I've been on an aged balsamic vinegar and olive oil binge lately, and have checked out a bunch of shops ranging from San Diego to Carmel Valley near Carmel-by-the-Sea. I was excited to potentially discover a closer source of high quality balsamic vinegar and olive oil. To assess how good of a product they had, I asked for the 25 year aged balsamic and the Picual EVOO. The 25 year aged balsamic was quite watery, had OK flavor (just a bunch of basic berry and grape flavors, no honey), and had too much of a vinegary bite. In comparison, the 25 year aged balsamic that I had in Carmel Valley poured like molasses with an incredible mouthfeel, much richer and more complex flavors including oak cask flavor and an ultra-long wildflower honey note finish. Next up was the Picual EVOO. Honestly, I didn't really taste very much aside from a light olive aroma. Felt very watery, not much of that green/herbal note, no sharpness, just a whole lot of nothing. This was even more disappointing than the 25 year Balsamic. The Picual I had in Carmel Valley was punchy as it should be, tons of fresh herbs, grass, spice all up front. I don't know if it's potentially a difference in first extraction vs using the remnants/grinds. But I cannot recommend the olive oil at all. The drive really is worth it guys, until an actual proper EVOO and Vinegar places shows up in South Bay at least.
