When in Key West one MUST make it here! This was one of the top 5 highlights of the trip. Our first day here we arrived within 15 mins of closing time so the manager let us in on the tail end the tasting and gave us tokens for the tour & tasting for the next day. ( a $10 value). The next day we arrived on time and went on the tour of the facility, which included a brief history of Ernest Hemingway who's estate allowed the use of his name. We went through the rum making process and later to the bottling process which is done by hand. Finally it was time for the tasting ... we tasted a light and a dark. The dark was more traditional the light called the Blonde was really smooth. This was an awesome experience from the general manager showing us much love to the very informative tour guide right down to the tasting itself. Very cool experience. read more

I just love it! You can't leave the Key West without coming and have their delicious drink they make. The best!

Stopped in on a recent visit for a tour and tasting and was kinda turned off by how small the space is and how long the tour was. Once you learn how one place makes rum then you've learned it all so unless your factory is amazing no reason your tour should be that long! We opted to skip the tour and just do the tasting and I love love love that they have that option. I enjoyed their rum and the staff are well informed and even though i skipped the tour I still learned about the origins of the rum. read more

My husband found this distillery while we were walking around. The indoor decor was very well made with wooden accents throughout. The bar is super impressive! It is the length of the building's wall, probably 25'-30'! Jeff offered us the tastings of each rum and we enjoyed both of the rums. We brought home the blonde rum. The blonde has a warming flavor with hints of cinnamon and clove (to my palate). It will be perfect for mojitos or a basic rum & ginger ale. The staff is very nice and accommodating. I had the dark rum at home which I liked. But tried their blonde at their tasting and it is even better in my opinion. I also bought a bottle of limited reserve to bring home to taste. Bahama Bob was there and autographed my bottle and took a picture with us. Love the history of the building. I didn't realize rum was distilled in the Keys! My husband and I love checking out the bourbon distilleries in our area so this was right up our alley! I don't remember tour times being listed on their website so we just walked in to ask. We had about a 30 min wait so we went to try the key lime pie place across the street. The building was small but packed with information. The tour is great! We learned about rum in general but we also learned a lot about Hemingway and Key West specifically. The tasting was also great. They only make a light and dark rum. Both were tasty but we did purchase a bottle of the dark rum to bring back to Ohio. A great experience while in Key West. read more

On vacation in Florida and decided to make the 8 hour round trip to spend the day in the Keys with Papas Pilar being at the top of our list of things to do. Been here previously and wanted to do the tour but they were all booked up for the day, so we were out of luck. Decided we wanted to try the tasting, but woman doing the sign ups was acting like we were invisible while I was making my purchases from their merchandise counter. So I went to her and said we'd like to participate as well, she hemmed and hawed and acted like we were a bother to be added. We signed the form and got ready, went to the bar counter like everyone else. The presentation started and another worker walked up and added a couple people that showed up later, but then put a rope barrier to separate my party from them as if we weren't part of it. Okayyyyyy, so we go around the rope and try to get in with everyone else but are then out of luck as everyone hogged up all the bar space and didn't leave room for us, so back to our original spots at the end of the bar. But we're told we're not part of it, that they'd just put the people that arrived after us in there and we could come back for a later show. Why? The two of us that wanted to participate could not make or break the situation, pouring 2 extra drinks couldn't be that burdensome. Odd, petty, ridiculous, not sure why you'd do that to us but I really wish I wouldn't have plunked down the money on your overpriced merchandise minutes before, not to mention the large amounts I've spent on your rum and merchandise in the past. Was a huge fan, made many drives to neighboring states that carried your product as mine didn't, but not now after feeling disrespected like this. A long trip to one of my favorite places ended in utter disappointment. PS: usually when businesses respond to a less than stellar review it's with cookie cutter responses about how they value the customer blah blah blah....and it means so very little. When you don't even get that after several weeks it tells you everything you need to know about the business and that they just don't value you as a customer. They treated us like we didn't exist while in the store and now confirmed it here. So disappointing... read more

I know it is hard finding good employees right now, but they should try harder here. Our group showed up at 1:50 to taste and buy rum. 10 minutes before they closed. We walked in and the employee said no more sales I am closing. He wanted to leave early. So he sent us all away. So we went down to key west rum, and they gave us a great tour, and we purchased a few bottles. Bottom line, probably skip this place until they get better staff. read more

My wife and I did the cocktail class and it was excellent. We got the chance to make two cocktails under the direction of hurricane and bubbles who were excellent teachers. After each drink we got a tour of the distillery while we drank the cocktail that was just made. So they only have two products here - a very good dark rum, and an *extremely* good rum that looks like it hasn't been aged for very long, but absolutely has been, that's $35 and absolutely tastes like it should be more than that. So given that, I'd be a bit disappointed if I had to pay for the tasting, but I didn't, because tastings are free. Therefore, the only thing I was disappointed about here, given how great their two products both were, was that they only had two products. My wife and I went for a tasting two days ago and it was fantastic. I normally don't like white/blonde rum, but theirs was amazing. It was smooth and floral with an aftertaste of butterscotch. Kirk who ran the tasting did a great job and although he was a bit dry, it was worthwhile and we left with some rum. We ended up doing the full tour of the distillery and cocktail class 2 days later. Kirk also ran that (with Moe) and was super funny and informative. He thought us how to make a bunch of different drinks, which we drank and were feeling great at the end. He also fielded as many questions about rum and the local life with regards to other great places for food and drink. They also gave us an nice souvenir bag when it was over. Don't let this little gem be missed on your Key West trip!! My fiancé and I always hit up local distilleries when we travel and this one was exceptional! The tour includes a walk through of the distillery, history on Papa Pilar, and generous tasting of their 5 various types of rums. Excellent tour through the distillery by Kirk, who is both humorous and enthusiastic about rum. $10 per person for the tour, and you're given a $5 token to use to make purchases. The tour includes a 30 +\- walk through discussion with plenty to see and opportunity to ask questions about the process. When over, you're given sample shots of the blonde and dark rum. It's a great opportunity to try the product from the process discussed on tour. The rum is delicious, particularly the blonde, I felt it had hints of butterscotch, without being sugary. The sparkly shoes really add a special touch to the tour! The bottling area is interesting and Kiersten's description of how the process works brought to mind a loud but close team working together. My husband and I stopped in here while wandering around Key West. Beyond avoiding the heat and appreciating the AC we really enjoyed the experience. The place is clean and well organized. They offer tours but you are welcome to go into the distillery on your own and look around. We tasted the rums at the bar and even though I do not like rum was pleasantly surprised. I had not trouble sampling the rums and the server was excellent. Explaining the history of the rum, various awards and drinks she recommended with them which all sounded delicious.
