What an amazing find. I have been meaning to come here for a year, and shouldn't have waited. Why are you? I was expecting something closer to Pastry Perfection. Nothing like that. The walk-in store is fairly small: maybe four or five different kinds of pastries and a couple of breads. Simple and quite nice. I got a Kouign-Amann. About the size of a muffin. Wow. Just perfect. Also a Gruyere-ham croissant. Sooo good. Cinnamon roll wasn't overly sweet, a little dry for me. Coriander-rye bread is the best rye I have ever had. Ok, I am not much of a rye person. What once was the best sourdough bread that I have ever had, is now an uneventful, below average, poor texture and taste lump of baked dough. It is a shame to see the quality of this product diminish, so quickly and thoroughly, but it has. I have brought Gastons sourdough bread as gifts, to other foodies, across this country, but today, wouldn't put my word on the product being produced. What was once a chewy, hole riddled, tasty and sour, sourdough recipe, is now, glorified white bread, except the flour being used for the past year or so, is "YELLOW", and so is the bread, baked to no attempt at a uniform degree of doneness. Sad, truly sad, whether it's poor management causing the use of substandard labor and ingredients, ownership lost it's once impeccable quality control, or ownership changed, and Gastons is now sold out to a lousy commercial bakery, such as "Franz". Not to mention, a loaf now runs almost $11. I'll pay $11 for a quality food product, but not yellow, "white bread" baked with no passion or love. Like most companies today, Gastons has failed at adjusting to today's business challenges and lost managerial control. I hope ownership returns to doling out their own Q.C. as their bakers and current management, surely have zero care about the product that is being sold. A shame for sure, and additionally, I used to downright crave the chocolate almond croissant, until it shrunk 50% in size, while increasing 60% in cost. Only poor management, and the lack of not wanting to sink one's complete time and energy into a company, would lead to ridiculous cost increases, and dramatic product deterioration. Good luck, but much like quitting buying croissants, when the product didn't match the cost, I will need to seek out a different sourdough loaf, from now on. Thanks for the few years of stupendous sourdough that I got to experience, but I'm afraid that is just another lost memory. I feel for any business owner today, as today's workers, are more interested in anything other than the tasks at hand, in front of them, and the survivability of the folks that employ them. read more

Called ahead about hard crust sour dough and they said they had it. Arrived 5 minutes later and they didn't. Ask the woman behind the counter if they had it and she couldn't have been more snarky and rude. A total bitter old woman. I couldn't have gotten out of this place fast enough. You go to a small neighborhood bakery thinking of the quaintness of it, but instead get treated like dirt. No thanks!! read more

Time passes and things change. Not always for the better. Alas, that seem the case for Gaston's products. While once our 'go to' for bread and baked goodies when we discovered them about ten years ago, we have found in the last two years that Gaston's seems to be struggling with consistency in all of their breads and pastries. It is like seeing a friend ailing without ability to help. Also where we once experienced Gaston's as the 'go to' of quality restaurants for bread it now seems many are using another local baker, Acme, which is the one we chose most often too for consistent top quality. I hope Gaston's finds their groove again. We no longer recommend it to others as the first choice. read more

I spent part of my childhood living in Asia and Africa, in countries colonized by the French. As a result, I have a strong affinity for French pastries, and breads. Owner Mathieu Chou originally owned La Café de Paris, located in downtown Boise, which closed years ago. I have fond memories of trying my first pate there, served with cornichons. I was sad to see the café close, but I was elated when Mathiu opened Gaston's. Mathieu is a classically trained French baker who has turned making bread into an artform. Gaston's Bakery is a large commercial kitchen with a small retail area open from 9 AM to 2 PM daily. They sell out fast, so the earlier you get there, the better. My favorite bread in the world is Gaston's Country White Boule ($6.95). Country White is a traditional French bread that is crusty, has a soft white crumb, and is slightly tangy, like a milder version of sourdough. Country White makes fantastic sandwiches, toast, and French toast. It's perfect for eating with a nice hot bowl of soup, stew, or anything else you want to serve it with. I cannot recommend this bread highly enough. It comes sliced and unsliced. I prefer to buy it sliced because the bread is so wide that it can be hard to cut it straight. I always ask for a couple of extra bags and freeze part of it. it freezes as well. I get this item EVERY SINGLE TIME. I also got a Kouign Amann and a Ham & Swiss croissant: Kouign Amann ($4.30) is "a sweet Breton cake made with laminated dough. It is a round multi-layered cake, originally made with bread dough, containing layers of butter and incorporated sugar, similar in fashion to puff pastry albeit with fewer layers." If you haven't tried one yet, I highly recommend you do. You can get them a few places in town, but these are my personal favorite. Ham & Swiss croissant ($4.35) - Gaston's makes my favorite local croissants. If you want one that is savory and filling, I recommend trying the Ham & Swiss croissant. It is outstanding! If your idea of a great ham and Swiss croissant is the La Boulangerie brand sold at Costco, try this instead. It will change your life. Highly Recommended!!! Location: 3651 W. Overland Rd. So disappointed! I used to come here a couple times a week for Kouign-amann. It was so delicious with a sticky apricot glaze on top and oh so buttery. Lately they are burnt on top, no glaze and not as buttery. They taste like a dinner roll now! I decided to start getting the cinnamon roll and lo and behold, they are dry too now! guess it's time to find another bakery. read more

Should be zero stars..... Was in Bosie at the street market, saw wonderful bread. It was 1:25pm and the stand closes at 1:30. They had maybe 40 breads left, I said can I buy a bread? Answer No. you can't sell me one? No we are packing up. I had hundreds of dollars and said how about I buy everything you have? No. So I left and spent $225 at another stand and $30 at another, all happy to sell and take my money!! I don't care how good the products are, if that's how they do business or have there representatives deal with people, I say buy somewhere else!!!!!! I had others say to me that was unbelievable, the purpose is to pack nothing and sell everything!!! Bummer, dude. I'm not sure if it's due to opening another shop at the Food Warehouse or the overall labor shortage, but Gaston's quality has really gone downhill. Lately pastries are overbaked, shaped oddly, some are very small, and filled pastries are missing filling. I've received croissants that are barely recognizable as croissants because they are so strangely shaped. Today, the kouign amann I got was almost black on top. I am so disappointed. I loved Gaston's pastries but lately their consistency just isn't there at all, and at least 50% of the time their pastries aren't worth the money. read more

How sad. I stopped by the bakery on Overland to pick up a little something sweet after lunch. Walked into a nice area with items neatly displayed in a case with loaves of bread on the opposite side. As I was making a selection in the case, I was noticed the butter cake called "kouign." It was burnt. Not just dark brown, literally tinged with black on the top. I was distracted by the thought that someone thought it was acceptable to put out this day's product. Oh well, I am not a professional baker. I picked out the apple danish. I ate in the car and was sadly disappointed. The filling was gluey, lacking of any sweetness or spice and somewhat "past its' prime with its' flat taste. The dough itself was not at all flaky, but more bread like. It was bland and also dry. For the first time in my life, I did not finish eating what I had started. Me and a friend went to Gaston's this morning because I remember in years past this place had great croissants. Walked in and the lady greeted us, and we got our croissants. The lady working the register was nice, and offered to brew some coffee if I wanted any since they were out. However, when we got to the car to try the Nutella croissants, they were hard as a rock. Gaston's bacon cheese sticks are just like crack: highly addictive. They appear to be made with croissant, so they're incredibly flaky and flecked with ample pieces of bacon and filled with cheese. They're really great. And 50 cents less at the bakery than the $3.50 charged at the Saturday markets. And while their version of Kouign-Amann, the Breton cake filled with butter, isn't quite as good as the ones offered by Janjou Pâtisserie on State Street, they're still pretty darn good. And their breads are excellent. Gaston's is a working bakery, so there isn't any space to sit down. Their products are meant for takeaway. It's great to have a bakery like this in Boise. read more

If you like 'em old and cold.....come to Gaston's....viennoiserie d'hier.... The pastry tastes like it was baked the day or night before....old and cold.... A big tell for me are the chocolate croissants (pain au chocolat)...when these are fresh the chocolate bars are often still soft, those from Gaston's have a crunch to them...another odd thing is that they don't open till 9am and the pastry already tastes old....if they were in there baking nice and early 4 or 5am why not open early to sell fresh warm pastry...... What has happened to Gaston's Bakery? When they first opened in Boise, their products were excellent. But the almond croissant and apple bear claw that we bought today at the new Warehouse food hall in BODO were hugely disappointing. The almond croissant had just the thinnest layer of almond filling. It *might* have filled a tablespoon, but I doubt it. Nothing like they used to be. An almond croissant should have a generous filling! The apple bear claw was bland ~ sweet, and nothing more. I'm afraid we won't be going back. Too bad ~ Gaston's kouign amann used to be favorites of mine. We'd go to the downtown Saturday market just to buy them. No more. I'm so disappointed. I wonder if perhaps Gaston sold the business to someone else? It's hard to imagine an actual Frenchman treating his cultural heritage this way. read more

It is no secret that I absolutely love bread. All kinds of bread make my heart sing. But croissants are the true apple of my eye, my main squeeze, a secret paramour, and obsession. I could wax poetically about Gaston's croissants for this whole dang review. Gaston's puts out several types of croissants. The plain one is soft, and layered and so. damn. buttery. The layers will puff up when you bite into it and you could easily eat 2-3 in one sitting. They have swiss and ham (this can easily replace your breakfast, so put down the Captain Crunch and pick up a Gaston's!). If you get one warmed up, the cheese will be melted on the inside, with the perfect slice of ham. And extra bonus is the layer of melted cheese on top of your croissant! It gets just a touch crispy and nutty. Oh yes. They also have this almond chocolate one. It has a light layer of chocolate on the inside and crunchy almonds on top, dusted with powdered sugar. I'm a savory gal, but my spawn and old man adore these. They like to pretend that they're eating health food, since it has almonds. Lol. They also have some bacon cheese twists, made from the croissant dough. Because of the shape, these get extra crispy and flakey and will definitely make a mess in your car if you just can't bring yourself to wait until you get to your destination. Oh look. I did just write a whole review about croissants. :) The other bread is delicious. But all I can think about right now is croissants. read more

I have just moved from out of state and was looking for real pastries ~ fresh pastries. I came here on two separate occasions - both on a Saturday morning around opening time. Both times every pastry I bought was at least day old. Not fresh. Super hard like a rock. And expensive! I will pay any price for a real fresh croissant. This is very annoying. Product - 5 stars. Location and ambiance - 2 stars. Gaston's is a MUST if you love legit French baked goods. The disappointment does not lie within the product itself (Nothing I've had has been less than buttery deliciousness) but the bummer lies in the store space itself. "Innocuous" as one reviewer put it is a light way of saying that very little thought or consideration has been put into this retail space. I guess I'm a bit jaded because I did love Le Cafe de Paris on Capitol so going from that iconic space to this front room with a bread rack is a tough pill to swallow. I guess they sell to a lot of local businesses which is awesome for them! You can get their baked goods in several local coffee shops and the name Gaston's does mean something in this city. However, I so wish that this was a destination location instead of what seems to be more of an afterthought. The staff is usually very nice though. Put this main room in a larger space (there are literally no seats or tables so this is clearly NOT somewhere geared towards you staying for any amount of time) with some thought and feeling behind it and you would have lines out the door. If you want ambiance and a place to sit and enjoy the amazing baked goods then look elsewhere (go to Jan Jou). If you want to simply pick up bags of French deliciousness to serve at your brunch, then this is your destination! read more

I regret ordering the ham & Swiss Croissant. That was a big mistake. It was like purchasing from a Grocery store. Pretty disappointed.

Whenever we travel we like to experience good food in the area (why we love Yelp), especially breakfast, instead of the crummy hotel breakfast or chain food. We look for locally owned. We saw Gaston's Bakery on here and thought it would be worth the try. We got four items (arrived there late and a lot was already sold out) - raspberry Danish, Nutella croissant, Gruyere & tyme croissant and a bacon cheddar twist. All were excellent! You could taste the care, quality and butter in every bite. We bought three loaves of bread; looking forward to those when we get home. We also got to meet Matthew, the owner; a very nice, humble man who takes the time to talk to you and appreciate your patronage. read more

Small bakery with a lot of emphasis on pastries. One of the reviewers here said it's comparable to German bread. Having grown up it Europe this is not anywhere close to what you get in Europe. Having said that, I think for most Americans this bread is above average. I got the multigrain loaf which was a bit dense with not much taste. Ciabatta bread was average (I prefer Acme's). My son liked the croissants. The shop looks nice, I'd expect more selection (again comparing to European bakeries). Service was good. read more

Picked up a loaf of your sourdough bread yesterday at the outdoor Meridian Saturday market. We can't stop eating it. It reminds me of driving to San Francisco and getting sourdough at the Fisherman's Wharf! The crust is awesome. Is it possible for it to be crunchy and chewy at the same time?! I loved cutting into it and seeing all the holes. I threw a couple slices of a nutty Swiss on it. We toasted some in the oven with Jack cheese on it. We ate some with butter and it is just as tasty as is. So happy to see you sell at the Co-op as we are out in Eagle. I'm anxious to try your multigrain next! I'm sold!! I visited this in the Boise Warehouse Food Hall. We got a chocolate croissant and ham. The was very minimal chocolate and ham in the croissant. Served room temp which caused them to be very dry. I will not be returning. read more
