We had the guacamole and fundido cheese apps, plus the great chips so two people could share one fajita dinner and be full. Fajita Republic has been on our rotation of restaurants to eat at during our annual trip to Nueva Vallarta for many, many years... It's consistent with food, service, drinks, and a fun atmosphere. They moved locations in 2023, but managed to keep the same vibe at their new home as their old one... It's a bit further from where we stay now, but it's still a quick ride and so worth it. The fajita on the rocks is excellent! - a boiling hot basalt bowl keeps the strips of your choice of meat very hot, and boils a delicious bubbling sauce, and you assemble your fajita from a tray of fixings. Simple tasteful decor, friendly staff. They start with a delicious appetizer of jicama and cucumber with tajin (guajillo chile powder and dehydrated lime.) The ginger margarita had plenty of ginger to make it spicy. read more

January 30/2024: Dinner with my Al & Red. This was pretty good but certainly not great tasting. Fairly decent food selection in a great atmosphere restaurant. Kind of an indoor/outdoor style set up. Our server was a nice older fella with a great sense of humour. As for the food. We started with the complimentary nachos then added the guacamole ($158.00p), the Guac was creamy & tasty. My main was the Chicken Chimichanga ($198.00p). Was good but not great, was hoping for great. It was served al La carte, so nothing to enhance it. I will say that it was a generous helping & they didn't skimp on the filling. I tried their house made hot sauce...it was hot alright! I ended with Deep Fried Ice Cream ($138.00p). Included with it was chocolate & strawberry sauces...only used the chocolate. All in all this was a 4 star but I wouldn't rush to do it over again only because the lack of food flavour. read more

We were two couples here for dinner on a Thursday night. This is their new location in Nuevo Vallarta. Venue is lovely with a bar and cluster lighting. It was comfortable and somewhat romantic. Our waiter had been with them for decades and was very experienced and amicable. We had chips and various dips for the table and ordered delicious drinks. I had a coconut mojito which was outstanding. Paul had a delicious margarita. We shared nachos as an appetizer and then we each ordered either chicken, shrimp or marinated steak fajitas which came on a hot plate which was at first displayed with flames - very theatrical and fun. The protein came with caramelized onions peppers and tomatoes. It was flavorful and hardy. We did have a fried vanilla ice cream ball with strawberry and chocolate sauce to share for dessert. There was delightful music playing in the background. This was a wonderful night. The restaurant has always been reliable in all the years we have been coming. We highly recommend. read more

Been coming for years. Not necessarily traditional/authentic but the food is SO good. Didn't manage to remember pics of everything but our family's staples are the Mayan cheese sticks (SO GOOD), fajitas on the rocks for a little twist on the tradish, steak fajitas, and the chile rellanos. The margs never disappoint. The owner, Fernando, always goes above and beyond for us (even hosting our rehearsal dinner years ago). The restaurant has such a unique ambiance, though it can be slightly cramped on their busiest of nights. Always look forward to our meals here! read more

The food was ok, but nothing really special. The coconut mojito was good but had a lot of ice. Had the chicken fajitas, great tortillas but missed the grilled onions and peppers. There were just a piece of onion or two an like one bit of bell pepper. The rest was all grilled Julianne carrots. Lite on the cheese for topping the fajitas but guacamole was pretty good. Fajita republic is one of the best dinner destinations in Nuevo Vallarta. It's a staple that my family goes to every time we're in Mexico. To start I always get the tortilla soup, it comes with a variety of toppings to customize it however you like it. We also got chips and guac to start. The chips were fresh made and super crisp and the guac had the perfect balance of acidity, crunch, and the creamy avocado texture. I had the steak fajitas for dinner and they were delicious as always. For dessert we ordered the deep fried Oreos and the fried ice cream. The deep fried ice cream is one of the most addicting desserts I've ever had and would highly recommend trying. read more

We loved the food but the service was so incredibly bad. We didn't have a reservation so they gave us the the worst seats in the restaurant next to another couple who didn't have a reservation. This despite many open tables. The waiters completely ignored our waving to them as they stood around. It just left such a bad feeling. The food cannot make up for being treated poorly. read more

I used to love this place for the service and the decent food - I have been here a dozen times over the past three years but there is far better food options in this area. The owner or manager was extremely rude- I have never sent food back except for tonight- the chicken Enchiladas were inedible. The tortillas were greasy and stale, the chicken was dry and rubbery and there was so much greasy thick cheese on the top with only a teaspoon of creme and some random half grape tomato. The owner came over and was indignant and asked me if I have had them here before. I told him no, but I have had dozens of other times and other local eatery's where the chicken was moist and tender, the tortillas soft and tender, the cheese light and fresh with delicious crème and plenty of sauce- he took it a way rudely and charged us. This place is perfectly adequate. Not fancy, not divey. Food is decent, and simply prepared (an advantage of fajitas is how easy they are to make). Staff is friendly, drinks are good. Figure US$20 per person with drinks. It's a safe, easy choice. But think twice about the fajitas with sausage -- they use cheap little mergez sausages that clearly come from a Walmart or similar store; they are not Mexican or other sausages you would expect, and frankly aren't that good. The meat is not kobe beef and i t is not sprinkled with gold and when I asked about it they basically said it was 140 pesos (approximately 8$ usd) to add meat. Total bs.
