My wife and I went to In Bloom at the recommendation of our daughters who saw the Michelin designation. After going, I debated whether it warranted a 3- or 4-star rating, but I settled on three because the experience was extremely inconsistent and we expected more given the cost and the designation. Here is what we noticed...some good, some not-so-good: - We arrived for a 6pm reservation and were the second couple seated. Shortly thereafter a family of four with two young kids arrived and the host seated them directly next to us even though the entire place was empty. The kids were fidgety and loud (as kids that age can be) so it wasn't too long before we asked to move to another table, which our server happily accommodated. But, I have to ask why a Host would seat all three parties nearly on top of each other when the entire restaurant is empty? - We ordered cocktails to start, and there were several fun cocktails to choose from and the portions were good. The wine list is also pretty extensive. - The Server described the menu as all "sharables", but don't think tapas, think family style dining. After having been there, we decided that we should have skipped ordering a type of main course and stuck to appetizers. That's because the two app/salad type dishes we had were good, while the main dish was a failure. - We started with the Panzanella, which was made special by the fresh tomatoes. After that, we had the Tempura Cauliflower, which was really well seasoned...it was the highlight of our entire experience. We then shared the Pachamama Pork, which really shouldn't be on the menu if they are true farm-to-table eating. Plus, at $49 it should have wowed us more. While it tasted ok, there wasn't anything fresh or bright or seasonal on the plate aside from a little lemon in the lentils, and, frankly, I've cooked better pork myself at home. - We finished with the Mille feuille dessert, which was so skimpy on the cream that all you tasted was the biscuit in your mouth. To their credit though, when I mentioned that to the Host/server as we were paying, he brought out a plate with some more cream and we finally got to taste the brown butter, etc. that was supposed to be highlighted in the dish. - Service overall was good. The vibe is ok...it is not the comfiest place, but we did like the LPs being played on the sound system. I would also say that given the prices they charge, they should have made an effort to wipe/clean our table between dishes as drops/bits from each dish collected during our entire meal. - Be aware that there is a 3% credit card surcharge. While that is noted on their website, it wasn't on the menu. And, maybe it's just me, but if a place wants to be more fine dining, then just charge more to make up for the credit card fees versus adding it onto your bill. Bottom line: We've had much better meals in Paso Robles and though we expected to be wowed by In Bloom given its Michelin designation, it just didn't deliver. read more

I don't want to write this review because we already spoke to the owner and he was wonderful. But we went as a recommendation bc our initial restaurant canceled I felt like the kitchen was completely lost. The dishes were confused. Each one missed the mark in different ways. A simple example- the focaccia (which was not focaccia) was served with the completely wrong knife. The knife could've easily slipped, and you could've cut yourself. The shrimp Tostada was so disappointing, the pasta dish/ravioli was soupy, and the pork belly- just absolutely no. It's a gorgeous location, great spot, beautiful, the owner is so very nice and did comp a couple dishes, but I think they need to re-evaluate the kitchen and work on execution. read more

This is one of those restaurants you really want to like. The burger looked amazing, however we ordered the branzino, sea bass with the golden Yukon potato's. The wine selection was excellent, however the meal was subpar. Even though branzino is known to have a lot of bones, this one had more than its fair share. The Yukon potatoes were extremely spicy on a sauce that was very rough in texture. We felt bad for the staff to let them know of our concern. Our waitress did let her manager know who came to our table and not charge us for the meal. When this happens, I do not blame the service which I did provide a tip despite the food quality. It's rare for us to complain as I'm hoping that this experience was just a one off... but concerned that the most expensive item on the menu was subpar. The only con of having a favorite restaurant you don't want to give up is you have limited chances to try new ones. This time I finally got a chance to try In Bloom that a friend recommended to us a year and a half ago. The beet salad with edible soil a.k.a seasoned breadcrumbs was beautifully presented and delicious. The korobuta pork chop charged by the ounce means you get the size you need to share but leans on the pricy side due to the weight of the bone and fat cap. The standout was the king salmon and the chef did it justice, perfectly cooked, so moist and buttery. I personally would skip the drinks next time as it was just okay and save the money for the food. Everything was exceptional, truly, from the service to the food. The ricotta triangoli was everyone's favorite so if i had to recommend anything in particular it would be that but honestly you can't go wrong with anything here. The dish we all liked least was the chips and dip (with caviar). The interior is also beautifully decorated and even the bathrooms are beautiful. We had the pleasure of meeting one of the proprietors earlier in the day at her wine tasting space, Nix, before heading to dinner at In Bloom later that evening. It made the experience feel even more special knowing the people behind the restaurant are so passionate about what they're creating. The menu at In Bloom highlights the changing seasons, which makes for a thoughtful and fresh dining experience. One standout for our table was the potatoes, absolutely delicious. In fact, they were so good that we ordered a second round. The Caesar salad offered a fun and unexpected spicy twist on the traditional dressing, which was a great surprise. The branzino was masterfully prepared, perfectly cooked and full of flavor. Beyond the food, the atmosphere was warm and inviting, and the staff made the evening even more enjoyable with attentive and friendly service. Carrie was absolutely amazing and had to deal with our very large party +1000 or so children some of which were not feeling well and the rest were doing arts and crafts making a mess and also eating. Absolutely loved the food and drinks--everything was bursting with flavor. The gnocchi was especially outstanding--pillowy, rich, and perfectly cooked. And the bread? Truly to die for. We had to sit outside, which on any other evening would have been perfect, but the wind made it a bit challenging to fully enjoy the experience. We were greeted and sat right away. We did have a reservation. The interior was well decorated and the music was at just the right volume. Conversation was easy. We started with the Shrimp Tostada. The flavor was good but the shrimp ceviche were definitely under-cured in the citrus. We both decided upon the grilled branzino. Our server warned us about there possibly being a stray bone or two in the fish. Good thing because we both had a pile of bones on our plates. We were actually very anxious while eating. The fish came with two competing sauces on it. The worst was the strawberry chipotle which tasted like a BBQ sauce and over powered this delicate, flaky fish. Our server, Kelsey, who was awesome, noticed all of the bones and made the kitchen aware. Not until we were just about done eating the branzino, the manager approached, apologized and offered to fire us another fish. His timing was way off as far as his offer. I had branzino at Grace & Rose a few nights before and I couldn't stop eating it. It was $18 less expensive and came with a luscious lemon butter sauce and fennel. And...there were zero bones. Kelsey offered to bring us another item and we asked to try the Tempura Squash. We each ate a piece and didn't finish the rest. It was like eating baby food mushy squash in a tempura batter. The batter was well executed, but the squash was definitely lacking in flavor and texture. She then brought us a complimentary dessert which was the highlight of the meal. Management did remove several items from our bill. I normally would protest that but it was necessary and also appreciated. We dined here previously and enjoyed our meal. First time at In Bloom and we were so excited because we've been wanting to try it for so long! It was really cute inside I loved the ambiance, table decor and the bar was gorgeous too! The service from Kelsey was very good, she was friendly and knowledgeable and really made us feel welcomed! The food was very good! We had to start the foaccacia bread with a blueberry butter spread, the tempura squash and mushroom risotto! Then we got the wagyu smash-burger and fries plus the double cut pork chop for entrees! The wagyu burger was so good and the fries were insanely good!! The pork chop was enjoyed by my husband, he said it was really yum and maybe I just have herbivore teeth but I found it to be sort of chewy and dry! Unfortunately, my birthday dinner was a disappointment. The evening started with a "burrata special" that the chef openly admitted had been made the day before as his first attempt at burrata. It wasn't burrata at all...it was a hard, flavorless mozzarella ball. After we sent it back, we were brought a fresh batch made that day, but it was nearly identical: firm, bland, and lacking the creamy texture and flavor that burrata should have. The problems continued with the sandwich order. It took an exceptionally long time to arrive because they were out of beef tongue and were apparently trying to piece together enough meat for the sandwich. When it finally arrived, there was very little meat on it...certainly not what you'd expect for a $28 sandwich. To add to the frustration, the sandwich was initially charged at $30 even though the menu listed it at $28. While the error was corrected, it was another example of the lack of attention to detail throughout the meal. Although it was my birthday, there was no dessert or meaningful acknowledgment. I did receive a generic card, but it felt more like an afterthought than a genuine effort to make the occasion special. The one bright spot was our waitress, who was friendly, attentive, and did her best despite the issues coming from the kitchen. Overall, serving a day-old failed burrata experiment, replacing it with another disappointing version, the long wait for an underfilled sandwich, the billing error, and the lack of birthday hospitality made for a very underwhelming experience. read more

I'm not someone that sends food back frequently. Our waiter was super apologetic and took it off our bill which was greatly appreciated. The manager came by and was really short with us. He said something like "Sorry the Pork Shank wasn't to your liking" and we started to tell him about how good everything else was but he turned and walked away as we were mid sentence. Super weird! I came here with my spouse for our anniversary, and it was everything we hoped for! The restaurant itself was beautiful, spotlessly clean, and bright. Our service was literally impeccable- friendly, knowledgeable, and prompt without being overbearing. I got the peach cocktail and my spouse got a beer, but they also gifted us free bubbly to start and wee espresso martinis at the end. Everything was so good, but those espresso drinks were next level! For food, we ordered the potato's (I want to eat them for every meal until I die), the mushrooms (buttery and savory and tender), the salmon (so crispy and flavorful), and the pork chop (omg, truly melt in your mouth tender and the crispy corn things were amazing). We drove to Paso Robles on Sunday for a 5 o'clock reservation at In Bloom. According to the weather app, the wind chill was about 46 degrees, but it felt colder outside the restaurant. We arrived at 4:56 to find the door locked, and a hostess telling us they wouldn't open until 5:00. After waiting five minutes in the food court in the next building, we returned at 5:00 to find her unlocking the door and letting us in. Inside, I mentioned the cold gusty winds outside, but received blank stares from the staff. The hostess tried to seat us at the 4-top table next to the front door, but I politely asked to sit away from the door. She said all the other tables were booked, then offered the next one over. When I explained that this wouldn't work, the staff, who seemed older than the hostess, said not a word, didn't reply or say goodbye; they just let us leave. The restaurant was empty, and their reservation system didn't let us choose a specific table. It's unclear if each table was reserved or if the restaurant was booked. No one at In Bloom seems to know how to, or cares to, manually change the seating assignment. With other fine dining options available, we probably won't choose In Bloom again. #tobiethefoodie read more

The challenge with going to a highly rated restaurant is that one's expectations tend to be higher. We went to celebrate a birthday so we were excited to go. We really wanted an exceptional experience but these were our observations. I order a Topa Topa Chief Peak IPA as a palette cleanser but was served a different hazy beer. They admitted that the taps were inadvertently switched. No problem, but when they brought the correct beer it was sour so I switched to wine. (They probably don't turn a lot of beer I'm guessing.) It is a loud restaurant so be prepared if you are seated next to loud conversations at adjacent tables as we were. Food: The beets and avocado were very good and the braised beans were excellent and smokey. Since each dish was complex, we ate and savored each dish as it came out. Our server thought it was a good idea to bring the scallops out with another dish so they were cold when we got to them. The pork shank was a lovely piece of meat but it was drenched in honey which overpowered the other flavors. I will say that they do a great job at plating their food so it arrives looking beautiful. At one point they darkened the lighting for the whole dining room which made the food and details hard to see. This seemed odd since the presentations were so visually nice. The service was good though the hostess kept yawning at the front station. We are local and have lived in NYC and LA, support local businesses, and admire the lofty goals In Bloom is striving to achieve (and did with a Michelin star in 2023) but our experience fell short considering the price. This is my new favorite restaurant in Paso. We were not even aware about it existing as we just come up 1-2 times a year to meet with friends. We love Six Test, LPC , La Brasserie - all good but the quality of the food here was a hit for every dish. Friends got mad for me ordering the Chips & Caviar. The creme fraiche potato chips and chives has been a recent kick around the holidays and how they served them with the half cut open bag of Lay's felt also like art. Mushroom Risotto was amazing three different mushrooms not too buttery not too al dente - not too soggy. It was perfection. The Pork was cooked perfect as well. Disappointing on several fronts. Ambience: Made a reservation through Tock and specifically asked for a quiet corner. The hostess seated us right by the door. We asked for a different table and got moved in by one table. Turned out that was the prime location for every sound in the place to ricochet to. There are zero soft surfaces to absorb noise, so as soon as the place is half-full, everyone has to shout to be heard, which makes it even louder. Thankfully, they didn't crank up the music to match (they pitch it as "curated vinyl," but it's just the usual Boomer oldies you'd hear on any "top-40 classic rock" station). Service: Competent but not outstanding. One major faux pas: We ordered a pretty expensive bottle of wine, and after pouring it for us, our server put the bottle down on the table and then *rested their hands on the top of the bottle* while making small talk about the wine. This is one of those, "Do you make a fuss and make her open a new bottle (because, eww, sanitary reasons), or just shrug it off and hope they don't have the blergh." We chose the latter and were okay. Still, bad form. Overall, coverage between server, expediter, and runner was just okay - they brought our entrees while we were still eating our starters, and tried to clear our entrée plates before we were finished. We were far from dallying, but they were certainly trying to turn the table. Again, bad form. Food: Just get the Caesar salad. That's a winner. But the beets starter was pretty tasteless (and the accompanying crackers were teeth-cracking hard), the chicken was routine though it had a great aroma, and the hamburger...well, that's the real test of any upscale restaurant: whether they can do a burger properly. It was just ordinary, and 28 bucks is a steep price to pay for "locally sourced" wagyu beef when they overcook and underseason it, and the bun is dry and tasteless. Verdict: I've been to hundreds of fine-dining establishments, and found In Bloom to have overpromised and underdelivered. They were not slammed. It was a weekend night, so the crew should have been humming. And with the Paso tourist economy teetering, this kind of restaurant really needs to up its game when there are plenty of options out there. Would not return, though we'd get the Caesar to go, then get a pizza or wings somewhere else. read more

A new find for me in Paso! In bloom is a beautifully appointed, Michelin Guided restaurant on the north end of Paso Market Walk. We arrived around 5:45 and the place was wide open for seating, but by 7pm, the restaurant was hopping! The staff was very kind and helpful and did a great job on service. We had 5 different dishes and all of them had unique flavors with beautiful presentation. Each plate was a taste plate, so make sure to get several plates to share! We really enjoyed the food, the service and the decor, but I will say that it gets extremely noisy when it a full capacity and it makes it very hard to have any kind of meaningful conversation. I hope that the next time we visit, we will pick a quieter seat. read more

My friend and I had a variety of plates: Yukon gold potatoes were the tastiest, with great texture. The carrot e Pepe was superbly creative with a really tasty carrot based cavatelli. I haven't received a response via the internal review through Tock. First, the good stuff: I've been looking for a favorite Paso spot to bring my csuite next month for our project meeting. We all love and appreciate a good meal. This was on my shortlist because of the vegetable options, the seasonality, and the craft cocktails. The care used in preparing the ingredients gives each flavor their moment as you enjoy the meal. When our food arrived, we enjoyed each of the courses, especially the mushrooms which tasted warm and familiar, but celebratory. The gelled yolk of the Wagyu tartar was a real treat. My best friend loved the avocado cream of the beets. The branzino was tender with a little crispness seared onto the skin. Each dish was excellent except the pasta was very salty, so the manager took it off our bill. Thank you for that. The texture of the pasta was wonderful. I went to the doctor 3 days later and my blood pressure was 40 points higher than normal. Maybe it's a coincidence. Our server/bartender Jenny was phenomenal. She made great recommendations and made sure we didn't feel rushed to decide on our protein. She was the first person to genuinely welcome us. At the end, another staff member asked us about our experience. I shared what happened at the beginning and he said he's share with the team. They both shined in their professionalism. Below you'll find the not so great things: I called ahead because we were having GPS trouble in the hills and we were worried we would be late or get lost. At the end of the call, I confirmed that we would keep our 6pm reservation. We hustled and we made it 5 minutes late. Upon arrival, my friend held the door open for another couple. They proceeded to the host and they were helped first. Rude. This is clearly not the restaurant's fault but poor manners of fellow patrons. When it was our turn, we were told that the host needed to speak with the manager. There was no explanation, which felt troubling. Our table was not available, so we were asked if we would be ok with sitting at the bar. Without allowing us time to respond, the host manager told us that the bar was "more fun," we'd get to "see all the action." We saw a regular height table with 2 seats, but I guess they were hellbent on seating us at the bar. Being two 5' tall people, we don't like high top seating. I generally always want to sit with my feet on the ground. Regardless, there we were, so every time we got out of our seats, we'd make light of the situation. We saw some action through the windows. After all, drunk middle aged folks in Paso Robles is what we want to see. (Sarcasm) The menu is great, but the service upon arrival was condescending. I gave the restaurant a week to respond to my internal feedback and received no acknowledgment. I wish I could just write about the wonderful things, but rude and drunk middle aged people and the hapless way we were seated really distracted me from the experience. Owner-Nicole, Manager Kevin, and Bartender-Todd who also doubled as our server were absolutely amazing. My wife had been trying to get a reservation for the weekend we were in Paso with no luck. By happenstance we meet Nicole the owner at her tasting room, Nix Cellers in Paso not knowing her and her husband were also the owners of In Bloom. Long story short, she was able to get us a reservation for bar seating for 4 people that evening. We do enjoy a meal at the bar and this was no exception. The cocktails we're great and food did not disappoint. Our food selections consisted of DUCK WING DRUMETTES YUKON GOLD POTATO BRAISED BEANS SRF KUROBUTA PORK SHANK The restaurant was nicely decorated and had a relaxing upscale vibe. We stayed nearby and thankfully that influenced our decision to eat here because the food was absolutely fantastic. The hostess was friendly and our server was the perfect balance of knowledgeable and helpful without being overbearing. We ordered 4 plates per her suggestion and our only complaint would be that the chicken dish was quite large and made for a bit too much food. The chilled gulf shrimp with cashew nuoc cham was the star of the show, definitely one of the best things we've ever had. We could almost come back again tomorrow just to have it again. But we'll definitely come again next time we're in town so we can try more this wonderfully seasonal farm to table food. read more
