If you think you can get something similar at a Mexican restaurant or by buying a grocery store rotisserie chicken with chipotle seasoning, you are so wrong. I've had it pulled off the bone and served with rice and vegetables at other Peruvian restaurants outside of Asheville, but to have it mostly on its own, with sauces, a side of fries, salad, tortillas or rice, really enables you to appreciate the chicken for its amazing self. It's marinated overnight and during the rotisserie process, too, so it's not just the crispy, slightly charred skin that tastes of the spices and chiles, it's also the juicy, tender meat inside.
