I've been passing this food truck parked near the Burger King Restaurant on route3 near Ferry Farm. Tonight I stopped in to pick up some ribs and I wished I hadn't. First they don't offer baby back ribs so I got a half rack of pork ribs which were a hefty $17.00 and they were sooooo over cooked, dry and burnt that I was unable to more than 2 of the ribs. On top of that the dinner included no sides and the ribs had just a small smattering of BBQ sauce that I can't truly say what their signature BBQ sauce. I've been passing this little truck on 610 for years, always saying to myself, "I really need to stop here one day." Well, over this past weekend I finally did, and I can't believe I waited so long. I got there right around 1pm and there was a short line. I drooled over the menu posted on a big sign on the side of the trunk while I waited. Brisket? Pork ribs? Smoked sausages? I'm terrible at making decisions so I ordered all three to keep the stress level down. I also got 2 tubs of potato salad, sense I believe one shouldn't have BBQ without it. I loved the pimentos they used in it. They added a nice briny and slightly peppery touch to the mustard base. Yum! By far my favorite out of the meat was the brisket. Oh! It was like getting a taste of meaty heaven every bite. The smoke was gentle and was complimented by the vinegar based sauce. I appreciated how the meat wasn't drowning in the sauce. The meat itself was center stage no doubt. The bites that were more fatty were crazy good. The fat just melted away like meat butter. I'm getting hungry just thinking about it! The ribs and sausage were also really good. I preferred the ribs over the sausage, personally. They were perfectly tender and smoke level was spot on. The sausage was a little too smokey for my liking, but I imagine a lot of people would dig it. I'm glad I finally checked this place out. Can't get enough of the chicken. I go there almost every weekend for the grilled chicken. It's always fall off the bone good. The meat is juicy, the skin is crispy, and it's smoked! The brisket is amazing as well. The only problem is, it sells out so fast, you know it's got to be delicious. I recommend this place for anyone who wants genuine delicious smoked bbq. The ONLY reason I gave 2 stars is because the pulled pork sandwich was fire. My main issue was the price. I ordered from the food truck over the weekend at the Stafford Fall Festival. There were literally 2 people working in the truck (slowly I might add) and I stood in line for about 20 minutes with only about 5 people in front of me. I get up to the window and see the prices. $7 (yep you read that right, SEVEN DOLLARS) for ONE pulled pork sandwich the size of a regular hamburger bun.....and $2 for a can of soda! When I ordered I thought, if this sandwich is $7 it must be worth it right? Absolutely not-waaaaaay overpriced. Had I not stood in line for nearly half an hour I would've just walked away. I paid $18 for 2 little sandwiches and 2 cans of soda. Absolutely disappointing because the pulled pork DID taste really good. read more

I absolutely LOVE BBQ, and have eaten at every place in Fredericksburg except Dove Shack. Today I stopped by the Ferry Farm/King Highway truck about 12:30 pm, and ordered the pricy half slab of ribs $17, and a beef brisket sandwich $8. As it turns out, they had mistakenly given my ribs to anther customer who had pulled away, and then tried to give them to me! In Corona19 land, are you serious? When I refused the returned ribs, what they gave me as a half slab of pork ribs was 5 teeny tiny rib bones, with 3 rib tips, all of which appeared to be BURNED all to hell. They tasted even worse!! Burned, and TOUGH as leather. As I was half -way down the highway when I tasted them, I wasn't going to return them. My reasoning was "if you'll serve something like this, you JUST DON'T CARE!" I actually said out loud to myself while driving, "You guys just don't give a damn, do you"? I saw what appeared to be the owner present, and he told them to throw my unwanted returned order away, and I thought I would have to wait, but obviously he doesn't care either, due to what they gave me. The beef brisket tasted like it had been tenderized in a crock pot, and tasted more like pot roast that a smoked meat. No wonder there was no line!! This is the absolute worst BBQ I have ever had in Fredericksburg, bar none!! If you eat BBQ a lot, don't waste your time at DoveShack. They are in it for the money, and not at all about quality. You might try McCoys or TNT, because you'll get more and better quality for your money. McCoys is far better, and you get more, tender and juicy eats, for far less money. A turkey leg costs $6, 9$ for a meal, while DoveShack charges a whopping $14. Like I said, I LOVE BBQ, but to me, the Doveshack brand is just bullshit served to people who don't know any better. Fool me once, shame on you, fool me twice, shame on me....Oh, and absolutely NO ONE is wearing a mask OR glove at this place...these ribs aren't "To Die" for.. Little roadside motor home with large smoker behind it. They have menu posted with items listed. Nice customer service. I tried the smoked sausage which was excellent! It has smokiness and tender!!!topped with BBQ sauce just enough to bring out the Smoky goodness! The pulled pork was tender and moist fell apart and topped with just enough BBQ sauce. Good smoke flavoring! The collared greens were tender, needed some bacon or salt, but still good. I will have to come back for brisket and ribs next weekend! read more

My husband grabbed us some BBQ as a treat while unpacking after just moving to the area. He bought us a brisket sandwich and a pulled chicken sandwich. We were really excited for the slaw because, hello, slaw makes BBQ fantastic but unfortunately they "did not have any slaw today" at 3pm on a Saturday afternoon. This is disappointing because they're only open on the weekend but maybe it was a busy morning? The food came out very quick, which was nice, and he drove less than 10 mins home. We started eating immediately. The sandwiches were cold and pretty soggy, like they were maybe prepared in the morning for quick grab and sitting for a long time? The meat itself was kinda dry but definitely had a good taste. If you ate bites of the sandwich with the sauce (Sweet Baby Ray's), it was pretty tasty. So, it was ok. We are willing to come back again earlier a different weekend to see if maybe we just caught them at a bad time. We will say the pricing is pretty high for being a side of the road stand with nowhere to sit as well as having such limited hours. But, it's alright for BBQ. read more

Brisket - excellent, tender as butter, juicy, right balance of meat and fat Pulled pork - tender, the perfect balance of salty and sweet Pork ribs - 1/4 smoke ring, firm enough you can pick up a rib & eat by hand without it falling apart, tender enough you leave the bone clean Collards - cooked just right, not too salty, not too vinegary, not too bland Our only critique is not enough bbq sauce; HOWEVER, this is Texas style bbq. You can get it wet or dry...we just prefer thick, sticky, wet bbq. But that is just our preference. Highly recommend this place & we'd definitely eat here again. Jet fuel is what it tastes like. They must have dumped the whole bottle of lighter fluid on the kingsford charcoal they use. The gentlemen in front of me bought a $25 dollar rack of ribs and when he asked for them for some bbq sauce they handed him a bottle of cattlemans bbq sauce. I would go 3.75 stars right now, with the potential be a four or five star BBQ. You can get great ribs one weekend and overcooked ribs the next. It's just hit or miss and I've timed it based upon their setup and even speaking to the cook. I give them somewhat of a break for really not knowing what the customer level will be so they may prep more then necessary sometimes and it holds in the cookers. Their brisket is really good, but only available as a sandwich at $8. Too pricey. The pulled pork is the wife's favorite and enough to really make two sandwiches. It has the potential to be so much more and I'm hoping over time the owner gets there. He's very dedicated to his business so perhaps during the football season it will be more consistent. read more

I also live in Stafford and drive by this place for YEARS. They are in the parking lot of Stafford Physical Therapy. When I went on a beautiful Sunday afternoon the young lady, his daughter (i overheard) was very nice and friendly. I saw the owner talking to a regular customer and he seemed very talkative, I asked for a menu and he just handed me one. The guys need to do better on customer rapport, but they may be just shy around ladies and that's fine. But yes, my brisket sandwich had no bread or sauce in the bag. How does that happen?? Someone suggested to get sauce on the side and yes, that's true. DO NOT get your sauce added. My hot dog sausage seemed a bit expensive and they use cheap bread. I would put 2 pieces of bread in the orders, the buns are sooo small! Portions are small, my meal (pictured) was $15.!! If I would have gotten it for $10-$12 that would have been better. I would stop by at least once if you are in the area. It's not bad, or horrible, just another meal to enjoy when youre tired of the regular stuff in the area. The brisket was buttery tender BUT no flavor. If this is Texas BBQ, yes he has the technique but the seasoning is too mild! I think also the meat anywhere is just not flavorful.The seasoning is missing white pepper my friend. I'm a 70's girl so I know my meats. They need to get it together in making sure the orders are right. The menu is very basic so no reason to get anything wrong. They just stick the bag out the door. That's kinda weird?? The sauce, I was trying to determine if it was homemade. It's hard to tell and I'm good at figuring out those things. A little country music would add a nice touch. A little "customer service powwow" would get them LOT"S more money. Have a system and say "THANK YOU" when people are paying at least $25 on average. But no one inside knew anything about any BBQ. Finally someone said that they thought a food truck did come park there on weekends but they weren't sure. Well at least I know where the address is. My review progressively went down as my wife and I had our meal. I expected to get more food for $30 but I gave them the benefit of the doubt hoping it tasted spectacular. My chicken leg quarter and pulled pork sandwich was very good with sauce ONLY on the chicken, when we asked for it on everything. My wife's ribs were dry, like jerky, and with no sauce she only ate a few of them. Their coleslaw was alright, the price didn't meet the quantity though. I finally stopped here after passing it so many times. The girl who took my order was friendly and even walked my order over to the car. Unfortunately I was disappointed with my food. I ordered the pulled pork with collard greens and baked beans. Nothing special about either side, they were definitely from a can and had absolutely no seasoning on them whatsoever. The pork was cooked good and had a nice smoky taste and was tender however the bbq sauce had no flavor. Oh and the portions were small and not packaged well. By the time I got home which was about 2 minutes down the road the beans and greens had spilled over to where my sandwich was in the styrofoam tray and my bottom bun was soggy and not edible. The sides are $2 each, but your little styrofoam bowl is only half filled, and the beans taste only a notch better than canned beans. The pulled pork was dry. The subtlety of the smoke makes for a milder taste which is preferable here. The ribs are fall apart tender and the pulled pork is some of the best I've had. The brisket is easily cut with a fork. I really wanted to like this business, but the saltiness of the meat was overpowering. I could not finish my ribs. Also, I asked for sauce on my ribs and felt like a little bit of meat juices was just thrown over my ribs. My side was baked beans, which were suspiciously the same as the Bush Baked Beans I get from the can. All in all, I think if they hold back on or evenly distribute the seasoning, cut the membrane on the back of the ribs (a bbq pet peeve for me), and maybe have a larger variety of sides this place would be fantastic. read more

Being from Texas, I am kinda picky about my bbq. I haven't been back to Texas in a couple of years, so I have missed a good helping of brisket, especially some Elgin sausage! I have now found a slice of home here in VA with Doveshack's BBQ. The brisket sandwich is absolutely amazing! It melts in your mouth and is smoked to perfection! Elgin sausage is what I grew up on and this is the only spot I've been able to get it (besides home of course). some may think that this place is a bit pricey. I think it's totally worth it!
