All of them were good, but the pork was the one I kept thinking about. The broth was deeply savory, and the pork filling had the texture and flavor of a very good meatball hiding inside a dumpling. The crab and shrimp were close behind. The beef and chicken were solid. The truffle dumpling was a different animal altogether. It tasted like someone had taken a whole truffle and put it inside a dumpling. Truffle isn't usually my favorite flavor, but even I had to admit this one worked. We also ordered shrimp stir-fried noodles. The shrimp were cooked nicely and the noodles were perfectly respectable. Uncleaned tripe may still contain food residue, digestive material, parasites, worms, bacteria, and strong bile or waste odors.
