For our "fancier" vacation meal we decided to try Kuchu. We were seated quickly, but it took the bartenders forever to make our drinks. They did apologize and let us know our drinks would be out soon which honesty is always appreciated. I told my fiance and brother be prepared to wait awhile for food, however we were surprised by how quickly the food came out. The cactus nachos were delicious! What a great find! A couple of friends and I were in town for a snowboarding trip at a couple of the local resorts (Keystone & Breckenridge) and after the night seemed to have come to an end, we stopped by here for a nightcap. We were greeted by a wholesome staff behind the bar, and our bartender (Demitri, sorry if I spelled it wrong bud) was there to bring the spirits of the ending back up. He made great drinks but more importantly awesome conversation. He let us in on what other night life the town had to offer, and personally showed us around a bit after his shift. We came back every night of our trip and were treated no different than the first night....okay well maybe a little different, he knew all of us by our names and he felt like a part of our group. Was looking forward to a nice restaurant (with street tacos!) in town that would appeal to both locals and visitors. it's a great location in the growing downtown, but unfortunately missed the mark for good food. The vibe and ambiance is nice, but the service was awkward and food is subpar. the tacos have no flavor and consist of dry meat with a two pieces of lettuce, and a dry/old tortilla. very dry and no seasoning (I got shrimp, bison, and chicken) maybe the entrees are better (or maybe the breakfast menu??) but those are 30+ dollars a plate and not appealing to locals. apps were also not great. salsas weren't anything special. we will likely only return for drinks only which were tasty with a great tequila selection! I wish this place luck and hope they can improve on service and food! (written with the caveat that there are staffing issues in town so everything has a different baseline, which is understandable) for good tacos I recommend Tocko in frisco, Fritangas down the street or chipotle all for a quarter of the price :)))) read more

Holy s**t! Ones of the best meals we've had in Silverthorne! We have a house up here and it's always been such a struggle to find a good restaurant. Finally!! So glad this gem is here! My family and I enjoyed the poblano chicken soup! I think I'm love. I would have ordered it for dessert if I wasn't so full. Then we got the crispy onions ...perfect in every way. Then of course, I got the tacos...cause why wouldn't I? Got three, and it was perfect. My brother got the bison burger and he said it was the best bison burger he's had in a long time. Nice patio, bar, and variety of seating - Staff was friendly (hostess, server, bartender) and efficient on a relaxed weekday night (about 1/3 full) - I could see this being a decent place for drinks and simple appetizers. - Easy parking in the garage behind the hotel Cons - Food is not good. Not terrible, but disappointing. They are "native American inspired," but their attempts to honor that heritage fall very flat. Especially because a lot of the menu is Mexican, but not flavorful/authentic. - Street corn was boiled, not grilled, and kinda wet feeling - Tacos shells were actually really tough (decent flavor) and chewing them was a little rough. This was made worse because it was overall a dry taco. Slaw wasn't really dressed, so extra salsa, crema, etc. The bison was cooked too dry and lacked flavor. Shrimps were well cooked with good flavor, but everything was underwhelming. Especially $6-7 per taco. - Bison burger ordered medium was well done. The burger lacked flavor and also was quite dry overall. - 9% exclusive tax, so you end up with an above verage price for below average food read more

When they sat us, I think they must have forgotten to assign our table because after the hostess poured our water we didn't see anyone for a while. I had to ask a waitress for more water and to send someone over to take our order. Also not great. We ordered the street corn to start then one cactus taco, two shrimp tacos, and a bison burger. The street corn was fine, pretty straight forward. The cactus taco was a bit sweet but maybe it was supposed to be (I've never had one) not bad though. The tortillas on both shrimp tacos ripped the second I picked them up (super disappointing) so I ended up just eating the shrimp. They were seasoned well but I didn't get to eat the actual tacos. The bison burger was fine and the bun was yummy but the fries were soggy and had no flavor bc there was no salt. Near the end of our meal, the manager Aaron, poured himself a very strong drink, which... I'm conflicted about. Many places give shift drinks but I've never seen a manager pour and drink one with a full restaurant an hour before closing. Not very professional. This is a new spot along with the cool hotel. the hotel and this restaurant has a real cool super modern mountain vibe!!! We walked into the restaurant, and waited for about a minute before we were told to have a seat wherever we choose which was very nice! My wife and I are not big eaters, so we were just going to have a few appetizers. We ordered beef tips, now it didn't say how it was prepared/presented, so it was a mystery, and I like it because it lets the chef throw down on how he wants to present the dish! The tips were cooked medium with lightly sautéed red onions, drizzled with a little chimichurri over a bed of fresh bread garnished with a little fresh cilantro! Amazing! While browsing through the menu I discovered on the bottom of the menu it stated that the chips were made from black beans and quinoa, being gluten free, even though I still eat gluten, why not try! The chips were warm, light, and very flavorful, Ashlie asked if we wanted the guacamole and that was very tasty, the house salsa had a little smokiness to it and made it a game changer! My wife ordered the creamy chicken poblano soup that had a remarkable flavor of hints of cumin, tyme, garlic. This soup was well played. There were a lot of items to choose from. I didn't give it 5 stars because I haven't loved all my choices, but it is a very diverse and delicious menu. The signature silver margarita is the BEST margarita I have ever had! Great atmosphere as well and a very nice restaurant in the Indigo hotel. I would come here even if I wasn't staying at the hotel. It is one of my two top choices when I am in Silverthorne. Not great when your black bean tacos come out with undercooked, barely seasoned beans and a soft taco shell that immediately falls apart when you try to pick it up.
