Now, others might like the broth to be fatty, but I personally don't. I love how it's clean and as someone who is picky with meat, I love how the rare steak is always fresh, clean, and so tender. It is my pet peeve when the beef is too chewy or has too much fat. This place is my go to for hangover days or just whenever I need a pick me up. It doesn't make me as thirsty as other places as well, I think they use minimal or no MSG. If I had to give one advice, it would be nice to get some more green onion and cilantro, but not the biggest deal.

We also got what they call egg rolls which were like imperial rolls in regular egg roll wrappers. They were decent. Daughter got combination bun which she liked a lot. 3 stars cuz I had to use the bathroom which was absolutely horrifying. They have 2 bathrooms. I opened the door to one and had to shut it really fast. I just edited out details because you don't want to read that.

Once the noodles loosened up, there wasn't much soup left. The broth itself was darker, but not in the rich, deeply flavorful way. It tasted more like it had been seasoned heavily at the end with too much bouillon, fish sauce, or something similar, making it too salty without much aroma. The brisket was good, and I did enjoy the traditional toppings like tripe and tendon, but I probably wouldn't come back for the pho. The rice plate with lemongrass pork and shrimp was decent. I just wish there had been more scallion oil, and the salad didn't add much to the plate. Fresh tomatoes, cucumbers, and carrots would have gone a long way.

An awakening flavor without overwhelming the meal. What a lovely red-plum color! I loved their bright fresh shrimp spring rolls, (gỏi cuốn tôm) of a generous number of medium-size chilled shrimp, with al-dente vermicelli, crisp fresh bean sprouts, cucumber, and lettuce, competing fresh bright mint and tart pickled shredded daikon and carrots, all wrapped in nearly transparent firm but ready-to-melt rice paper. Besides the nice light crunch of the shrimp, what sets this apart is the savory slightly sweet peanut dipping sauce. I can't get enough! Their fried calamari (Muc Chien) is tender with enough resistance, delicately coated in a simple lightly seasoned salt & pepper thin crust, with a lightly seasoned lemon sauce. You wont find a better lighter calamari. I had their pho chicken (Phở Gà (Bánh Phở Tươi)), tender strips of juicy chicken breast and flat noodles in lightly salty chicken broth, that I garnished from the side-dish of crispy fresh bean sprouts, minty basil, squeezed bright lime, and for me just a touch of fresh jalapeno, cut to bring some heat.
