The tripe is cooked thoroughly and holds on to the rich flavors of the both with profound care. And the broth is unctuous and rich while steeped in the history of chilies and patience. The tendon when added in gives a greater depth and silkiness that elevates this dish even further. Of course, onion, coriander and oregano gives it the perfect herbaceous notes and balances out the richness with cool notes. This isn't just a soup, this is an experience that one has to have, that one deserves. To taste the food of a people's is to understand their strength, perseverance, their love and ultimately brings you one step closer to a cultural awakening that you didn't know that you needed.
