I'm guessing it's what they use for the rougamo (I've seen it at other Chinese restaurants described as a Chinese hamburger) and the shaanxi soak buns. It almost has a gnocchi type of consistency. It isn't your average fried rice and stir fry type of Chinese restaurant so if you're looking for something like that it might not meet your expectations.
