The sauce with the pork belly and Brussels was so thin it all sat at the bottom of the dish. The "kimch" was more like a slaw. Kimchi is fermented and sits for days developing, this was tossed right before service. So much potential. It's clean, air conditioned, and you get all the ice water you can drink.
