My personal favorite is the Parmesan Crusted Filet of Sole. What makes it so special is that it's an exceptionally mild white fish that never has the strong fishy flavor many people associate with seafood. The fish is consistently fresh, tender, flaky, and clean-tasting. The Parmesan crust adds a wonderful texture and richness without overpowering the fish. What truly elevates the dish, however, is the lemon and mayonnaise fish sauce served alongside it. The bright citrus flavor balances perfectly with the creamy sauce and complements the delicate flavor of the sole exceptionally well. The filet mignon is consistently excellent--tender, flavorful, and cooked properly every time. The chicken dishes are also outstanding and demonstrate the same attention to quality and preparation.
