If this was a consolation prize, trust me, I was well-consoled! First, let's talk portion size. They served this "little combo" in a pound-sized container, filling it 3/4 of the way with Mac & Cheese, and then topping it with enough Pulled Pork to rise above the rim. While everyone else at the Festival was serving truly "sample-sized" portions for their "passport" items, Full Send was giving out full meals -- and really, this was enough food for 2 people. So this gang deserves major props for hospitality and generosity, and we haven't even talked about the taste yet. So let's talk about the taste. The pork was smoky and rich, juicy with just enough fat to let you know you're eating traditional barbecue without feeling weighed down or guilty. Their sauce was more sweet than spicy, with a somewhat hefty consistency -- it was good sauce to be sure, but I generally prefer something reaching higher on the spice meter. The Mac & Cheese resting below the pork was top-notch as well, with a creamy consistency and a solid, mildly cheesy flavor that complemented the pork nicely -- a sharper cheese would have overpowered the meat, so they've made very good choices here. I cooked the food for our guest of about 70 and we catered the esquites. Our party started at 2 and they came around 1:30 to get prepped and set up and was ready to serve at 2. Requested enough for about 75 guest and they came with the cups with a custom sticker to match our party theme. They had leftover stickers on a roll and they just gave us the rest to hand out to all the kids at the party. This was my first time to have a whole cup of corn since I don't normally buy some from the street vendors so I don't know how to compare it to, but all of the party guest enjoyed it. We went simple with the additional toppings but that Hot Cheetos is worth the extra price. My wife prefers her corn with a little extra of the broth, and that's not how they serve it, so if you want extra broth, make sure to ask. Some guest asked for it and they happily served it that way. They gave a 15 min warning as they were preparing to leave and we still had plenty of left over corn, which they gave to us we just had to provide a container. It was only one person that came and he was very efficient and no one had to wait for a long time to be served. He was very courteous and respectful to our party guest. Would definitely book again!
