We arrived around midnight for some late night ramen and noticed it was very lively. Staff were very friendly. However, we had to ask twice for extra lemon and received only two, we would've liked a little more and it was also a little after we received our food. Food was very tasteful with lots of flavor. We ordered the butter corn spicy miso and aburi cheese spicy miso. The appetizer was a smaller portion but it was specified in the menu, also good for the price. Went here after coming back from a flight. We arrived around 10pm and it was packed, but we were seated immediately. The owner was so sweet, I wish I got his name. He kept the room lively in a subtle matter with the gong, not too loud. Inside was nice too, well lit and clean. Service: 10/10, no complaints, where one server lacked another picked up the back end. They all helped each other out to keep a good flow Shishito peppers: 10/10, good flavor and cook, not too spicy, great enjoyable appetizer! I like this location because it's in a walkable area near SJSU. I tried Hinodeya's other locations in Campbell and SF. The ambiance is very nice for a date night or after work meet up with friends for drinks. Service is meh. They give you the option of a physical menu or the QR code. While I don't mind the self ordering system, service was very lacking. It was hard getting a server to stop just to get extra napkins, utensils, or to-go boxes. Love that this spot has multiple vegan options! We chose the creamy ramen and zen ramen and both were so flavorful! Both had the shiitake mushroom dashi broth but the creamy one had soymilk while the other had more of a soy flavor. I had the sukiyaki beef ramen and it was loaded with toppings! This place is also all about crazy spicy and they have levels from regular to something like, "god of fury" or something. I had high hopes for their downtown San Jose location and they did not disappoint! After checking out the SJ made winter market, my girlfriends and I came here for a late lunch (around 2 pm) and this place was poppin'! I love how easy and convenient it is to order here- just scan the QR code at your table and easily place your order/ pay from your phone. It makes it very easy to pay when you come with friends and really streamlines the whole dining process! The service here was super fast, very friendly, and efficient! The ingredients were very fresh and you can taste the quality of both the broth and premium toppings that Hinodeya uses. Not to mention, the ramen actually comes out hot when it comes to the table. If you love spice, this location is the place for you! They offer broth that ranges from Koko-kara (level 1, mild) - Enma (level 10, choose at your own risk). I usually only get mild but am interested to try level 2 or 3 next time! The following is what I tried: -Chicken Kaarage 5/5 : I've tried so many Chicken Karaage dishes in my lifetime and this one is solid! The chicken is crispy, crackle-y, moist, and tender on the inside. I love that it's served with a plump, charred shishito pepper, lemon wedge, and my favorite matcha salt c: The overall dish is bright, not greasy, and balanced from the various toppings! -Shrimp Tempura 3/5 : I love shrimp but there wasn't anything special about this appetizer. I feel like the tempura coating could've been lighter and the dipping sauce (soy or teriyaki?) was on the saltier side. Glad I tried this dish once but won't be ordering it again. -Tonkatsu Ramen 5/5 : This dish is a newer item on Hinodeya's menu and all I can say is WOW! This ramen was delicious! Served in a Hokkaido- style miso broth, the flavors of this dish were very rich and buttery but not heavy. The wheat noodles were perfectly chewy and the crispy/juicy Tonkotsu cutlet on top was just *chef's kiss*. I also enjoyed the perfectly cooked, jammy ramen egg on the side and the addition of fresh spinach, green onions, bamboo, and corn to add texture and balance the richness from both the meat and broth. Don't be intimidated by the small pat of butter that they provide on the top! It truly made the broth creamy and velvety. Came in during a weekday, so it was kind of dead but nonetheless it was good service. You have option of ordering from wait staff or QR code. Not all alcoholic drinks are on the mobile menu. If you order it separately, you will get a different bill for the drink only. Odd quirk that should be worked out. Ordered the spicy miso and house dashi with Enma gate of hell spicy. The sauce comes on the side and should be called the three gates of hell since it hits you three times (Mouth, stomach and ...). I am not a fan of Dashi broth but it was nice and quite a surprise. Both bowls came with chashu and half an egg (rare nowadays). The chashu and half egg meets expectations of a standard ramen shop. I consider my spicy tolerance to be fairly high. I think level 10 was flavorful and hit the spicy craving. However, the blend is dry spices with hot oil takes over. The oil really coats everything in the bowl and invades the broth. After a while you just get coated with oil and lose all sense of flavor. I think going a level down might be a better choice to keep the flavor of the broth. read more

I love trying new ramen spots, and this restaurant has been on my list for the longest time. Considering I work so close to this location, I'm upset at myself for not trying it sooner. I ordered the spicy miso butter corn ramen and as someone who LOVES anything with corn in it, this was one of the most unique and delicious bowl of ramen I've ever hard. It's the perfect amount of spice, and the broth is so flavorful without feeling too heavy or greasy. I ordered to go so I did not get to experience the service there however my order was ready exactly at the estimated time on the website. And the food was perfectly warm by the time I got back to my desk to eat it. Parking isn't too bad there is a garage right next door with free parking for the first 90 minutes. There are bar seating available. I chose the QR code ordering option. They have the physical menu and ordering with a staff available. Staff was courteous and polite. I ordered the clam ramen with regular spice. It's definitely not a usual order, but I've never seen this option available anywhere else so I had to try. They have a disclaimer in the menu that there may be some small shell remnants and some sand, and they were right. I've had clams plenty of times before so that wasn't a surprise nor a problem for me. It was so good! There wasn't any kind of seafood-y or fishy smell or taste. The broth was clean, very flavorful. I ordered spicy garlic crunch on the side and that made the bowl perfect. I didn't need to add anything else extra to flavor the broth. The noodles had a nice bounce and chew to them. I didn't feel heavy or bloated after finishing the whole bowl! That's another factor I look for whenever I eat ramen. Other places would make me feel so bloated after eating and sometimes nauseous, too. This location is definitely more memorable than Campbell, I like it better. Bottom line: very much worth the try! We found a way to cut the cost but still enjoy our favorite ramen with at least 1-2 appetizers each time we visit. We get the Creamy Ramen (vegan) and since we are sharing we order extra spinach vegan wheat noodles ($3) and the inari (fried sweet tofu) ($3)-- getting all the extras make it so filling! Our favorite go to appetizers are the Yasai Kaki-Age and the edamame sticks (friends soybean in a wrap) and takoyaki. We tried the sweet chili chicken but it was not our favorite. The menu said the house ramen had char su pork and eggs with bamboo shoots but let me tell you. It was all lies. We got some noodles in minimal Luke warm tasteless broth. So so disappointing. The chicken was all cold as well. Absolutely nothing warm and fresh made. I don't understand how they got 4 stars. It was quite literally one of the worst tasting Japanese food we have had in San Jose. They definitely put more effort into their plating than the actually taste of the food.
