Crème de la Crème is located inside Sawmill Market. The Halloween decor caught my attention first and then I spotted the pastries that were so aesthetic looking. The owner, Bella, was very friendly and gave us tips on other spots to check out around town. What really stood out is that they don't use seed oils or processed ingredients. You can actually taste the difference. Everything feels lighter and fresher. We tried Terry Bradshaw's favorite - the crème brulee croissant. It was creamy, flaky, and worth the hype. The pistachio cronut was another winner. They bake it not fry it, yet it was perfectly crispy. The cronut also came in Madagascar Vanilla and chocolate fillings. Each pastry was also topped with edible flowers. On top of all this, it came in this cute little Louis Vuitton-style cloth to-go bag that made the whole experience feel extra fancy. What a lovely little pastry shop! We wanted to find something special to take to our aunt who is in the hospital and this was an outstanding choice. It is located inside Sawmill Market, a food hall with tons of choices to satisfy most anyone's palette. The owner greeted us and told us all about their ingredients and various pastries. I happened to be at the sawmill and had to stop and get a little something to celebrate for an early for a bday coming up! Not too sweet-just right-and so beautiful! I had the chocolate crust with red raspberries on top and a strawberry crème inside. However, I may have gotten that wrong of the crème. My hopes were high but the results not good, not great, and way too expensive . . . Oh how I longingly looked at their social media posts. Fine pastries that are even too pretty to eat. Found ourselves at Sawmill last week. So of course I had to stop by Crème de la crème. With excitement I checked out both glass cases. Everything looked wonderful, oh to decide! The "chef" even came over and carefully explained the different items to choose from. Well, (deep breath) I was so disappointed. $30 for 2 desserts. Yes TWO! As in $15 each. Both were small but that was ok, I expected high quality and fresh ingredients and flavor. Like an experience from Paris, or NYC, heck even LA. Nope, that never left the runway. One was maybe a 5 out of 10. A slice of layered cake that looked heavenly. It had 3 layers, cookie crust, jam filling and a mousse like top layer with a thin pretty pink topping. Just enough sweetness, lightness and appearance to gain a score of 5. It was just ok. But not anything warranting $15. The other, a small fruit tart. Blackberries adorned with a slight gold powder. I chose pistachio filling. Now this was ridiculous. For the price every single thing should have been exquisite. But no, shockingly tasteless crust (I'm serious, it was like they forgot something), pistachio filling with little flavor that sparsely filled the tart (and the chef raved about pistachios from Sicily I believe). Can't rate the berries. It's understandable that you get what's available here in New Mexico. I'm old enough to have lived and traveled to many places. I have experienced many fine desserts. It's ok if something isn't overly sweet, I'm fine with that as long as there's flavor. And I will pay the price if it's unique, well crafted and beyond expectations. This was a pre order cake from Crème de La Crème! I spoke with Armaní a few weeks before the pick up date to place the order. After trying a few of their tarts we wanted to get one for our friends anniversary dinner! They had tried the Seme di Cioccolato a chocolate tart that was rich and elegant! I placed the order and had a friend pick up a little bit later than originally planned. Armani was and accommodating and friendly. Originally we had thought that the crème on top would also be chocolate but I'm not sure if that's supposed to be the case just bring it off the one we had tasted as a mini Seme di Cioccolato . Regardless our friends loved it ! It had some type of nuts in between the tart filling and the creme on top which added texture! The edible flowers are beautiful touch! This is an amazing European pastry shop in the Sawmill Market in Albuquerque. Clean ingredients, perfect flavor and sweetness level, beautiful presentation. Can't say enough how delicious it was! I'm almost reluctant to share about the extremely spiritual/religious experience I just had at CdlC. A few days ago, I got an email inviting us to try their new pastries celebrating the transition to fall. The cakes on the site looked exquisite, and the descriptions were sensual (I learned that the proprietors photograph and write the descriptions). As my favorite food group is pastries and ice cream, I was extremely excited to return to try more of their creations, which are basically edible art. The foods aren't labeled, which means that the proprietor talks to you when they explain what each one is, thus creating a connection. We ordered 7 items, then retired to a private counter seating area to try all 7. Some words swimming in my head after this visit: Vision Kindness Thoughtfulness Thoughtful gestures Affirmation Encouragement - On this note, I think kindness and positive reinforcement are lovely things to spread in the world, so if you enjoy your experience, I encourage you to tell the proprietors. It's always nice to know that what you're doing is appreciated and that your work is making a difference, and I suspect that many of us feel or will feel that way about this food. I suspect my experience was elevated also by the fact that I had a conversation about the food with the people who work there, and I'm so glad I did. Sunflower/banana tart - Most unique. Met the brief for intro to fall. You can see the care and attention to detail in the piping on top. I learned it was a couple years in the making, and I'm glad the executive chef decided to take the risk and share this successful dish with us. Truly a unique experience. Maple bourbon croissant - most indulgent. Filled with oozy cream. Perfection. A special flavor for them. It was warmed up for us so that we could experience it as intended. Chocolate mousse - I couldn't stop eating it. Literally. My plan was to sample a bit of each item, but I couldn't stop with this one, and suddenly it was all gone. Black granules coated the outside. A hint of light-brown mousse in the middle. It is basically the Les Ténèbres cake, which is an eye-catching chocolate-hazelnut sponge cake with "silky vanilla bean crémeux enveloped by decadent dark chocolate hazelnut mousse and sealed with a pitch-black glaçage." Carrot cake tart - The carrot gel piped along the inside of the tart shell shows how much thought was put into the details. Pumpkin cannoli - a giant cannolo filled with cream of amaretto and pumpkin spices. Perfect for sharing in the style of Lady and the Tramp. Delicious. You're left wondering what you're eating, in a good way. Mousse cake - simultaneously thick and light. A stripe of cherry and an almond flour base. Pumpkin crème brûlée - extremely tasty, but it wasn't caramelized recently, so you didn't get that crack. A great flavor nonetheless. - We had some questions about what we had just eaten. We started talking to the person who initially helped us, then the executive chef joined the conversation. We learned it was a family affair, which made it that much more special. We learned about CdlC's journey from selling crème brûlée out of their car to selling inside a brewery, then eventually opening this store inside Sawmill Market. We learned about the philosophy and inspirations that influence their vision (it's not just seen in the food, one can also see it throughout their entire corner of Sawmill Market). I could see the Chef's Table episode in my mind as I listened. As the chef said, it's not just sugary treats (which is a completely valid and amazing thing on their own); it's a spiritual experience.
