Copper State Kitchen - Yummy Cheesecake

My wife and I love to cook and have prepared some outstanding meals at home over our 40 years together. We have extensively traveled and lived throughout the world and as such developed pallets for superb cuisine from all over. As we grew older we gleaned the best of what we enjoy and developed them into our own cooking skills. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Amuse-Bouche * Fig Jam, Blue Cheese, Red Wine Poached Pear & Arugula Crostini Starter * Prime Rib Poke with sesame crunch and microgreens and pipkuala aioli (based on my deconstruction of the infamous Tiki Bar in Waikiki dish) Pasta Course * Lobster Tagliatelle in a Champagne Cream Sauce Main Course * Beef Wellington with foie gras and red wine demi-glace Dessert * Crème Brûlée (torched table-side) Wine Pairings * Santa Margarita Prosecco DOCG * Domaine Salmon Sancerre Sauvignon Blanc * Tenuta de Sesta Brunello di Montalcino 1996 * Chateau Rieussec 1st Grand Cru Classe 1863 Sauternes 2004 Every course was perfect and very enjoyable. And they cleaned the kitchen meeting my wife's expectations. I highly recommend Copper State Kitchen for your personal culinary experience to celebrate your special occasions.

The Grilled Cheese folks had a food van, the Chinese guys had a nasty trailer with their name scribbled on the side and my choice of food was the food trailer from Sweet Magnolia. At least that trailer looked professional - I'm not sure how Wok n Roll made it past inspection...that one was a roach coach. One truck in the corner was serving two items, another was only ice cream and a burger truck was also on hand and empty. Nobody cleans the tables, so when I sat down, I had to toss aside the disgusting table cloth littered with food particles and eat just on the table. There is no desert caravan as indicated on the website The area is poorly lit The music is somebody's Ipod and a guitar guy played every 30 minutes You know how there is always somebody happy and peppy outside the trucks on TV inviting you to come over, well this was the opposite. It seemed nobody wanted you to eat at their Trucks..at least at 9pm, but it was open until 10pm Sweet Magnolia had good BBQ brisket, but was skimpy on the portions of meat. Overall, it may be worth a visit once or twice year, but it could be better.

I've heard people say that the Food Truck Caravan is a bit hit or miss depending on the food trucks…read morethat come by on the given weekend, however on the occasions we've gone, we've had a pleasant time. I typically head over to their Facebook page to check out their weekly listing of which trucks are going to be there. Some of our favorite trucks are Frites Street, Waffle Love, Flippin Rice, and so on. The ambiance is pleasant and it's great for a group of people to enjoy since there's always a variety of trucks present. If it's my boyfriend and I who are going together, we will each get dinner from a truck and then get dessert from another one to share. It normally gets really busy but we are still able to snag seats as someone else is getting up. Minus one star because they always have music there which is way too loud! It's okay to listen to for some time, but then it gets overwhelming and tough to have a conversation with others. If you go late in the evening, the area does get a bit messy and it isn't well lit. We'll still come back to support the food trucks!

From the beginning, Emily asked for our food preferences and made sure we had exactly the foods we asked for. She even suggested a theme for our food to "bring Mexico to us", since we had to cancel our Mexico destination wedding. The food was ABSOLUTELY amazing! We chose to do 3 food stations in lieu of a traditional sit down dinner. The stations were: Mexican, Italian, and Mediterranean. The Mexican station had a chef preparing carnitas & fish street tacos. The Italian station had a chef twirling the pesto pasta onto forks, individual lasagna cups (groom request), and gluten free meatballs. The Mediterranean/charcuterie station had a large assortment of cheeses, hummus, chicken skewers, and grilled veggies. She certainly blew it out of the park with the food! My wife is gluten free and we had several other special dietary requests from our guests. Emily made sure to incorporate as much food as possible to accommodate those food allergies. For example, she had gluten free crackers on the Mediterranean station in addition to pita bread for those without allergies. The Mexican station had the option of flour or corn tortillas. The Italian station had gluten free meatballs. 4 out of 5 passed hors devours were gluten free as well (caprese skewers, stuffed mushrooms, bacon wrapped scallops, gluten free crab cakes). In addition, she ensured the cake was gluten free as well! By the way, the baker she uses for her cakes is FABULOUS! All the guests were raving about the food! Emily also coordinated all the rentals and vendors for the event since the wedding took place at a private residence. During that process, she was SUPER patient with changes that occurred throughout the process. She also accommodated a change/addition to the tables & linens after both had already been ordered...Thank you Emily! We will definitely be using Emily's Events for catering in the future! Only feedback we will provide is: If you use her as a wedding coordinator, make sure you add her Wedding Coordinator package. Although she was gracious enough to help out, when we needed her...we had a friend step in on the day of the event to make sure the last minute details were perfect. It probably would've been better (and worth the extra $) to have her coordinate everything. Since we didn't pay for this service, she was not at the rehearsal & rehearsal dinner, which would have been quite helpful. We hope this helps someone else in their decision making processes.
