Some restaurants announce themselves with neon lights and a line out the door. Others seem almost determined to keep you away. Hai Noon falls firmly into the second category. I booked a solo seat at the bar just two hours before dinner, which, in hindsight, should have been my first clue. The night before, my plans at Chilte had evaporated after I arrived to discover the owner was hosting a baby shower and the ceilings were being painted instead of dinner being served. I wasn't eager to go 0-for-2 on my Scottsdale food pilgrimage. Pulling into what looked more like an aging roadside motor lodge than the home of a James Beard-recognized restaurant, I wondered if Google Maps had developed a sense of humor. I parked around back, followed the sign to the dining room, and found... a locked door. Naturally. For a brief moment I thought the Arizona restaurant gods were playing another practical joke. Then I spotted another entrance simply marked "Bar." Inside, Hai Noon revealed itself as a tiny oasis. Phoenix met Tokyo somewhere in a dimly lit room with clean lines, warm wood, and mellow music humming through the speakers. Three other guests occupied the restaurant--a couple finishing dinner and what appeared to be a delightfully intimate two-person baby shower. I took my place at the bar. The server welcomed me warmly. When I admitted I was in town for work and wanted to experience the restaurant rather than order safely, he smiled and took control. A few menu staples were unavailable but he confidently selected four dishes. The grapefruit avocado hamachi spoons arrived first and immediately justified the trip. Rich, buttery fish balanced against bright citrus acidity with avocado quietly stitching everything together. It's the kind of bite that reminds you why chefs obsess over simplicity done well. The white fish carpaccio followed with a little theater. Hot sesame oil was poured tableside, barely kissing the fish into submission. Fun presentation. Beautiful execution. Though once the spectacle faded, the dish itself never quite reached the same emotional high as the hamachi. The garlic butter mushrooms arrived... in a plastic bag. It shouldn't have worked. It absolutely did. Deeply savory, unapologetically rich, and refreshingly unconcerned with appearances. The house chicken, unfortunately, couldn't keep pace. Twice fried and topped with egg salad alongside a chili vinegar, it sounded far more exciting than it tasted. Sometimes clever combinations simply refuse to become memorable food. Cocktails, however, were another story. My first choice--the Kosho--was unavailable, so I settled on the Japanese Moss, a gin cocktail topped with yuzu cold foam. The foam leaned aggressively tart but never overwhelmed the drink. Later, after finally coaxing the bartender away from his phone, he suggested an off-menu serrano-infused rum cocktail with miso. Complex, vegetal, spicy, balanced. Exactly the sort of drink you hope to discover when you stop ordering from menus. By 7 p.m., I was the only customer left. Summer in Phoenix is merciless. One hundred thirteen degrees has a way of convincing even adventurous diners to stay home. I watched two reservations cancel while chatting with the bartender and server, who explained that between May and August, three tables can qualify as a good night. Location doesn't help either. Hidden behind an unassuming hotel, Hai Noon isn't exactly benefiting from walk-in traffic. The chef emerged from the kitchen several times during service. Each time he glanced at the empty reservation book, quietly acknowledged another cancellation with a shake of his head, and disappeared back into the kitchen without speaking to anyone. There was something heartbreaking about it. Here was someone capable of creating award-winning food, still chasing perfection while circumstances far beyond the plate slowly worked against him. Hai Noon isn't flawless. Service occasionally drifted. One dish missed the mark. The room felt almost too empty. But I'd rather spend an evening in an imperfect restaurant full of ambition than a polished dining room serving food without a soul. I just hope Scottsdale's relentless summer doesn't prove too Hai for many more Noons. read more

Intimate space for a nice dinner! I like the cozy/homey vibes mixed with the upscale food choices. Would recommend: the pork belly mushroom rice changed our lives. It was SO DELICIOUS. Wow. I could eat this every day and never get sick of it. Melts in your mouth. A must order. Wouldn't recommend: the salmon sashimi. The salmon was room temperature/a little warm which threw me off and made it tough to enjoy. Maybe a cold plate for serving would help combat this! Another absolutely amazing food experience from Chef Nobuo Fukuda who already gifted us with great dishes made with Sonoran produce at SeeSaw back in the 90's, and Teeter House downtown. The retro-vibed atmosphere of the Papago Motor Inn complements the laid back pace of your meal. This is not a sushi spot or an Izakaya. Hai Noon is a chef presenting southwestern ingredients in a most respectful, flavorful and innovative manner. I was lucky enough to return 3 times in the past month. To my surprise, ingredients and sauces did not repeat themselves, and dishes were completely distinct in flavor and presentation. This is definitely my favorite food experience of the past few years...anywhere. All of our visits were handled by our waiter/guide "Arizona", who described dishes, and when asked what his favorites were (and unlike many other places that say everything is good when it isn't), he informed us we would love everything, but he could help us with the order we ate them, and suggest a sampling if we were just picking out a half dozen dishes. He was right. Everything was captivating, surprising and...absolutely delicious. Do not miss the specials...there will be 4 or 5 on a small piece of paper, and a couple of "special" drinks. These are seasonal items the chef wants to add because of the timing and presentation. They exemplify the category...they are indeed, SPECIAL. The second visit established a pattern. Have Arizona order, until you are full. He checked in with us along the way, and made a few modifications based on our hunger level, and allowing for certain dishes to be repeated. A few things really stood out because I hadn't tasted anything quite like those dishes. Other dishes ie: variations on classic aguachile, were just better than anything I've had elsewhere. Salmon and Whitefish carpaccios were both stellar, with really good hot sesame oil adding to the dish's garlic, ginger and Yuzu base. And, when you are done with the last bite of fish, they bring out rich, grilled slices of bread to mop up that sauce. We last started with Sashimi featuring Sea Bream, that had fatty belly, and less fatty but oh-so-flavorful filet slices, and an accompanying broth. Big Eye Tuna was served on a flavorful beet puree with sweet dark cherry wine notes. Since we didn't read the menu's notes before, a quick check showed that Nobuo does create a Pinot Noir reduction that invites wiping the plate clean. The first time, the Tuna and all traces of the puree were finished by the time Arizona walked out to describe the dish for us. That's why I re-ordered it each time we visited. Soup spoons present a sashimi/ceviche/aguachile experience that is delicate, nuanced, complex and downright spectacular in your mouth. Whether it showcased an oyster, hamachi or kampachi, each spoon was an amazing taste experience with complementing flavors and textures that were completely unexpected. Softshell Crab with cold noodles was the most succulent Softshell crab I have ever enjoyed, warm, beautifully moist and flavor popping within its crispy exterior, set off by the chilled vinegar and broth accented noodles. Brussel Sprouts with a honey mustard and wasabi glaze disappeared immediately. As it turns out, wasabi is the missing ingredient in many Brussel Sprout dishes! The Yams with goat cheese and Fresno chiles reminded me of the amazing fire-grilled gourds and yam dishes I have had at Bacanora...just unique and different. Two Wash chicken was beautifully caramelized finger food that I could also have made a meal out of. We thought it was amazing, and then the chef came out and told us how inspired he was when he first met the chicken farmers and cooked with their chicken, and if possible, the chicken became even more memorable for the story and connection. Curry marinated lamb was rich, and savory, and was another dish I could make a meal out of. The Pork Belly and Mushroom rice was likewise delicious, and full or deep umami richness and delectable meat and mushroom morsels. The Mushrooms en papillote (mushrooms served in paper), had absorbed what tasted like a delicious Veal Stock, were tastily caramelized, and then steamed in the paper container. They were so good we had to have another...and we weren't skimping on food. Beverages (Alcoholic and non) get the same attention. The cocktail list sounds absolutely crazy, with improbable ingredients. But all of the ones we sampled work, and they are wonderful (sharing amongst our table, we have now tried over half of the cocktails...and so far, they are damn great drinks). The beer selection is small and ideal for the food, as are the well-chosen cold sakes that span all budgets. It is better with a small group of people so you can really explore the breadth of fabulous offerings, but I think it's also an amazing spot to share food on a date! read more

Have been wanting to try this place for such a long time! We stopped in on a whim when we were in the area and really enjoyed our experience. I was a little worried because I was wearing jeans but it's definitely a casual kind of place located inside a motor lodge. The food (really mostly tapas style bites) is creative and unique. Many of the dishes were Japanese with a hint of Latin/Mexican fusion. And it is fun to share dishes at the table! Got to try a lot of things! The Moss cocktail was absolutely delicious. The drink itself is earthy but the foam was citrusy, bright, and divine. Do not hesitate to order it. Amazing! We ordered about six dishes and it was just enough for two of us. We started with the sockeye salmon sashimi (because they were out of tuna). It was very good and fresh. The cheese on top was weird but it worked. Really nice overall but I wish I had some more sauce. Next came the grapefruit/ avocado citrus bite. It was really best thing we had that evening. So fresh and divine! I wanted more spoons! The finish was so light and smooth. The lamb with mango salad was a very small plate but was absolutely delicious! I also wanted more of this! The presentation made the plate look bare but it was still great. The shishito peppers were excellent (I always love them) but overall the dish was a little dry because they were covered in some kind of dry flakes. Looked interesting but I don't know what the flakes or pomegranates did for the dish. I would pass on the Japanese yams. They were topped with chilis and some kind Mexican style cheese. Pretty dry and not great. Pork belly and mushroom rice (one of the specials) was a solid dish and more substantive. It was not my favorite because I don't like fatty meats but my husband liked it! Our server was great and very helpful in dish selection! The chef served each item with love and care!! This part alone was worth the five stars. Might try the dining experience next time. Though it is a dining experience already if you order several dishes! My only comment to the restaurant is that I felt that most of the dishes were a bit on the dry side. Hai Noon has been on the radar for years. Located in the Papago Motor Inn, the restaurant has a real retro feel with Flintstone style rock motif throughout. A 2007 SW James Beard winner, Chef Nobuo Fukuda has created a unique dining experience for the adventorous foodie. The meal was very interactive with wait staff explaining and recommending each dish and how to enjoy it. The staff was engaging and not pushy or overbearing. Our neighbors went with us, which allowed us to try more small dishes. Now to the highlights of an evening of tasty adventure at Hai Noon. We started with cauliflower in a sesame sauce and green papaya salad with a curry dressing and panko fries tofu. The cauliflower was fair while the green papaya salad was delicious. The panko fried soft shell crab and rice noodles in nuac mam sauce was one of our favorites. The spoon selection of hamachi with grapefruit and avacado were a great combination and flavorful. The other spoon selection was hamachi with myoga and shiso on a taro chip, another great combo. Our waiter strongly suggested we try the big eye tuna with toasted beet puree and a wine reduction. The other selection was the salmon with lemon lime zest, mint and basil. Homerun! We were very pleased with our initial choices but the specials blew us away. The Japanese yams with salsa verde, goat cheese and pickled Fresno were memorable and just the right amount. The white fish carpaccio with garlic, ginger, yuzu and served table side with hot sesame oil was one of our favorites. We needed to order extra bread to soak up the incredible sauce. Our final and again, a favorite was the braised pork belly and mushroom rice. A memorable selection! I can't sing enough praise for this inventive, flavorful and incredible dining experience. The menu, we were told, changes on what is fresh. A standing ovation to chef Fukuda and his skills. This is our new favorite restaurant in Phoenix. A nice surprise! I don't think I was quite expecting this place to be what it actually is, a hidden gem! I had saved this place in my bookmarks to go when I got a chance to. Today was the day, and tapas style food sounded good so we came here tonight. The service was great! Loved the ambiance. I really loved that it's hidden inside a motel. At first we were confused but I just love the hidden gem aspect of it. Beautiful dimly lit atmosphere. The food was excellent. We got a couple different things. You know what feels icky? Discrimination. A group of my diverse gal pals and I walked into this bar and immediately you could feel a cold breeze coming from the staff. They asked what we needed and we just said we were coming in for drinks with our group of 12. They said we don't have a table for that and we shared we could break up into smaller areas. Their response, at the bar, was that they couldnt just have us standing around. So again we repeated we would be happy to break up into tables and bar seats. They then said there was no way they could accommodate us. The guy said they had too many reservations and they would need to have us out in 30 minutes. I said that's perfect we hope to just have 1 drink. The response then changed to our kitchen can't accommodate you. Immediately I was confused bc why do you need the kitchen for drinks!??? They then turned and walked away so we then felt we had to leave . Note: the bar was half full, the tables in the main bar were about 40% full, and the main room had 1 table full. See photo. This may have been the most unique restaurant experience I've ever had. The food was incredibly delicious. It was made with high quality ingredients that produced flavors I've never had anywhere else. There is a very well thought out selection of outstanding drinks. The restaurant's atmosphere was also very cool. It looked like a set from a Quentin Tarantino movie. The chef, a very nice guy and also a legend in the Arizona culinary world, took the time to come by our table to explain the dishes. Don't be fooled by the unassuming location. I came here for my birthday and was blown away by the food. We are from Toronto and this was the one meal in Scottsdale that really stood out and wow'd us. I would easily come back if I am in Scottsdale again. A few of highlights: - Mushroom pasta (my boyfriend doesn't like mushrooms, but was our favourite dish of the night) - Carpaccio (tastes so good, smelled amazing, the bread at the end was a great touch) - Soft shell crab rice noodles (the texture of the noodles were so silky) I wasn't a huge fan of the chicken nanban. Apparently this is the same owner as Nobu teeter House which was closed years ago. I'm glad they are still alive and thriving here at Hai Noon. This is inside the Papago Motor Hotel. Parking is quite small. The feel of this restaurant is also small but quaint. Service is great as they filled our waters as the right moments. The ambience is a dimmed note. We ordered a quite a bit of foods such as: Special menu: - Japanese Yams $10- warm, crispy on the outside, soft on the inside, salsa verde, goat cheese and cool pickled fresco - this combination is delicious. - carpaccio $24 - white fish with garlic and ginger and yuzu kosho and sizzling sesame oil for a slightly seared taste. - pork belly mushroom and rice $32 - some of the pork belly was nice and soft. Some was not as soft. - chicken nanban $21 - two wash ranch chicken with egg salad and pickled peppers slivered slices. This is a solid dish. Menu: - Pork belly bun $10- some of this pork belly was a bit over overcooked. Comes with some cucumbers in a pillow white bread. A staple. - soft shell crab and rice noodle- $18 panko breaded soft shell crab with rice noodle that had a crispy texture to it and nuoc mam sauce. Tasty. - tuna $20 - this is pan seared with roasted beets puree Pinot noir reduction sauce. I love this combo. -oyster $18 - with tomato water reduction, mascarpone, wasabi oil - grapefruit avocado $18- hamachi with grapefruit and avocado. For some reason this had a yuzu taste to it but it was so good. - ceviche $18 - kampachi with shiso, mayoga and taro chip which gave it a good crunchy texture. I loved this one too! They greeted us with a complimentary glass of champagne which was a nice touch: The food is small plates so be prepared to order several items. Everything g we ordered we really enjoyed. We went with the Brussels, soft shell crab with rice noodles, ceviche, mushrooms, tuna and lamb. To me the mushrooms are a must order! The ceviche comes on 2 spoons and you eat it like a shooter. While outstanding I was craving just a little more. They ask you to order everything at once and they space out the meal nicely. Probably my favorite meal on our 18 day trip to Arizona. It's pricey, but totally worth it. And get a reservation, as the restaurant is quite small. The format of the meal is small plates, which you share. The staff is great about helping you order the right amount of food. They do have an omakase menu, but you need to reserve in advance. Also, I would suggest an earlier reservation as they do have limited quantities. The trade off is that the food (especially the fish) is extremely fresh. The potatoes! They aren't on the menu, so you've gotta ask about them. I'm not sure why, but this subtle dish really surprised me and came out on top even though everything I had was great! The sweet potatoes and yams were lightly fried and had just enough of that delightful crunch to really beef up the texture in this dish. There was a teeeeny bit of heat from the chiles as well as some tartness (lime?) and then creaminess from the cheese. YUM! I'd recommend adding to the menu full time, honestly. The associates at Hai Noon were all friendly, the place had a cool vibe, and the service was excellent! They graciously made one of their cocktails into a mocktail for me, the Calpico, and it was insanely refreshing and bright with some enjoyable herby notes. The other food items I ordered were the shishito peppers and the soft shelled crab w/ rice noodles. The peppers were themselves slightly more bitter than shishitos I've had before, but this was okay because I had the sweetness of the potatoes to bounce off of it. The crab was lightly battered and fried with great crunch and rice noodles underneath were cold, which I wasn't expecting, but I liked it! I appreciated the addition of the chopped peanuts to the dish, too. Really yummy and enjoyable dinner! One if the most unique dining experiences I've had in Phoenix. It's in a motel and kind of hidden from the street, so it's hard to find. But my wife and I loved Nobuo at Teeter House back when it was still open before covid. The same chef and owner is at Hai Noon, and the food definitely reflects it. I rarely leave bad reviews, but I left this restaurant so upset I have to warn others. The staff was wonderful kind, knowledgeable, and not at fault. My issue is with the food and the owners. I have a gluten allergy, and the menu listed a mushroom pasta as gluten-free. What I was served, however, was just a handful of mushrooms in salty soy sauce ,no pasta,charged at $20. Not only was it outrageously overpriced, but it was also so salty I physically couldn't eat it and ended up with a massive stomachache. We went early to this establishment and it was a nice quiet atmosphere initially. The decor was pleasant and the staff were very attentive and friendly. They served a Japanese style Tapas. The dishes were small, prices and didn't reflect the expectations I had considering everything else. This place was such a treat! I was always a big fan of Teeterhouse, as my family went there several times for past birthdays. Coming to Hai Noon and seeing some of their menu items brought me back to such cherished memories. Every item we ordered was so beautifully presented, as well as elaborated prior to us taking our first bites (we loved this added touch). The Chef Nobuo himself even came out to deliver a couple of our dishes! My personal recommendations - The hamachi and grapefruit is a must! Same goes for the pork belly buns, they were so tender and full of flavor. My boyfriend was also a huge fan of the sunomono. This place is perfect for a little date night. We were lucky to have been able to walk in on a Friday night without a reservation. I do have to say, the portions are on the smaller side. If you're looking to get full, you could probably go through the entire menu. However if you just want something to bite on while sipping your drink, these dishes are great to share with a partner.
