I love med food and was happy they had mushrooms for veg options - had a wrap. Agree with others commenting on food temp/freshness and honestly just not good flow, slow as heck for not actually preparing anything. This is when robots can really make waves ;$. If you are literally just scooping and plating it shouldn't be so slow and my wrap wasn't actually wrapped at all, was a massive taco. Anyway I was there prime lunch time and think the food, hummus looked dry. Flavor of mushrooms and sauce were good but the couscous was super dry and nothing was warm. Love the concept and liked the kale just wouldn't bother again- nothing seemed too fresh, was slow, cold and a bit random. Chipotle they are not although the set up is reminiscent of the Mexican Grill. A couple of significant differences to note in a comparison of the two. All food items are prepared in advance and are presented in warming trays. Nothing is hot or warm. The rice or corn is left over from prior days' storage as some of the kernals are chewy/hard. The quantity of the bowls is significantly less than what is included in a Chipotle bowl...and the price is MUCH higher. $31 for a two bowls with no extras is a bit too spendy. The owner/proprietor prepared a meal for himself and his adorable child behind the counter without wearing gloves. All other staff members donned the appropriate protective gear. I've had plenty of Mediterranean food I can honestly say that the food was very good. I had a Shawarma bowl, which already has pre-determined components however they're flexible enough to not add something you don't like and instead add something else. I was very pleased with the service. As to the ambience, it's not a place to go for a romantic dinner, but I found everything clean and fresh. I will go back again. Hummus Republic is the sort of fast casual restaurant that's all the rage; think of it like a sort of Mediterranean version of Chipotle where your meal is assembled to order. When we arrived the restaurant was empty, but a couple of other Customers showed up before we left. My dining companion tried a make your own bowl and I tried a wrap. All of the ingredients were already prepared, so they were just sitting on the order line waiting to be assembled into a meal. Some choices, like Gyro, incur an up charge. We were not impressed. My lemon chicken wrap, served at room temperature, was rather flavorless with the Moroccan hot sauce the only distinctive flavor. I added eggplant hummus which I incorrectly assumed was baba ghanoush; in hindsight I think it was just hummus with some eggplant added to it. My dining companion felt the same about her bowl, although she mentioned her stuffed grape leaf was mushy and had a bad taste. She thought it likely came out of can, which is interesting for a place that touts freshness... Our meal was a very poor value. With two bottled drinks, it came to $35 before a tip. Nothing was cooked to order and had been sitting around on the order line for an unknown period of time. I originally intended to order $4.99 sweet potato fries, until I noticed they were already cooked and packaged, sitting out on the line getting cold. I passed. Restaurants need to make a reasonable profit. However, they also need to provide a reasonable value to their Customers if they want to survive. I doubt that we will ever give this Hummus Republic another try. read more

It's early for this business location so I want to be fair. While it's a similar concept as other restaurants when making a bowl or wrap, going down the line and adding what you want, the food does not seem as fresh. The hummus looked pasty and dry. Hummus was on the line with the salad items. They're just learning how to make items so it may be a little slow right now. it may be something new in the area to try but unless they step it up, eventually the quality will not be worth the cost. The fries were not made to order and were sitting under a lamp. While the fries were good they would have been even better hot. Hoping that this will change. Try it for yourself. read more

Excellent addition to White Oak. I got a build a bowl, everything was fantastic and fresh. A definite new favorite spot for me.

Great place to do a lunch catering order! We had a great variety of fresh food that everyone could enjoy. Really tasty gyro wraps and the olive hummus was a must. The chicken gyros were a hit and everyone was raving about the turmeric lemonade. Definitely looking forward to having again read more
