The place is tiny, but the fish is mighty. I can't speak highly enough about the Holland Herring. So silky. So delicate. So much fun to eat. Held up by the tail, dragged through a mix of chopped onions and pickles, and lowered down into your awaiting mouth. These things are large. They are going to take a few good sized bites. Enjoy the contrast of textures and flavors. Tilting your head back to eat it almost demands that you close your eyes and savor every moment. Yes, the entire herring case is a marvel. A few chives if feeling fancy. My old cantor used to love creamed herring with pickled onions on chunks of challah. If you go the herring route and it's not Holland Herring season, I fully endorse this approach. But don't sleep on the Holland Herring. Get one. Eat it on the bench outside or bring it across the street and eat it standing up in the park. I heard rumor that once upon a time folks would eat them right at the counter. That seems a little messy for my taste, but far be it from me to keep a herring lover from their delightful fishy morsels.
