In the name of all things delicious... Gusta Pizza is a literally the best pizza I have ever had. And trust me... I've had a lot of pizza in my day. During my month long study abroad program, I had done what some may call silly, but what it was what I call "euros well spent"... Gusta Pizza was the only pizza the I had in Florence. Maybe other places did deserve a shot, but after having Gusta my first night and being blown away by it, I thought, "why fix what isn't broken?". During that month I had Gusta at least five-six times... I admittedly lost count... The crust is the perfect combination of light and fluffy, and slight ashy and wood fired. As for the sauce, don't be surprised if you bite into a tomato seed... the sauce is just that fresh. And let's not forget the flavor of the sauce. Never have I tasted a sauce so wonderfully sweet. As for the seating... don't let it stress you out. Seating is very limited inside Gusta and it seems as though it barely accommodates even a fourth of the customers at any given time. However, the Arno and its many bridges are nearby, and there is also a piazza literally right behind Gusta. The nice little walk will give your pizza some time to cool off (because those babies are hot when they come out) and dining outside will give you the chance to enjoy a favorite European past time... people watching. Plus, how awesome does a Gusta Picnic sound? So no matter how long you may find yourself in Florence, make time for Gusta! read more

There are about 5 large communal type tables that you can sit at if you don't want to head to the Piazza to enjoy your pizza. I noticed most people taking their Pizza to go with some wine and heading a block away to find a spot on the busy Piazza to cook and take it all in. There are about six or eight choices per day of pizza on the menu... all of them use the delicious, moist yet crunchy crust that makes this pizza stand out. My friends and I heard great things about Gustapizza and decided to try it out last week. The restaurant opened at 7 p.m. and we waited in a short line for about 15 minutes waiting for it to open. Once they opened, the staff was very friendly and welcoming. We were sat quick, given menus, and they asked for our drink orders. The staff was open to answering questions about the menu and gave recommendations as well. The restaurant was small and cozy and had an open floor plan with a brick oven that was visible from the tables, giving the restaurant a warm and friendly feel. The ingredients were fresh and the pizza as a whole was delicious. We all got different types of pizza and everyone loved their choice. I miss this place so much! When I was a student in Italy, I would come here at least once a week. My school was located in Santo Spirito, so it was really convenient for me to just walk around the corner to get some delicious pizza! I would always order the Calabrese with the spicy salami. The bread is chewy, the mozzarella is tasty and stringy, and the meat is to die for. I would often eat the whole pizza in one sitting and not feel completely horrible afterwards because it was all worth it. You can either dine in (limited seating) or take your pizza to-go. Eat it on the steps of the Santo Spirito Church or walk a few blocks to eat next to Palazzo Pitti. The pizza is cheap, 5-7€. I really can't wait until I return to Florence! There was a line at 7:00pm that moved fairly quickly, perhaps a 15-20 minute wait before we were seated. The waitstaff was kind and considerate and provided very quick service. The pies came very quickly after ordering and exceeded our expectations. We had the Tartufo, Marinara, 4 Formaggi and Margherita and they were all spectacular. What set this pizzeria apart from others was not just the freshest of ingredients, which is a standard in Italy, but the crust. There was a slight crispiness to the very outer edge of the crust but a pillow of warm, light dough. The center of the pie, especially with a pizza that has mozzarella cheese will be a little limp as the extraction of water from the cheese causes the dough to lose its stability, but it does not take away from the overall experience of near perfection.
