We were at the Kakaako Farmers Market on Saturday and stumbled upon this wood fire pizza stall. We got there around 11am and all the mini pizzas were out. They had two of the large left. We purchased one and could pick which toppings we wanted on it. The dough is premade and they put the toppings that you want when you order it. We got the large Margherita $16. It was yummy. I had book marked Fatto like three years ago but never had the chance to try them. Well, we were at the Kaka'ako farmers market and there they were! I was pretty happy and we were both hungry, so we stopped by. They hand toss the dough and they have a very cool pizza oven. We ordered from the friendly woman and she said it'd be about 15-20 minutes. There were also orders way ahead of us, so it's understandable. I suggest going and finding a drink while waiting. Probably my favorite pizza right now. You cannot go wrong with the pepperoni playboy or the fungo. I'm sure the other options are equally delicious, but those are my go-tos. The sauce is perfect and the texture of the crust is soooo goooood. I usually don't finish the crust on my pizzas, but Fatto A Mano is definitely an exception. It's so crispy on the edges and nice and chewy throughout. They don't have a brick and mortar, so you'll have to find them at the farmers market or when they do occasional pop-ups in Kaimuki. They have 2 sizes and the small is pretty small. I can easily eat two of them myself--also because they're so delicious. I do want to try the Margherita next. If you see them at the local farmers market, make sure you give 'em a try. They're made to order, so you'll have to be a little patient, depending on how busy they are. After coming across Fatto A Mano's instagram page, I was excited to give them a try the next time I was at the Kakaako Farmers Market. When I came across their stall at the market, I was excited to see they use a legit fire oven for their pizza. Their prices were also really reasonable for the size of the pizzas, especially considering the quality. I got a mini, which is the perfect size for one person. I tried the Margherita pizza and the Fungo pizza, which had mushrooms and ricotta cheese. Whenever I eat pizza, there are two main things I judge it on: the crust and the sauce, both of which were superb. The crust was soft and chewy, and the sauce was tasty and well-made. The ingredients all tasted very fresh too (the mushrooms on my Fungo pizza were AMAZING). The ricotta cheese on the Fungo was also loaded on and super thick. Overall, you could tell the pizza was well-made and packed with flavor. The Margherita was definitely my favorite, mainly because of the tomato sauce. Fatto a Manno! At first glance a funny phrase like a bad comedian calling some guy fat in a bad Italian accent. But it turns out the phrase is incredibly thoughtful. 'Fatto a Manno' means handmade or made with one's hands. Which is an accurate description on how they make their pizzas. Wednesday afternoons for the Honolulu/Blaisdell Farmers Market is one of the two times a week FAM makes their way into Honolulu. The other time is the Saturday morning Kakaako FM. Thursday afternoons & Sunday mornings they are on the Windward side. I've seen them around the Blaisdell FM, but I've usually had dinner or other dinner plans. One time about a month ago I decided to try FAM's pizza with a small personal pan sized pepperoni. Like most brick ovens, the pizza was very quick! Very enjoyable, FAM's pizza had a very tasty char. Since it was our first time trying Fatto a Mano and let's be honest - coming from a city like New York where you can get great pizzas, we were a little skeptical - we decided to get a small pie of the sausage pizza to share just to see what it's like. As soon as we took a bite of it, we immediately regretted not getting a bigger pie. The pizza was piping hot since they're freshly baked at the food stall and the crust was airy and perfect. When it comes to pizza, I'm very seriously picky on what I eat. More simple the dish, more complex it is for my palette. So one of the most critical food I consider tends to be simple food such as: Pizza, Burger, Sushi, Udon, Soba, Tempura, Shave Ice. For me the Pizza needs to be cooked at very high temperature without burning the pizza. The sauce I prefer more organic feel, with minimal seasoning and more natural ingredients. James's Pizza is exactly this, its not good good taste good, but it has this balance of subtle that makes you want and crave more. The dough is different every week as the artisan James crafts his on dough every early morning. It's interesting to see what he is doing, as almost he has some tool to communicate with the pizza dough. As with most reviews I wrote for new food stalls, it's hard to be negative because these food stalls is usually run by a person doing his or her own passion for food, and doing something you're passionate about only to be criticized can be tough for some. At Fatto a Mano, all the pizzas are 12-inches and hand made with four choices of pizza: margherita, pepperoni, Toby, and Melrose Ave (vegan) ranging from $15-18 in the listed order. I ordered the pepperoni ($16) because it was the simplest one and you can't really mess that up....right?? Well..... I know pizzas in Italy don't put that much toppings on a pizza, and heck, they don't even put pepperoni, but I've never had the pizza with this little toppings. The tomato sauce doesn't even reach the crust and bare in a few areas. I never really got the taste of it. There were only two whole pepperoni slices while the other pieces were smaller and disfigured, and there was an okay amount of mozzarella, but never felt cheesy when eaten. The dough is supposed to be sourdough, but I couldn't taste any hint of sourness in it, even the crust. The pizza was made to very thin with a chewy, thick crust. The pizza was a little too thin for me, but I liked the crust because it was a little crispy on the outside and chewy inside. Overall, the pizza lacked taste and it was boring. The crust was too thin. The pizza isn't worth the price, especially given the amount of toppings and the size of the pizza, as well as the location. Perhaps the other pizzas were better. Fatto A Mano is a local hand-made and brick oven pizza place. I visited their tent at the Kakaako Farmer's Market. They are located on the mauka side of Ala Moana Blvd. I tried two different pizzas. The Toby and the Melrose Ave. The Melrose Ave is a vegan pizza. There is no cheese because it's vegan. Lots of interesting flavors going on with cashew ricotta. It's not your usual toppings for a pizza. I wouldn't get this pizza again. I also tried their Toby pizza. I love the goat cheese on this pizza. One thing about their pizzas is that it's flimsy. The pizza is thin with a thick crust. With all the toppings on top, it's difficult to hold the pizza without all the topping falling off. They're always super busy, and every time we're told that it would take 20 minutes. It ended up being 30 minutes or more. There are 3 workers. One takes orders. One is the pizza maker and baker. I've known james the owner for years now, and can say without a doubt he's one of the kindest and most genuine people I've ever met. His pizza is phenomenal. The dough is reminiscent of the very best pizza I've had in NY and Italy. I've had the best and this is it. I LOL when people ask "why is it burned"?
