A number of bars in Chicago boast a huge selection, but your heart gets broken quickly when the barman repeatedly says the selection you've made is out of stock. NOW, I come to the liquors I like, nay love, as life itself. Scotch whiskey...... they don't make it..... ok then my other favorite nectar of the gods, TEQUILA.... Specifically repasado or anejo. In this case, theirs is called "rested tequila." It is sweet for tequila, but only for "unsweetened tequila" meaning no added BS or sugar (which surprisingly some big labels use.) it has a profile similar but BETTER and less sweet than Casamigos repasado. It is really VERY good, not astringent and deceptively smooth so that it could be dangerous, time will tell. This place is worth a 20-30 mile detour to check out their tasting room and cave like atmosphere. It is a shame we were not at this place 40 years ago when I could have lit up a cigar. Oh well.
