Cowboy Cantina opened in May 2026 in the former home of the Stark House Tavern (moved up the road) in Weare. This roadside saloon and restaurant is also operated by the same owners as Riverside Grille in New Boston.
The place has the atmosphere of a cozy western saloon with finished wood walls & cowboy decor. There is a full bar with 10 swivel high chairs & 2 TVs, tables and high top table seating.
The bar offers 12 beers on draft, beer bottles/cans, liquor, margaritas, and mixed drinks.
The food menu offerings include BBQ meat platters, BBQ bowls, a selection of tacos, burritos, burgers, sandwiches, hot dogs, steaks, seafood, pasta, salads, appetizers, sides and desserts. The prices seem fair.
I stopped by Cowboy Cantina around the 4pm opening time. Folks began arriving steadily and the dining room became full in a half hour. I took a seat up at the bar before it became busy. I got an ice water with lemon and order the Quesabirria Tacos ($16 plus tax) with consomme dip and side choice (chose mashed potatoes).
The tray of food came out in 7 minutes. The 3 soft tacos were good sized and filled with plenty of soft slow cooked birria beef, melted cheddar jack cheese and topped with chopped white onion & cilantro. I dip the tacos in the consomme. The mashed potatoes were chunky and dense. I actually used the rest of the consomme on the mashed potatoes.
After I was done, I ordered dessert. The Brownie Sundae ($10 plus tax) had a soft fudge brownie topped with a hard scoop of vanilla ice cream, chocolate & caramel sauces, whipped cream & cherry.
The check with Toast QR code was $28.21 with tax and before tip. I paid online as the place was getting really busy. The couple next to me ordered their food as I finished my entree and they were still waiting. There were some folks waiting in the entrance way to be seated when I left.
I will definitely come back to try some other things on the menu like the Rattlesnake Pasta, Mac & Cheese, Steak Tips and Fish Tacos. Get here early. read more
