Within minutes, my glass of water was full and my equally kind server was walking me through the menu. The menu elevates vegetables and they source their ingredients from 16 farms nearby. (Most are in Pennsylvania.) Not overly hungry, I ordered two mid dishes and a dessert. (The menu is organized by small, mid, large, and dessert.) Each dish was masterfully executed and full of flavor. Suzuki Farm Kyuri Cucumbers were perfect. They come out as four large cucumber halves with all the fixings. Don't be shy. It's easier to eat them with your fingers per recommended by my server. The next dish was the Urban Roots Farm Sugar Snap Peas.
