    Rib / Brisket class seating

I have been a patron of GrillBillies Barbecue for a number of years. I bought a gas grill from them in 2016 when they were located on Durant Road. They have a smaller retail location in Wake Forest on Capital Boulevard near Burlington Mills Road. Recently I have taken up smoking meats and venturing back into charcoal grilling at home. I signed up and took their rib and brisket classes yesterday at their Wendell location. They have moved from their former retail location on Durant Road. The class yesterday was really informative and well presented. They had two award winning pit masters instructing the class on the proper preparation and cooking a rack of ribs and a brisket. And the best part, you get to sample the ribs and the brisket they had on the smoker. I learned quite a few tips and tricks from George, Ed and Joe (the owner) who passed on their extensive BBQ knowledge and experience to everyone in the class. They were all personable and friendly and they answered every question that was asked. I had a great time and I plan on signing up for the pizza class with my son at a later date. And now for the retail review. They have a large selection of grills, whether they be pellet, gas, charcoal or wood. They also sell pizza ovens (for the backyard). They offer in store assembly and delivery for a modest charge. They have an extensive inventory of tools, knives and other the equipment you may need for your BBQ hobby. They also have a large selection of seasonings, rubs and sauces. Whatever your need in terms of BBQ is, this is the place to go to!

This store/company is amazing. I usually go to the location on Capital Boulevard in Wake Forest but decided to head over to the Wendell location and I have no regerts. For Thanksgiving I am going to attempt to smoke a turkey breast and wanted some pointers. This is where Grillbillies is unlike any other store I have been to. Most of the employees are on competition teams and are willing and happy to share their knowledge with customers. I learned about injecting the bird and was shown some of the available products that they had to offer. Also we discussed cook times and temps and everything that one would want to or need to know to prepare a tasty meal. I am a loyal customer and will continue to be one for the foreseeable future.

The finished meal to eat before leaving.

In NC barbeque is not the only the way you cook your food, it is a lifestyle. I was gifted a brisket class at Grillbillies. This class was taught by champion pit masters. How to select your meat, trim it, marinade, season (in three layers), grill, let it rest and slicing was all included. During class we indulged in adult beverages then had dinner eating two different briskets. They offer everything one requires to make a successful BBQ meal. This includes a wide range of grills, tools, sauces, and different classes. Exceptional grillmasters make this an exceptional outing.

They have wine and beer available and you can shop around and enjoy the beautiful retail space while you wait for your class to start. The kitchen space was intimate yet clean and inviting. I love that their cooking class sizes are small and you work together in small teams, as it's fun to build connections with new people. They have everything ready to go and organized and you even get the recipes sent to you. There were multiple members of the staff on site during my class and the service from then was phenomenal from the instruction, to ensuring i always had wine and water, to cleaning up throughout our cooking. We dined in the beautiful sunroom space and they provided lattes and coffee with dessert. It's worth the price for this lovely experience.

This year things have really changed there for the worse...there are WAY too many kids in the space and almost the entire staff turned over. I've been debating about no longer going there after this summer is over, and this morning was the last straw. I dropped my daughter off and there were 2-3 staff people in the front kitchen and NO ONE acknowledged us or greeted my daughter. This is really sad and insulting. I realize the staff were busy but nothing should stand in the way of greeting a customer and making them feel welcomed if you want them to return. If they don't realize someone is coming in because there is too much chaos, maybe they need to tie bells on the door.

The studio is very colorful with lots of decor and several tables and chairs in the front of the business. Aprons are also provided. I heard about the adult chef series from the owner Debbie at the north hills block party. She was really nice and excited about this event. At the chef series event she told us that they had just started the adult cooking classes about 6 months ago and that they are so much fun. For today's event they had a special food and wine pairing with Total Wine. The Wine Steward, Nathaniel, recommended certain wines that would go well with the items that we prepared this evening. He was very knowledgeable and funny. He also gave us coupons for future purchases at Total Wine. This was my first times at a cooking studio so I thought that each person or group that came together would prepare all of the recipes but each table ended up making one of the 3 recipes. This ended up working out well because the two hours would not have been long enough for everyone to do all of the recipes. Our table ended up making the southern cornbread but since it was a quick recipe we also assisted with the Butternut Squash/Apple & Pear Soup. The last table made the Spicy White Bean Chicken Chili. The food was really good and filling. I thought that the chili was going to be really spicy because it had green chili peppers but it had the perfect amount of heat. I didn't know what to expect from the soup but it had great flavor. The cornbread was not bad but our table thought that it was missing something. The butter that was provided helped. The wine tasting occurred while our food was cooking. It started off well but then when a few of us left to finish the soup we never really got back on track with it. I enjoyed hearing Debbie tell us about the past and future adult chef series classes and the children's classes. We also enjoyed being able to meet and interact with so many cool people at our table. Debbie and her staff were very helpful providing us with utensils, drinks, directions, etc. We had a great time!

Prior to coming here, I had never heard of C'est si Bon at all. I didn't know there were places that offered private facilities to have cooking classes, or maybe I just never sought it out. At any event, this was all arranged by management. My colleagues and I came here to cook, and walked away gaining new skills in the kitchen. We were divided up in teams, to make different dishes. Each team were given an ingredient list and instructions, which were helpful. We were so grateful that this event didn't require making random dishes from a surprise ingredient, like a Gordon Ramsey show. Whew. Honestly we'd be doomed if that were the case. The instructors walked us through each teams worries. We had about 5 teams, each in charge of: rice, meat dish, pizza, dessert, salad and a side. We all learned different techniques and managed to finish on time. It was nice to feel accomplished and enjoy our creations after the hour or so of insecurity. Whats funny is that my colleagues act so so tough in corporate meetings, but for the ones who don't cook, it was fascinating to see them in a vulnerable cooking environment. For the ones who do cook, you got to see them be even more pompous than in the board room, ha! Overall, it was an excellent experience. The staff were absolutely wonderful, the venue was beautiful, it was a hidden tucked away farmhouse-ish place in Chapel Hill. It was probably pricey, our VP paid for it, but nevertheless worth every penny. Highly recommend to anyone wanting to go outside of their comfort zone, learn new skills and partake in some delicious food!

Finally this past summer he was able to attend one of the camps. After all that time and build up all I can say is... Meh. It's not really a cooking school for kids, but if you have 8 or 9 yos that need something to do and you want them to stir a bowl or pretend they are cooking for twice the price of other summer camps, then this will suffice. They don't provide any of the recipes to the kids to take home with them, individual kids only learn how to "cook" 1 of the 4 items they prepare each day. No actual cooking skills are taught. Head chef proved why chefs have a reputation for being unpleasant to deal with. I would not recommend. Since we were again not able to enroll our child last summer we hired a local chef to give a 4-day cooking class to our son at home, ended up being cheaper and he learned a whole lot more. Recipes, knife skills, prep work, flavor pairings... All the things that CSB are not.

We attended the Summer Vegetarian class. Kate gave a brief intro to what each station entailed, and you could pick one that you wanted to work on. Kate and her assistant would walk around and help as needed, and call everyone over at certain parts to show how things were being prepared or cooked. Most of the food she was as using she had bought at the farmers market. We had some appetizers while finishing up the cooking, and at the end we all sat together in the dining room for a full meal. All of the food was delicious! Kate sends the recipes out via email after the class. I will definitely be trying some of them out at home, and looking to take a class in the future. Don't expect to master any of the recipes during this class, but you will gain some tips and come away with a full belly and some new recipes. Everyone wore a mask, and outdoor seating was available for anyone not comfortable dining indoors just. We got to rotate through various stations and Katie did some of the more intensive cooking, like the deep frying. She was very helpful with tips and checking to see how everyone was doing. After everything was cooked, we sat down to eat. Boy, there was a lot, and everything was delicious! We made gnocchi, pierogies, momos, potstickers, samosas, and apple dumplings. Water was provided and you can BYOB if you like. It did take a little bit longer than scheduled but not too much so. She followed up a few days later by emailing the recipes to us. A great experience for foodies!
