Koyo was one of those places that completely exceeded our expectations. As sushi lovers, we're always searching for places that truly stand out, and Koyo was such a great surprise. We started with the Salmon Crudo and Scallop Crudo, and both were outstanding. The Salmon Crudo was my absolute favorite. The garlic aioli with the fresh salmon was phenomenal, and the hint of lemon zest tied everything together perfectly. It was one of those dishes where every bite makes you pause because it's just that good. The Scallop Crudo was equally delicious. The tamarind ponzu sauce was incredible--bright, flavorful, and the perfect complement to the sweetness of the scallops. We also ordered the Salmon, Fatty Tuna, Scallop, Tuna, and Lobster hand rolls. Everything tasted exceptionally fresh, but the Lobster Roll stole the show. I couldn't resist dipping it into both the scallop crudo sauce and the garlic aioli from the salmon crudo, and wow... those combinations were absolutely incredible. I may have accidentally created my own perfect bite! What impressed us most was how fresh every piece of fish tasted. Nothing was overly complicated or covered up with heavy sauces. Every ingredient had a purpose, and the quality really spoke for itself. If you're looking for incredibly fresh sushi with creative flavors that enhance--not overpower--the seafood, Koyo is absolutely worth the visit. A lot of times it was just waiting but when someone did serve us it was great. In total we were there over an hour fo something that probably shouldn't have taken as long as it did. I've had sushi like this but only in Houston. Tbh, this place beats Handiez, hands down! My husband and I walked in for an early dinner around 5 and the parking lot was parked but not the restaurant. When we walked in we were treated by Athena, who really made the whole experience! As time went on it stared to fill up quick! Athena has great hospitality! I had high expectations as an amateur food critic and picky sushi lover. Koyo exceeded my expectations and gained a new fan! We got the 5 hand roll, Tuna Crudo, YellowTail truffle crudo, cucumber salad, and an extra scallop hand roll (because it was tooooo good). We started with the Salmon hand roll. I'm very picky about salmon, it's usually too fishy. This salmon was fresh, cold, and fantastic. I actually preferred it over the fatty tuna hand roll, which was our second. We then got the blue crab roll, this was more of a blue crab salad. It was mixed with a very light sauce I believe. Almost chicken salady texture. A little fishy but now overwhelming. Then came our favorites, the spicy scallop roll and truffle yellowtail. The spicy scallop roll isn't actually spicy, but packed with plump diced scallops tossed lightly in a bright cliantro cream sauce before wrapped in the seaweed. It was so good we ordered another! The truffle yellow tail was also bright and melted in your mouth. Get the four sauces to try! The chili crunch was our favorite!!! Side note: compared to other hand roll bars. This place did not smell bad like a fish market. The seaweed was CRISPY and mellow and not overpowering. The decor was light and the little crab chopstick holders were a cute touch. They don't have dessert but they are near dessert spots. I tried the 5 roll set Salmon Fatty tuna melts in your mouth with the right amount of flavors Crab thick and meaty Spicy scallop loved that you could get that hint of spicy from the seasoning Yellowtail I tried the yellowtail crudo in ponzu sauce Salmon crudo in mayo based sauce and tuna crudo in chili oil. The yellowtail crudo was my favorite. The ponzu sauce really brightened the dish with a hint of lemon zest. The salmon crudo was my least favorite only because it was a thicker sauce and heavier so it overpowered the salmons flavor. The tuna crudo was pretty good though I wonder if they could blend the ponzu sauce with the chili oil and it would've kicked it up a notch. I also tried the lobster roll which was not the typical one from the menu I tried the butter lobster. That one was my second favorite.. you could taste the quality of the lobster. The ratio of rice to fish was really generous. There were some unique garnishes that I had not tasted before. I believe it was either the scallop or yellowtail roll that had a really earthy taste to it and it was really good. So happy there's a hand roll place on our side of town now. Very clean, attentive staff, and a simple menu which I prefer. I usually just go for the 5 hand roll set which makes each hand roll $5 each which I feel is a fair price. My only gripe is that you can't mix and match and if you decide to go away from the sets they cost maybe a $1-$3 extra. Overall the fish quality is excellent and the rice and seaweed all pair well. For an extra $1 you can get a bowl of chili oil crunch/other condiments to add to your hand roll and they don't skimp out! The seating is in a U-shape around the sushi bar, and although it looks like limited seating, I have been able to secure a spot each time, even with a party of six. I do think you should call ahead to see if there's room for a spontaenous large party or even make a reservation. I usually get the five set handroll, which comes with handrolls consisting of salmon, fatty tuna, crab, spicy scallop, and yellowtail. I also like to get the chili oil crunch sauce, which I put on top of each bite of my rolls to add an extra crunchy texture. The yellowtail and fatty tuna handrolls are my favorite. The food comes out pretty efficiently, and service and quality has been consistent each time. I think I prefer this place to other handroll locations within the inner loop of Houston, since it's not as super crowded all the time, and the ingredients taste fresh and are very consistent each time. I came here on a Sunday in the afternoon, for the first time. Easy to locate in a strip center near a Jinya Ramen. There was only 1 other person waiting for take-away so I essentially had the place to myself. It's a cutesey intimate place, decorated simple and modern with 1 sushi counter. I asked the server if it was always this quiet, she stated it's busier for lunch and dinner, but in between it's pretty calm. I love that they have service all day 11am to about 10pmish. Which is great, so you can go during offpeak times. Sometimes restaurants limit themselves to only dinner, or open to 11am to 2p then close until 5p etc. I wonder if they will make a HH in the future? Food- I decided on the 5-set. Salmon, fatty tuna, crab, spicy scallop, and yellowtail. Ultimately my fav was the yellowtail, but the salmon and crab were pretty tasty. 5 for $25 is a pretty great deal, but is is the 'burbs. Came in Sunday afternoon and it was pretty empty. The host and chef greeted us and told us we could sit wherever we wanted. The interior was nicely decorated and full of mirrors. This is the third handroll place I tried in the houston area and I would say it is my favorite! The quality of it matches the other and while the menu might be a bit smaller I was only there for the set menu. The 5 set is so worth it. The size of the handroll was just filling enough and I enjoyed the garnishes inside each of the rolls. For the spicy scallop it wasn't your usual spicy mayo sauce, but whatever it was I loved it more. Salmon, toro, crab, and yellow tail were all great as well. They were super nice and the restaurant is big and spread out, like those classic sushi bars where you can watch the chefs work. I got the salmon crudo and the 5 hand roll sampler. The salmon was delicious, 5 pieces of salmon paired with a creamy garlic aioli. It feels kind of small for $12 but it was quite good and probably about expected price for the quality of salmon nowadays. The hand roll sampler box is an amazing $25 and comes with salmon (great, loved it), fatty tuna (yummy, nice mix), crab (tasty), yellowtail (initially strange but good mix ins, and spicy scallop (didn't try this one but my mom liked it a lot). I'm glad I followed the advice of other reviews to get the spicy chili garlic crunch. That really elevated the rolls, adding a layer of depth with the spice and texture with the crunch. I also used the leftover garlic aioli from the salmon crudo as part of the sauce and that also worked super well. The to go packaging is super nice and they have well designed plastic rolls to keep the seaweed crispy, while the rolls and rice were tightly packed and full of fish. Definitely a must! I'm so excited that my sister and I stumbled on this little spot. It's very clean, brightly lit and modern with stools around a central area for chefs to make rolls for you as you order. There was no wait at all because it literally opened Monday, so we also got the benefit of almost everyone's full attention. Each item was so fresh, and the rice was so warm and seasoned wonderfully. I just moved to the area and I've already been here twice and I cannot stop thinking about it. The staff is very friendly and attentive, this is a good place to sit and talk and enjoy your meal, not ideal if you're in a rush. It is also all bar seating so not super kid friendly, though I did see they have high chairs, just not a place I plan to bring my toddler, which is totally fine. The real star here is the sushi. Each piece is better than the last and I haven't had one I didn't like. I loved the flight of sauces to mix things up and despite it being a small menu, I wasn't missing anything. Our counter servers were super helpful and introduced us to the menu since it was our first time. The bf and I ordered the 5* and the 4* hand roll sets, which came with 1-2 of salmon, spicy tuna, fatty tuna, crab, spicy scallop, and yellowtail hand rolls between the both of us. The hand rolls are made fresh before us and best eaten immediately when the seaweed is still crunchy. The salmon is an absolute must and the star of the show. We were thoroughly impressed with the quality of the sashimi for the price, there was 8 thick cuts of fish for I believe only $25. Tasted like something that would have been much more expensive.
