Gibson's has a super friendly and helpful staff, I have been coming here for about 6 years. They always deals going on and even since I have moved about an hour away I always drive out here to grab meat for our BBQs. This is the one butcher shop I recommend to all my friends and family because of its great deals and authentic feeling environment. Yes it has an odor but I have never received a bad piece of meat. I don't leave a lot of reviews but this place is truly deserving of 5 stars and it seems crazy to me that people rather waste their money for a cookie cutter experience elsewhere. This place has some pretty good sales at times and that is usually when I stop in. I wouldn't go as far as saying they are the best or even great quality. I have purchased grass fed rib eyes here on two occasions. The second time reminded me of why it had been so long since the first time. Toughest piece of meat I have had in my life...TWICE. Such a shameful thing for a ribeye. I do like getting the boneless, skinless chicken breasts (several times I have received pieces with quite a bit of skin [and fat] still attached) when they are on sale. The level of customer service I have received during these purchases has varied. Sometimes I can ask for the breasts to be separated and packaged (bagged and wrapped) in 1-2lb packages each, other times I have just been given a bag of chicken breasts all together. I must say that I do expect more from a local, family owned butcher shop. And I do not care for the weighing of the meat to be done after it is packaged--they do not even do this at a grocery store meat counter--basically charging you for the cost of packaging even though they will argue that it is trivial. They do offer military and senior citizen discounts...which is great...but only a mere 5%. I would like to be more supportive of these types of businesses...but the level of quality and customer service sometimes just isn't there. read more

We have been long time customers of Gibson's and recently moved back to the area. It's been about 2 years since we stopped by and our recent visit left us very disappointed. Yesterday we wanted to check out the meat selection and when we walked in, we were hit in the face by the strongest, foulest stench! I've never smelled anything so bad in my life. My hubby and I browsed the seasonings a bit and picked one up, with a total of 5 minutes in the shop. We barely could stand being in there any longer and could not imagine e buying meat from this ratchet smelling meat shop!The staff acted as if it smelled fine in there...business as usual for them. The smell stuck in our noses, skin, hair and clothing for a good 10 minutes after we left. Hard to shake the smell of days old rotting meat out of your nose! There is something not right about this meat shop and by the way it smelled that day, we will not be returning. Also, it did not feel chilled in there the way a meat shop should be. Felt as if their air con or fridge system was not working right. All the meat and seafood were not displayed as usual like they had long rolls of 'Press n Seal' on top of everything, did not seem fresh as usual. I recommend they shut down shop and disinfect/bleach the place, get their air con and freezers/fridges working, and a new inventory of meat and seafood before reopening. read more

As we passed by this place last weekend, we flipped a u turn and went in to check this place out. I love hitting up local butcher shops. As we stepped inside we were instantly hit with an awful stench. Not trying to be rude, I kept mouth shut as I checked out the meat selection and that was about all I could handle. I made a b-line for the door and the fresh air outside. I've been to a lot of butcher shops and there are some funky smelling ones you just know it would be a bad idea to purchase from. Last thing I want to do is get my family or myself sick. This place had a bunch of customers when I stopped by. Do these people smell the stench? Do the owners smell the stench? The "prime rib" we bought for Christmas was like chewing on a rubber tire. If there was a grade below USDA choice, this was certainly it.

Sadly, I must agree with some of the other reviewers of this business. This is a place that I have decided to avoid. While they do have some exotic meats that I cannot find elsewhere (alligator, rabbit etc.), I simply can't get past the smell upon entering their shop. The odor of rancid meat takes your breath away. If they ever take care of the overwhelming bad meat smell, I might return. BTW--that smell permeated through my chicken wings. read more

Short story - great meat market. Wonderful selection of meats. If you don't see it ask. I was there recently after watching some videos on cooking short ribs. I didn't see any full racks of short ribs so I asked. And before I could blink he went into the back and brought me out this beautiful rack of them. I love rib eye steaks. I travel the country looking for the best one. ( which I found in Scottsdale ). Anyhow I can never refuse buying a bone in ribeye steak. When they are on sale, I buy several. Really cook up nice. Use to buy the beef asada all the time, but recently tried the chicken. I think I like it better. You have to try it out. There are lots of different people working there. They are all super friendly and want to provide excellent service. I've seen some posts commenting on that and wondered were they really are at cause I just don't see it. Oh yes....Costco bacon makes me mad. It is so thin and so fatty, cooks down to nothing. Their honey bacon is the bomb here! Yea - the place smells weird. They really need to check in to that because it is off putting. Makes you question the quality of the meat... however, my husband had already purchased a prime rib and ham so I was willing to give it a shot. The ham was amazingly delicious. It had so much flavor and we will definitely always get our ham here if the flavor/quality remain. The prime rib was also really good. The meat was almost fork tender. Then we look in the seafood display and everything is frozen and packaged, nothing fresh other than some sad looking shrimp. Since October of this year we've purchased beef and turkey from Gibsons's Custom Meats with GREAT RESULTS !! They have a wide variety of Choice Beef at very reasonable prices and cut to any size that you may need. For Thanksgiving we ordered a large non-injected young turkey and got exactly what we needed. The people giving this place 5 stars are either DELUSIONAL, or haven't been to another meat market before. I really hate giving local places a low rating, with that being said, here we go. The first thing you will notice inside Gibson's is the smell, which is a faint hint of bleach accompanied by the pungent aroma of meat going bad. The smell just about turned my wife into a vegan, eeek! The store appeared clean and the cashier was friendly. I would have the counter staff deploy some display case tactics and make it look appealing. Did I do it you ask, of course I did! I bought 2 steaks for us. Now I can honestly give this place a true rating. The steaks are discolored on one side and do not smell fresh. Unfortunately I'm going to discard them. I hate wasting food. The selection of meat grades looks mostly like Select, and some Choice. Hopefully I just went in on an off day. If you're looking to feed an army on a budget, this is the spot to do it. The cuts and prices are cheap! Will not be returning as I was looking for something of quality to BBQ on my day off. read more

I purchased a locker pack and 10 pounds of boneless, skinless chicken thighs. Instead of wrapping it in freezer paper they stuck in all in a pink bag. 6 weeks later I pulled it out it was freezer burned and not edible. I immediately called and spoke to the manager. He actually told me that their bags only last 3 weeks!!! When I asked why they chose to do that and why I was not told that their "freezer" bags only last 3 weeks, he had no answer. He told me I could bring them back but he would not replace them. I would not shop there again if they were giving their meat away. read more

My husband and I recently moved to this area and were really disappointed with the meat selection at the local grocery stores. I spoke to my dad about that and he told me to check out Gibson's and said it was the only place in town he goes to for meat. I've been in a couple times now and love it!! They have such a wonderful selection of all sorts of meats, even specialties like veal, buffalo and elk. I read some reviews about this place and some people mentioned a weird chemical smell? I've never smelt anything weird, personally. The customer service is great and if you get there before 5, they still have the butcher there to make custom cuts. They have weekly specials and yesterday they had new York's for $5 something a pound. I cooked then up last night and the quality is a million times better than winco, safeway, etc. I'll probably be here every other day, just like my dad. read more

For several years I've really wanted to like Gibson's Meats. They are a nice shop with great staff, but for all that, they seem to serve beef cut from 40 year old, stringy cattle the coyotes wouldn't go near. I don't know if they get a deal on dairy cows that have gone long in the tooth, or just steers that got passed by as not being "Grade A Select"...maybe "Grade C Runner-Ups", but several times I've been really disappointed with how tough their meat is. I just finished some ribs that I had to de-bone with a sharp knife rather then the ol' carnivore chew. This has happened several times, with different cuts, and each time I tell myself the lower prices aren't worth the poor quality. I keep going back, because I want to support a local butcher shop, but today, I was worried I was going to lose teeth trying to eat this carrion. I've heared they import their beef from Mexico, and that it isn't USDA approved. I can't verify that, and I can't imagine how that would be profitable, but it certainly could be with the consistent low grade quality they pass along. It's a shame, as they are a nice shop. I won't be going back. :( read more

I think the butcher block is good and so I bought some of their locker beef packages and found that the beef was below standard. We bought a variety pack and found that the pork was good however the beef was below standard tasteless and gristly . I don't recommend buying the beef as a locker package just buy it from the case where you can see it. read more
