We went into Public Provisions to see what they had to offered and discovered, all the way against the far wall, Flour City Bread Company! It was a pastry that I was after and Flour City answered my call. There were a selection of pastries and pretzels in the case and loaves of bread neatly displayed on shelves against the wall. A pistachio chocolate croissant caught my eye and my dad got a soft pretzel. The cashier was very friendly and answered my chocolate snob questions, ensuring that I was not going to get milk chocolate or a sugary chocolate spread in my croissant. Not only was my croissant made with semisweet chocolate and a nutty not too sugary pistachio spread, but it was also flaky and buttery as a croissant should be AND I was given a warm out of the oven one rather than one from the case. Sorry, no pic and I devoured it lickety split; but, I did take a breath to offer my dad a taste. What a delectable treat it was! My dad enjoyed his soft pretzel. It was dense and topped with a nice amount of large salt. Unfortunately for him, he didn't get the "fresh out of the oven" special, but he still enjoyed it. I went here while walking through Rochester's Public Market. I'd heard great things about the pastries & bread from this bakery so I wanted to check it out for myself, and I'm glad I did! It's in Public Provisions right across the street from the B side of the Public Market. It's a small-ish place - gets crowded quickly, lots of people lining up. Definitely should come early if you have a specific pastry you want to get. It was my first time both coming here and at the Public Market so I didn't really have anything in mind. I was able to get the last cruffin on the display - I asked what it was and the person behind the counter said it was a chocolate lavender cruffin. I took it back with me for later and it kept just fine at room temperature. It was delicious!! Perfect pastry, and the filling was exquisite - not too strong on the lavender, but enough that it was definitely present. So good. I really love the goodies here! Favorite items: - Cruffins - favorite flavor has been a salted corn caramel one. I had to have the employee explain it to me, but I was intrigued enough to get two. That was a good call. You really can't go wrong with any flavor though. - Chocolate pistachio croissant - Some Concord grape and peanut butter thing (tart?) that I bought on 10/7/23. Holy cow. Where has this been hiding my whole life?! Service moved very fast even though the line is typically pretty long. Wait it out--it's worth it! My only complaint is that the glorious cruffins really need to be packed better (not waxed bags). I've had some...incidents...while transporting them back to Syracuse. I am writing this review and just wishing I was at Flour City RIGHT NOW enjoying a spinach & feta pastry. If you're reading this, at any time, get on your bike and go to Flour City and order this calorically dense, perfectly formulated, served with love PASTRY. Oh my lanta. I had skipped Flour City during my market trips because I am line averse and usually always on the hunt for a BEC from Scotts II. But not this past weekend. My partner wanted a danish, so on the line we hopped. AND MY LIFE WAS CHANGED. I will be back for a breakfast sandwich soon, and vow to never skip Flour City Bread Co again, my waistline be damned. How have I never written a review of this place? It is definitely one of my favorites in all of Rochester, even though I eat less and less bread and gluten now a days, but I always make exceptions for Flour City! Probably my two favorite things are: 1) The lemon meringue tart, which is fantastic and a really special treat which I eat once a year on my birthday (yes, I eat the whole thing)....you just have to get past the fact that it has been breathed on by all the other customers as it sits there on the counter waiting to be purchased (I consider it building my immunity....) and 2) The almond croissant, which is filled with a sugary-nutty-almond cream and is absolute perfection (and very popular - so get there early or you might not get one!) I have also eaten the cannele, which are delicious and unlike anything else you can get in Rochester; the donuts (a bit heavy); all of the other croissants (pistachio, chocolate, etc - all very good); the jambon (ham) and burre (butter) baguette sandwich (satisfying and delicious); the mushroom tart, spinach tart and potato bread - all very good; the olive bread (they have different kinds and all are great); the cinnamon brioche (awesome for french toast); the breakfast special toasts (usually served with an avocado mash and a fried egg) - one of the best breakfasts in the market; and the breakfast sandwich which is filled with egg and fontina cheese and is a tasty, savory treat. I have never been disappointed by a single item, and the only bad thing I can point out is that there is a usually a long line, and if you order an avocado toast or breakfast special you usually have to wait upwards of 20 min. (By then I have usually devoured the 'other' treat I bought and am no longer hungry....but I still eat it!) But it is soooo worth it! Added bonus: they use really great, fresh, local, organic, non-GMO ingredients, and their prices are a great value for the artistry you are experiencing. Do yourself a favor: get up early on a Saturday and head directly there; order something plus a coffee or Chai Guy chai or other hot drink from one of the nearby purveyors and eat your purchases outside (in spring/summer/fall) and people watch as the market comes to life. This is a cute little overpriced bakery near the front entrance of the wonderful Rochacha Pubic Markup. The little desserts I've tried here so far have just been average, but having read some of the other reviews, next time I come back I am definitively going to try a croissant. Then maybe this place can earn that 5th star which so far, it is lacking. I am looking forward to finding out. read more

My cousin went in on a Wednesday and told me she got a cruffin with grape jam. She said it was really good. I went on Saturday morning and asked if they had any. The girl said they had cream. I said I was looking for the ones with grape jam. She said that was the one. It had grape jam and cream. I told her that wasn't how it was described to me and she assured me this was the one I was looking for. I could tell she wasn't being truthful but I decided to give her the benefit of the doubt. I bought five and tipped over 20%. I gave my cousin 2. The next day she thanked me and said they were good but not as good as the grape one she had. I ate one and it had a small ribbon of grape through the cruffin and a ton of vanilla cream. I didn't like it. It gave me a headache. On Monday, I called to say I didn't appreciate being lied to and no one answered. It said to leave a voice mail but voice mail was full. LOL. Obviously, they don't care. I was also going to tell them that I got violently sick on the quiche I ate while I was there. I almost didn't make it home. :( You don't get a second chance to make a good first impression but again, I don't think they care. I've been craving for croissant so this is the place to go. I arrived there around 8:40 on a Thursday morning and there was no wait. The place next door had lots of customers sitting outside. I got 1 plain, 1 almond and 1 chocolate-pistachio, altogether about 8 bucks. I took my first bite on the almond one first. The powdered sugar might fly a little but it is fine. The sweetness is from the filling and it can get pushed out between bites. It has flaky characteristics but not like weightless flakiness that gets everywhere. The chewiness, IMO, does not rub against anything in my mouth, and I did not feel like grinding my teeth together in order to chew. Also the croissant looks bigger than I expected. I had the plain one during lunch time. It has minimum flake fallout compared to the other two. It does not give off the greasy feeling in the mouth, despite being plain in the flavor. I like it the best because the other two, due to their filling, are like dessert. Then I had the chocolate-pistachio before dinner time. The filling has sugar granulates (hope I used the right word) in the pistachio part and creates an interesting mouthfeel. Compared to the almond one, it has less fallout during eating. Also the distribution of filling is heavier in the middle and less on one end. Sweetness level is on par with the almond. I've learned that good croissants don't curve like a horn from a travel&food show in which there is an episode in Paris. So there's that. I'll definitely come back to explore more. read more

The bread is good, the pastries are outstanding, the service is fine, but what I want to write about is their Market Pizza. It seems like the pizza guy just strolls around the Public Market (the bakery is located in one of the buildings facing the market) and buys whatever is good, and makes insane pizzas out of it. I've had squash blossoms, eggplant, roasted pepper, parsnips (a favorite), kale, all sorts of onions, heck, anything you can find in a public market. They make 2 flavors, a meat one, which I ignore, and the market veg one. You never know what you are going to get, but I brave the crowds whenever I can on Saturday to get some. I think they do Thursdays as well. As far as the pastries go, think croissants, not so much frosted things. You can get coffee next door and eat outside in fair weather, one of the better Rochester experiences. read more

Their croissants are very hard, and not just on the outside. The pillowyness is missing on the inside and you get a crunchy experience from start to end. The butteriness makes up for it a bit, I suppose. The pistachio cream is very grainy and oily/greasy so the pistachio croissant ends up being quite crunchy, too. The pain au chocolate could use some more chocolate - most bites were plain croissant. The best items are the cruffin and the almond croissant. The spinach and feta croissant is also very good and not hard like the others. read more

If you go to FCB at the public market, try the chocolate croissant. No, seriously, listen to me..you want the chocolate croissant. You can thank me later for turning you to the amazingly buttery + flaky layers and just the right amount of chocolate + a tiny hint of salt! However, if you visit FCB at the Brighton market on Sundays, I wouldn't recommend the chocolate croissant...I mean it was still good but it already tasted a little stale (I think they bake these Sat mornings). It might be better if you heat it up in a toaster oven. Their brioche is delicious for French toast. The chocolate hazelnut tart with sea salt is just fantastic. The almond croissant...also great. In short, follow these steps for bliss: 1) Go to the Public Market on a Saturday (before 11am if you want to make sure they don't sell out of the chocolate croissants). 2) Head to FCB and get a chocolate croissant. Actually, let's be honest - you really want to get 2 but for the sake of your arteries, get one (and then get another one for later...like a whole hour later). 3) Go right next door to Java's and get a copy cat (I get it iced or hot depending on the weather). 4) Sit down and eat said croissant, alternating with the copycat. Lick your buttery fingers. 5) Surreptitiously, tear off a piece of the other croissant I already told you to buy. Pretend like you are going to wait an hour to eat it. But really, eat it while walking around the public market and shopping for vegetables. I read a study that said croissants are calorie/fat free if you eat them at the same time you buy some spinach! ** Go forth and enjoy, my friends. ** Yes, I made this study up. But really, it makes sense. Sort of. It will make sense when you are trying to justify a second croissant on a Saturday morning. read more

All right, I'll say it: this is the best bread in Rochester! Years of shopping at Flour City Bread, and I've never had anything that wasn't carb-y perfection. Great, crunchy crusts with soft and airy interiors on a variety of loafs (ranging from traditional baguettes to more unique selections). My personal favorites are the walnut levain (chock full of walnuts, makes great toast!), and the toasted sesame sourdough. I was first turned onto this place by their breakfast sammies. Be warned, if you come on a Saturday morning, you may have a long wait. I like to drop in on Thursday mornings when there is no line! I've also had great luck with their sweets: cinnamon biscotti, pistachio chocolate croissants, lemon tarts, fruit & cheese danishes, etc. The most unique sweet I've tried lately was the Canele de Bordeaux-- a crunchy, glazed, molded delicacy, filled with a moist, bready filling, flavor reminiscent of creme brûlée. Easily my favorite bakery in the Rochester area without a doubt. Flour City is a must stop every time I am at the Public Market on Saturday morning to get my hands on a solid variety of baked goods from bread (obviously) to croissants and tasty breakfast treats. My girlfriend and I love their foccacia bread which is tender on the inisde with a slight crisp on the exterior with olive oil, rosemary and sea salt making for an addictive hunk of bread. Over the last couple years I have had almost every thing they make and have yet to be disappointed. The apple rolls are delicious and even going with just the basic batard puts a smile on my face when served with a little bit of olive oil and salt. Had a baguette yesterday that made a great accompaniment to some mussels and a ham, gruyere and rapini croissant that hit all the right notes. They also make fresh breakfast sandwiches if you are willing to wait for them. Although I usually don't feel like waiting, they are worth a shot to get a sandwich with a runny yolk and everything prepared right on the spot for you. Softest fluffiest bread ever. I need to make more of an effort to make it into the city Saturday mornings. I wish they had more store hours available to the public but I must get over it. Guess I'll just have to eat it in the many spots that serve their bread! If only I had a list...I call for a list! It also seems that I always miss their macarons. What the HAY!!! I remember eating them at Veritas Wine Bar. The sizes weren't consistent, which is okay by me because the almond chocolate (I think that's what it was) were HUGE. So I was able to make it last forever. I am saddened that Veritas no longer offers them...or do they? Someone tell me! I am not crazy about their baguette, BUT I am crazy over their focaccia (I just scrape the excess sea salt), potato bread and pane levain. Hands down the best almond croissants I've ever had, and I've been all over France. These are flaky and crusty on the outside, but soft on the inside. Even if you come and wait in line, they are always making more as they are so popular, so you can ask for some hot out of the oven, which is even better. A few hot tips: you have to go next door to get coffee, and bring cash because they don't take credit cards. Flour City Bread is not open on Sundays, which I really wish they were. This is the best breakfast sandwich you'll find at the market by far. I always go with the biscuit with egg and cheese. Shredded cheddar and an over hard egg rest on a flaky biscuit that crumbles in your mouth. It's well worth the wait on the Saturday line to get this sandwich, and the additional wait next door for a cup of coffee. Flour City is a great little shop at the market but also makes a lot of the great bread you can get in other restaurants. Stop here on your next market morning! read more

The croissants here are fantastic. For years I have been obsessed with the croissants at Du Pain et des Idées (in Paris), but these are almost as good and much more conveniently located. The pistachio croissant filling has large crystals of sugar in it. I think I like it. Sometimes I think I would prefer a smoother texture to the filling. I would love to see an almond/chocolate croissant. The chocolate croissant is a bit light on the chocolate. I knock off stars because I can only get these once a week (I cannot be bothered to go to the market on a Saturday), and I have to go to the Public Market (not my favorite place). I would be so happy if I could just get these in a coffee shop within walking distance of my house. Lastly, it is annoying that they never answer the phone. Sometimes I call to find out what they have left (because they are the only reason I will go to the Public Market), and they almost NEVER answer. The only time they did, they hung up on me. I will say, they are perfectly pleasant in person. I have been there many times (again, always on a Thursday), and they have never been that busy.
