We tried their Half Rack baby back ribs and their Beef Brisket with a side of Fries and Fried Green tomatoes. Fall of the bones goodness for the rack. With high recommendations from both Google and Yelp. Minturn has a population of 1.033 as of 2020. It sits between the more popular resort towns of Vail and Beaver Creek. Had a great late dinner last night here. My boyfriend loves this place. We started with the fried green tomatoes which were awesome (and I should know I'm from Alabama). Then we both ordered a Carolina pulled pork sandwich. I loved everything about it from the pork to the bun to the coleslaw. For my sides I got the Mac and cheese and the jalapeño hushpuppies. I hadn't had a hushpuppy in years and these satisfied my craving. Our server/bartender was awesome and very friendly. She even let the kitchen know to stay open a little longer when someone walked in at close. There wasn't a lot of people in there when we went so it was pretty quiet. I really had high hopes for this place. Cool vibes, doors open and a cool breeze. Super friendly staff. The sides were really good. But the BBQ was just not good. They were out of pork (on a Saturday at 3pm). The pulled chicken was dry and had no flavor and had a whisper of sauce. I ended up taking it home for my dog and he sure liked it. The ribs were average. Needed some sauce or dry rub. As a BBQ joint to succeed, the quality of the BBQ will need to go way up. Me and my husband were on vacation in Vail and got sick of the bougie food and wanted REAL food lol we found Kirbys and we are so happy we did! We got wings ribs links hushpuppies corn bread and potato salad.... my husband also got baked beans ALL THE FOOD WAS OUTSTANDING!!! We had plenty of leftovers. The atmosphere is great (bar vibes) the server/bartender Patrick is an amazing representative of this place..... he is friendly and a very kind young man. We had a wonderful experience. All was delicious. The potato salad was creamy and fresh without being too heavy. The ribs were smoky and tender. The only negative to me was that my ribs had more cartilage on them than I like. My personal favorite was the fried green tomatoes. Perfectly crispy and nice flavor in the breading. Definitely recommend getting a side of ranch to go with it - yum! Oh my goodness. We found heaven on earth today with these Fried Green Tomatoes and pulled pork. The tomatoes absolutely are the best I've ever eaten and I've eaten my share to know. The batter was delicious, generously coating each slice and fried to perfection. The pork was tender and moist. Their two bbq sauces, hot and sweet, are flavorful without being over powering. Honestly we couldn't decide which sauce we liked best so we kept using both. The slaw was delicious and not over sauced making the sandwich soggy. It was perfect too. Can't forget the service and atmosphere. Extremely friendly and relaxed. The bartender / waiter fit the bill. He knows the menu, recommending the perfect sides for each sandwich. He was a delight. This is my new favorite place. I'm just wondering how long the Fried Green Tomatoes will be on the menu? We're always looking for new local places to try out when we're up this way. If you're in Minturn and wanting to try some bbq, come here. With Covid going on, the team was masked up with social distanced tables and bar seating. Very friendly team might I add. We were greeting instantly and told to pick a table. Water was brought to the table and we ordered a beer and a sweet tea. Great sweet tea btw, not too sweet and smooth. We each had the same special, two meat plate. It comes with two healthy servings of meat, two sides, and a piece of buttery cornbread. I asked what the house specialty was and it's the pulled pork and ribs. Both done nicely and not dry or too Smokey. They finish the ribs on the grill. Along side that we had potato salad and baked beans. I gave a four out of five stars because the beans and the sauce were good but needed a little extra something. Maybe mix some brisket, onions, and bbq sauce in the beans? The sauce again was good, but I think we like a spicier kick. Don't let that detour you from checking this place out! Potato salad was great and the cornbread was buttery. Good bbq and a nice selection of beer, what more could you want? Heard about this place while walking through Vail during a weekend farmers market. Could smell the wonderful aroma when we first arrived and had a quick sample while walking around. Fast forward a few days later, was driving through Minturn after a morning of fishing and stopped in for lunch. The crowd was a mix of what appeared to be locals and a few tourists. Great food and service! We came mid-afternoon for a snack and ordered some draught beer (Moose Drool) and the pig wings given all the recommendations on Yelp. The table next to us had fries that looked amazing (just real russet potatoes sliced and fried), so we added those, too. The pig wings were very subtly smoked to perfection so they weren't overpowered by the smoke, and are basically very tender BBQ ribs. We were told they use peach wood for smoking in order to impart just a subtle hint of smoke which was perfect for us. Loved everything! The bartender was pulling double duty at the bar and serving the restaurant, but I still found him to be friendly and attentive. We were outside on the patio with our dogs and he made sure to check in regularly, even bringing our pups iced water. Great food, great prices, and great service. We'll be back the next time we're in town! PS We ordered the banana pudding to go based on the reviews, and we just ate it now - delicious!
