the big deal is, they obviously posses knives... just cut them instead of saying "no". So stupid. 20ish Minutes after waiting, the person who took my order said it would be 30 minutes to make. Which was weird cause what was going on for the last 20 minutes? 30 minutes to wait is fine, if you don't waste the 20 mins prior resulting in about an hour wait. So, I declined as now we are talking an hour to get 20 simple breakfast burritos. I needed to get to work and I wasn't wanting to wait an entire hour and they just wasted 20 minutes of my time not prepping anything, so I decided not to go with the burritos. Someone came to refund my sale and then preceded to kind of scold me for not ordering in advance. He said something about for an order like 20 burritos they want 2 days heads up. GTF outta here. It's freaking burritos. You don't need 2 days to make 20 burritos. And here's the thing, I'm not here for a lecture because I attempted to give YOU business. And I won't be back, either. When you get a customer to purchase your goods, be happy. Provide them the goods. Make it as soon as you can. Don't say no for no reason. Don't make anyone feel bad for trying to give you business. It would have been SOOOOO simple to make the burritos and quick run the knife through them. But, no, the choice was to do nothing for almost a half hour, to refuse to run a knife through them as asked, and then lecture a customer for coming in to order 20 items. It's not like I asked for 100. What if 10 customers came in and each ordered 2? Can you do that? Do they get lectured, too, or...? See ya.

He made adjustments, which did increase the temperature of the room from arctic to chilly--but it remained unacceptably cold. Pacing of courses was oddly timed. The waitstaff couldn't seem to strike a good balance between casual and fine dining--it was a little awkward at times. The Bad: Despite placing our wine flight orders twice, with two different waitstaff, they forgot to give us our drinks until we asked. By then, we'd missed two of the pairings. They did offer to serve us the remaining pairings at no cost, which was a nice gesture. But, it's wild that something like this happened in a place with 16 seats and 4 waitstaff--they missed out on $400 in alcohol sales because of this error. The meal was explained to our group as a "ten course" experience. We only received nine courses: 1. The venison "hamburger" 2. Cappuccino 3. Roasted apple 4. Crudo/sashimi 5. Scallop 6. Lobster 7. Venison skewer 8. Duck leg 9. Dessert This feels like an egregious oversight. And, based on what we overheard from the table next to us--almost felt deliberately misleading. The wine pairing is plainly described in the menu as "five pairings." As dessert was brought out, the table next to us inquired about the remaining pairings, as they'd only received 4 pairings up to that point. The waitstaff tried blaming it on the fact that "dessert wine is polarizing" and "we over poured the other pairings," but those are weak excuses. If you're not going to offer the full 5 pairing flight as advertised, that needs to be communicated ahead of time. Overall: With a price point, including wine flight (had that worked out), per person of nearly $325--The Guest had too many substantial misses. While the food may be ready for prime time, the service is leagues behind.

The Guest, located inside The Regular, is a full dining experience rather than a traditional…read morerestaurant, and it's a strong addition to the Denver food scene. This is a timed, coursed dinner where the entire room sits and eats together, so arriving on time is essential. The format creates a restaurant wide dinner party feel, which sets the tone for the night. Everything feels intentional, from the pacing to the service to the design of the space. The menu changes often and is never repeated, which makes the experience feel special and creative rather than formulaic. Standout dishes for me included the duck doughnut, the wood ear French toast, the venison burger, and the leek cappuccino. The kanpachi crudo and scallop with tamarind were also beautifully balanced, and desserts like Cash's Apple and The Sphere were thoughtful finishes rather than an afterthought. One of the more memorable details was the menu book at the end of the night, featuring the chef's original sketches of the dishes. It's a small touch that really reinforces how personal and considered the experience is. If you're looking for a unique, chef driven tasting experience that feels cohesive and well executed, this is absolutely worth a reservation.
