The only con of having a favorite restaurant you don't want to give up is you have limited chances to try new ones. This time I finally got a chance to try In Bloom that a friend recommended to us a year and a half ago. The beet salad with edible soil a.k.a seasoned breadcrumbs was beautifully presented and delicious. The korobuta pork chop charged by the ounce means you get the size you need to share but leans on the pricy side due to the weight of the bone and fat cap. The standout was the king salmon and the chef did it justice, perfectly cooked, so moist and buttery. I personally would skip the drinks next time as it was just okay and save the money for the food. Right next door to LeoLeo if you want to split a gelato afterwards.

Everything was exceptional, truly, from the service to the food. The ricotta triangoli was everyone's favorite so if i had to recommend anything in particular it would be that but honestly you can't go wrong with anything here. The dish we all liked least was the chips and dip (with caviar). The interior is also beautifully decorated and even the bathrooms are beautiful. Obviously it's expensive but it's worth it for the quality of food and upscale dining experience. Highly recommend !

Chicken schnitzel amazing bread with some carrot butter, some pretty awesome asparagus, and the leftovers of a wedge salad

Carrie was absolutely amazing and had to deal with our very large party +1000 or so children some of which were not feeling well and the rest were doing arts and crafts making a mess and also eating. They did an absolutely stellar job on getting the food out and the customer service all around hands-down 5+ stars

Super cute restaurant and pretty good food. The best part were the owners so took the time to come by our table and speak with us.

I loved how fresh everything tasted. The menu looked delicately curated with so much love. We had the pleasure of meeting the owner, she was so kind and warm. Must try - mushroom dish

My favorite dinner in Paso Robles... even above those places you'll find via Michelin. Flavors, colors, etc. We're on point for everything we ordered. Service was great. We'll definitely be back when we visit next!

Absolutely loved the food and drinks--everything was bursting with flavor. The gnocchi was especially outstanding--pillowy, rich, and perfectly cooked. And the bread? Truly to die for. We had to sit outside, which on any other evening would have been perfect, but the wind made it a bit challenging to fully enjoy the experience. It got quite cold, and unfortunately, the outdoor heaters didn't quite cut it. Our server was polite and efficient, though she seemed a bit disengaged, which slightly affected the overall vibe. Despite that, I would absolutely return. The quality of the food alone makes this place worth a second (and third) visit.

We were greeted and sat right away. We did have a reservation. The interior was well decorated and the music was at just the right volume. Conversation was easy. We started with the Shrimp Tostada. The flavor was good but the shrimp ceviche were definitely under-cured in the citrus. We both decided upon the grilled branzino. Our server warned us about there possibly being a stray bone or two in the fish. Good thing because we both had a pile of bones on our plates. We were actually very anxious while eating. The fish came with two competing sauces on it. The worst was the strawberry chipotle which tasted like a BBQ sauce and over powered this delicate, flaky fish. Our server, Kelsey, who was awesome, noticed all of the bones and made the kitchen aware. Not until we were just about done eating the branzino, the manager approached, apologized and offered to fire us another fish. His timing was way off as far as his offer. I had branzino at Grace & Rose a few nights before and I couldn't stop eating it. It was $18 less expensive and came with a luscious lemon butter sauce and fennel. And...there were zero bones. Kelsey offered to bring us another item and we asked to try the Tempura Squash. We each ate a piece and didn't finish the rest. It was like eating baby food mushy squash in a tempura batter. The batter was well executed, but the squash was definitely lacking in flavor and texture. She then brought us a complimentary dessert which was the highlight of the meal. Management did remove several items from our bill. I normally would protest that but it was necessary and also appreciated. We dined here previously and enjoyed our meal. I can't see us returning.

First time at In Bloom and we were so excited because we've been wanting to try it for so long! It was really cute inside I loved the ambiance, table decor and the bar was gorgeous too! The service from Kelsey was very good, she was friendly and knowledgeable and really made us feel welcomed! The food was very good! We had to start the foaccacia bread with a blueberry butter spread, the tempura squash and mushroom risotto! Then we got the wagyu smash-burger and fries plus the double cut pork chop for entrees! The wagyu burger was so good and the fries were insanely good!! The pork chop was enjoyed by my husband, he said it was really yum and maybe I just have herbivore teeth but I found it to be sort of chewy and dry! Still flavorful with the chili sauce and apple honey butter. Their sparkling rose was nice and my husband enjoyed the Tangerine cocktail! Ooh, and we got the Millie dessert and it was also very delicious ! Overall we'd not only recommend but would go again!

Delicious, fun tapas style dishes. Not better than LA, but probably the best tapas in Paso Robles

We had the loveliest meal at In Bloom. We were limited in dining options with our pup and were thankful to find a restaurant with a great outdoor vibe, good food and very dog friendly. I was told the menu changes often so what we had may no longer be available depending on when you dine but the standouts for us were the pork chop and the duck wings. Our server was really personable as well. Give this spot a try if you're ever in the area!

Came here for my birthday dinner. I enjoyed the ambiance and our server was the absolute best. Favorite dishes were the scallops (OMG) and the yukon gold potatoes. We also ordered the delicata squash which was good, and the pork shank. We actually ended up sending the pork shank back because it just seemed really dry. I'm not someone that sends food back frequently. Our waiter was super apologetic and took it off our bill which was greatly appreciated. The manager came by and was really short with us. He said something like "Sorry the Pork Shank wasn't to your liking" and we started to tell him about how good everything else was but he turned and walked away as we were mid sentence. Super weird! We were kind of shocked honestly. Not sure I would come back here based on that experience, but maybe the manager was having a bad day. But if you go, get the scallops for sure!

I came here with my spouse for our anniversary, and it was everything we hoped for! The restaurant itself was beautiful, spotlessly clean, and bright. Our service was literally impeccable- friendly, knowledgeable, and prompt without being overbearing. I got the peach cocktail and my spouse got a beer, but they also gifted us free bubbly to start and wee espresso martinis at the end. Everything was so good, but those espresso drinks were next level! For food, we ordered the potato's (I want to eat them for every meal until I die), the mushrooms (buttery and savory and tender), the salmon (so crispy and flavorful), and the pork chop (omg, truly melt in your mouth tender and the crispy corn things were amazing). We were so full and happy, and will definitely be back!

The waiter recommended a local Chardonnay, so nice that I bought 2 bottles before leaving town. The owner-chef also spent about 15 minutes chatting with us as we were one of the last diners. Of note, we were never given an option for indoor seating when making our reservation nor when we were seated. After ordering, we received our starter (shishito peppers) within 10 minutes. However once we finished the starter we waited an additional 30-40 minutes for our entrees. There was no communication from the wait staff at all, no refills on water, nothing. In fact in the patio dining area I saw three plates of food (including our peppers) delivered to tables in the hour we had been sitting there. Interestingly the wait staff all seemed very busy and moved around the restaurant but not much appeared to get done. Having worked in hospitality previously I have a lot of empathy for the staff as they seemed to lack direction and management support. My husband ordered the mushroom and scallop pasta. It was okay. Overpriced, but was tasty. I ordered the chile relleno and steak. The chile relleno was filled with a large amount of corn that tasted freezer burnt. My steak was thin and grey and overcooked. It was nearly all grey inside with a couple spots of pink. It wasn't seasoned either. The sauces on the plate were good. Our server was polite and did take it off the menu. However, no manager ever came by to check on us or any other table on the patio in the time we were there. I had high hopes for this place based on the reviews. It was a real let down to have a lackluster food and service experience at "one of the nicest places" in Paso.

The restaurant is right in the heart of downtown Paso Robles, making it an easy stop if you're exploring the area. We had reservations through OpenTable and arrived a little early. They seated us within a few minutes, and although outdoor seating was available, it was around 97°, so we were happy to wait for an indoor table. The inside has a really cool Spanish hacienda vibe with rustic wood beams, warm lighting, and plenty of unique décor to take in. It's a fun space with lots of character and is connected in the back to the tiki bar next door, making it easy to continue the evening with a drink. The atmosphere was lively without being overly loud, and we really enjoyed the classic '80s music playing softly in the background. The oysters were fresh and very good. My wife ordered the ceviche and enjoyed it. I had the hanger steak salad--it was decent, but I'd probably skip the beets next time and order something different. Overall, the food was good, but it didn't quite rise to the level of "great." Service was friendly and attentive throughout the meal. Overall, Fish Gaucho is worth a visit for its downtown location, unique Spanish-inspired atmosphere, and solid food. While there are probably stronger culinary options in Paso Robles, we'd happily come back to enjoy the ambiance, check out the connected tiki bar, and sample a few different menu items.

The town was hosting live music at the plaza across the street so we sat outside facing the plaza. It was a great way to enjoy our meal! The place was pretty packed because of the World Cup going on (Mexico vs Korea) so I understand why our server was a bit slow. She was handling tables inside and outside but keep in mind when it gets busy you may wait a bit longer for things. I ordered "The Steak" which is a hangar steak with a compound butter on top and Brussels sprouts on the side, I subbed potatoes for coleslaw. The steak was cooked nicely and had a great crust on the outside, very flavorful with just the right amount of saltiness. The Brussels were some of the best I've had even though they were so simple. I ate every last one! The slaw was ok but not a ton of flavor, it was pretty light on the sauce. We also got an order of bacon wrapped jalapeños with cilantro ranch. They were so good! We destroyed them in seconds while burning our tongues on the lava-like cheese. Worth it!

And I am so embarrassed to have recommended this restaurant to dozens of people. We raved to our friends about this place and this burger in particular. So, when we traveled with them to Paso Robles this week, we took them there on Thursday night. We passed on having the Wagyu 8 oz. burger and fries at In Bloom (Michelin listed) the night before in anticipation of this burger. Service was abysmal. We sat for quite some time with no service. My wife went in and asked where our server was? Finally, a woman showed up and said our waiter would be with us shortly. Sometime later, a friendly waiter arrived. He was obviously new, under-trained, and spread too thin. He was very personable, but our drinks sat on the bar for a long time and my wife had to go in and ask if she could take then. "No, the waiter will bring them out." Meanwhile, our friends were sipping on their drinks. We got our appetizers and then ordered our meals. The food came quickly, maybe too quickly, and I noticed no egg yolk oozing out (it was halved for us in the kitchen) and the burger overall was much thinner than the last time and the arugula was so wet under the patty. So, we ate a couple bites of it and it just did not taste right. I opened it up to find a baked or boiled grey patty with no crispy bacon wrapping. The bacon was soft, I mean boiled soft and was a small lump on top of the burger patty, not even close to crispy. More like a damp towel. The avocado was sliced but not spread out, so stuck on the left side. The egg was hard cooked with a solid yolk. No pepper to be found. I showed the waiter who was stunned. He thought we were kidding. The manger came out, looked at it, asked what we wanted to do. I was a bit surprised given the wreck that this burger was and said I don't know, what do you want to do? He said the chef wasn't there but took the plate back to the kitchen. He came back and said the chef (wait, he wasn't there) was surprised and said it was not right. The chef (if he was there) should have headed straight out to us and apologized. So, the manager took the burger off the bill but left the same horrible burger ($22) on our friend's bill. I should not have to tell a manager how to fix such a mess and disaster of a meal and service. I hope they fix their kitchen, whoever is checking food at the pass, and the service or they will be another casualty to the restaurant business in Paso. Sorry I had to write this as I rarely post negative reviews in order to not hurt a business and their employees.
