Completely mind-blown by the level of service and experience at Chef Hilo's Omakase! The food, the vibe, and Chef Hilo himself? Absolutely unmatched. It feels like dining in his own kitchen intimate but never too serious. He'll have you laughing nonstop all night while serving A5 Wagyu over rice. At one point I flexed that I was a Yelp Black Elite... and Chef Hilo clapped back with, "Well, I'm an Amex Black Card holder" then proceeded to buy me a shot of sake. Legendary. Perfect for date night, girls' night, or even solo dining. Forget the rest this is THE Omakase you need to try. Trust me, you won't regret it! PSA: Make a reservation. And show up on time! NOT an hour early or late. Don't be rude. This isn't Cheesecake The whole dinner service is timed meticulously. Play by his rules and you'll have the best time ever!

Overall, this place is the move. The sushi is top quality, beautifully presented, and each bite was just so good. I was pretty skeptical when others commented that this is some of the best sushi they have ever had but when I tried it nyself, I understood why they have said that. Every dollar here was well spent. Chef Hilo took into account our fish preferences and allergies, and was able to tailor our dining experience for us. This felt more like a true omakase where the chef is curating each piece and not just a prefixe menu that most "omakase" places do nowadays. The experience was definitely sushi heavy (which was my personal preference) and it was great; not a single course felt the same. Come here for the omakase, taste and enjoy the vibes, and you will have a good time. Highly recommend this place.

Cozy and quaint spot. Came for omakase dinner. Really great selection of alcohol, and chef knows his alcohol. He had this bottle of Chablis that's now my fav new white wine. He also serves bottled water from France that I really enjoyed. A lot of reviews complained about the chef's personality, but I found him hilarious and personable, with really great stories. He was playing a lot of 80s/90s soft rock, which was a fun vibe. All of the fish was really fresh and he uses a special rice from Japan that a very limited quantity is exported. It was really great rice - more chewy and slightly al dente but still sticky. Can't wait to come back for more.

Chef Hilo provides a unique omakase experience and really stands out from the many, many "elevated" omakase options in LA. I really think Hilo Beverly Hills might be one my favorites and it has as much do with Chef Hilo as it does with his dishes. The whole experience is intimate and really interactive (in a good way) and really do feel like you're dining at his dinner table. He really has some great stories and is his charm is as much a part of the dinner as the food! We went on Saturday for the 6:00 pm omakase seating. So there are 2 omakase options available (A or B) but I would just go ahead and pay a little more to go with B when you book online so that you don't miss out on any of the dishes. There was a couple next to us that went with omakase A and after the whole experience, I think that we definitely made the right decision with omakase B. Omakase B is a little longer and it included what were some of my favorite dishes of the night. Overall the dishes were all amazing and there was really good variety. Chef Hilo really does a spectacular job with umami flavors and also utilizes a really delicious soy sauce very well in a lot of the dishes. You'll also have a chance to try the the special premium rice in some of the sushi dishes. There is real pride of ownership at Hilo Beverly Hills and Chef Hilo really does a spectacular job with his dishes which are infused with his charisma! The whole experience is about 2 hours and I promise that you will leave feeling full and amazed! Thanks Chef Hilo for the amazing dinner!

My friends and I were excited to try Hilo Sushi Omasake, but after experiencing the premium omasake course, I would tell everyone to stay far away from Hilo and Chef Hilo. Parking was relatively simple; street parking was not hard to find. The establishment is very small, about 4 tables inside and then about 12 bar seating. Upon arrival we were greeted by staff and low lighting, our table was ready. The sushi was by far and large either comparable to best available on Uber Eats or just low quality. My friends said the Lobster was dry and tasted old. The Fish broth was horrible. The monk liver was not edible, and neither was the abalone. Course after course we were faced with either just passable and mildly disappointing sushi (given the price point) or sushi that was not edible or bad. But we were having a good time and vibing to the great company, sake and music. This is not me and my friends' first omasake experience. We had an incredible experience a few weeks ago at Sushi Zo. Sushi Note, Sushi Bros., Sushi Spot, Matsumoto, Bar Sawa are also all incredible. Sushi Hilo, which is at the same price point, does not remotely compare. The music, which was at first fine started to kill the vibe. It was on a short playlist of classical music (such as Beethoven's 5th and Carmen), when the list ended, the waitress just started it from the beginning again. On the 3rd go around, my friend suggested to Chef Hilo that he play something else. Chef Hilo's reaction was aggressive and belligerent; sarcastically and loudly apologizing with anger. Loudly saying things like, "Sorry I can't live up to your standards." And even bowing towards our table and yelling, "I apologize that this place isn't good enough for you." My party and I felt attacked and considered leaving then and there. But, my naturally positive friend trying to save what was supposed to be a nice dinner, tried to calm him down by lying to him and telling him that we loved the food and that Chef Hilo was doing a good job. We continued to slog through the courses, but then we heard Chef Hilo say to other guests: "If I can handle the Jew, I can handle the Italians." The other guests at the bar laughed, sadly he was referring to my Jewish friend who requested the music change earlier and was nice enough to try to calm him down. At that point we were all disgusted with the racist remarks and asked for the check. We did not want to stay and enjoy dessert. How could we in such a vehemently unwelcoming environment with mediocre food.

I'm speechless about this place. Chef Hilo pushes boundaries and I LOVE IT. I brought my amazing girlfriend here for her 24th birthday and man, was it an experience like no other omakase sushi spot. I emphasize on pushing boundaries because the chef prides himself on innovation and creativity. You can even say there are hints of gastronomy in his food. It's very comparable to fine art. We went with the 24 course omakase B menu, their top of the line premium choice. It was the best $250 a person meal we've ever had. I'll let the pictures tell the story. All I can say is that with Chef Hilo, fine details matter. Ask him about the special rice that he sourced from the snowy rice fields in Japan. It took him 3 years to source it and only a select number of restaurants are recognized to even carry it in their restaurant. The service was top notch. I felt like I paid for a Michelin Star restaurant. I will most definitely be coming back. I want everyone I know to have an experience like this. It is THAT GOOD. From the decor down to the design of the dishes, Chef Hilo has created the modern form of edible art.

I had one of the best omakase experience in my life yesterday. I can tell Chef Hilo is passionate about his craft, he is truly an artist behind the sushi bar. Even his classic music that he plays in the background matches the tone and atmosphere of the omakase dinner. It was an epic meal start to finish and the price was one of the best parts. He explained all of the fish thoroughly and I learned so much. I love the intimate setting where we asked Chef Hilo anything and he was so open and knowledgeable not just about his food but the restaurant industry that he's been in for a long time. Our first course was a trio of oyster and scallop and from love at first bite, I knew it was going to be a great night ahead of us. 18 courses for $150, you cant beat that in all of LA. I will definitely come back and bring all my friends and family to experience this one of a kind omakase.

We made reservation for a weekday dinner and got seated quick. FOOD Crispy Rice with Spicy Tuna (8.3/10): *9 with the Serrano pepper A must have for appetiser whenever I go to a sushi restaurant. Love the presentation, it's easy to eat. Fresh tuna, great rice to tuna ratio. Wish there's mini jalapeño or Serrano pepper on top for more depth. For the cold dish specials, we ordered Yellowtail Jalapeño and Toro Yuzu Miso to share: Toro Yuzu Miso (9/10): Ponzu sauce in here is so nice! Love the citrusy touch to balance out the fatty toro. Love the mini sprouts garnish that balances out everything in here. Yellowtail Jalapeño (9.2/10): Very well balanced, along with the cilantro garnish everything compliments each other so nice! Love the Serrano pepper (I transferred one onto the crispy tuna rice and that's delicious!). The value and service you get here is phenomenal and it's one of the better priced options for omakase in LA.

Rockpool sounds a little generic for a sushi spot, but the quality of the fish is quite delicious for the value. In particular, the lunch omakase is probably amongst the best sushi deals I've had for a sitdown spot. I'd definitely take it into consideration over let's say... Sugarfish. People often talk about how "fresh" fish tastes at sushi restaurants, but I feel like the best raw fish is often aged to an extent. The taste of the fish here is good, but I don't feel that they always use the best cuts. For example, the otoro was tasty, but it was not as marbled as I'm used to seeing. That said, another critically important and often overlooked component of sushi, particularly in handrolls and nigiri, is the rice. The rice here is delicately warm, pairs well with the fish, and has a pleasant, slightly sweet and vinegary taste. Simply delightful. The miso soup was also quite delicious, with a hearty, deep, set of flavors in the soup stock, and the scallop hand roll here was so good, I forgot to take a photo before devouring it haha. The lunch special should be enough food for most folks, but you're always welcome to add additional items to it! Now, is it good enough for me to try the more expensive dinner courses? Debatable, but it might be... just barely! The value proposition is hard to ignore, though. It's certainly one of the best deals you'll find on the Westside.

With the excellent customer service and engaging staff, you bet we will be back for their other omakase options.
