One night, we were driving around trying to figure out where to go for dinner and we happened upon Will's Chophouse. It had been on my Yelp List of places to try for a while, but it was getting pretty late and we weren't sure they'd be open. I gave them a call to ask what time they closed and they told me. At the time of the call, we were about 40-ish minutes prior to closing, so I said- oh oh, we'll try again another time, but the gentleman on the phone asked how far away we were. Luckily, we were just across the street in the parking lot trying to figure out what we'd have for dinner and he said to come on over. I asked if he was sure and he said- yes, no problem- so we drove over and parked. I thought that was really cool of him, so we darted over and went in quickly. First off, I have to save that I absolutely love the aesthetic of Will's Chophouse, inside and out. I love the front door. I love the host stand area. I love the seating. The vibe of this place is working on me 100%. I just wish I had dressed up a bit to fit in better with the aesthetic. The hostess asked if we had a reservation and of course we didn't. I told her about the call and she cheerfully welcomed and seated us. Shortly thereafter, the waitress came to greet us and take our drink order. As this had been our first visit, it took a few minutes to figure out what we wanted to order, and of course, we had questions. The waitress guided us to some excellent options and we placed our order. We started with the Herbed Wagyu Meatballs served with San Marzano Sauce and Parmesan on a small bed of micro greens. They were DELICIOUS! I could've made a meal out of these. They also provided some complimentary bread and butter. It was a nice addition to the meatballs. For my entree, I had the Farm-to-table Wagyu Chop Steak with a loaded baked potato. As a topper on the steak, I added the Hunter Sauce. It's basically a creamy mushroom gravy, similar to the Jäger Sauce you'd have on top of Schnitzel at a German restaurant, but it was much richer and more flavorful than most I've ever had. I asked for my Chop Steak to be cooked well-done, not to be charred or anything, I just wanted there to be no pink. It was cooked to perfection and fork-tender, even though it wasn't well-done. It was cooked enough to work for me. The Chop Steak, accompanied by the Hunter Sauce, were a delightful treat. I am so looking forward to ordering this again on our next visit, assuming I don't give the filet a try. I also wanted to try the Sweet Potato Casserole, so I added a side of that as well. Their A La Carte sides are enormous, so I couldn't finish it, but I was able to get a few bites before it was all said and done. Will's is now one of my favorite places to eat in Springfield. I'm genuinely looking forward to our next visit. The food is exquisite. The staff are so friendly and attentive. The waitress was so kind to my son, who had so much to say. He's a bit of a chatterbox, but it didn't phase her one bit. If you haven't been to Will's Chophouse, YOU ARE MISSING OUT! Make the reservation. Spend the money. It will be well worth it.
