Located somewhere in a sprawling Stephanie plaza between Ross and Hobby Lobby, it's somehow managed to survive despite being on hardly anyone's radar. Initially, I had eyes on a salmon app, but I eventually read enough of the menu to notice the Orange Salmon ($13.99), apparently classified as a no-rice roll or something. This is indeed a rendition of a certain famous "new" sashimi-style dish with salmon slices paired with orange slices and an umami dressing. It doesn't super evoke the awe and nostalgia of the original version I had, maybe lacking some orange punch and also using larger but lower quality salmon sashimi cuts. Fortunately, the presence of all the sauces, orange wedges, and microgreens bestows enough flavor to cover for that issue. I also found a more interesting option than a hot bowl of soup in their menu. The Black Garlic Mazemen ($14.99) is a sauced bowl of kale noodles (yep, they're green) with spicy ground pork, chashu, and some sort of mixed greens. It is served hot, so it isn't as much of a relief during the summer, but you can mostly handle it without a spoon. The noodles are coated with that luscious, perhaps under-described sauce that didn't really speak "yuzu" to me. The ground pork doesn't make the whole thing too spicy, and the thin chashu slices are nicely caramelized and tender. I was quite happy with the dish and would order it again as soon as tomorrow. Umai Ramen is really a hidden gem. I can't speak for their regular ramen menu, but I had some very nice dishes here tonight and suggest that anyone else in Henderson who's overlooked them make a stop for either lunch or dinner.

Thus, when I do find one that I enjoy, I end up going there a lot when the cravings hit -- and sometimes it takes me a while to get to reviewing a place because I'm admittedly too obsessed with trying everything first before I do. Kung Fu Noodle is one of my favorite noodle joints in Henderson, and along with Shang Artisan Noodle on Maryland Parkway and Silverado Ranch Boulevard, it's one of my go-to Chinese restaurants whenever I'm craving the cuisine. As you might have guessed from the name, they specialize in noodles -- the hand-pulled kind -- and when you come in to the restaurant, you can often see them preparing the noodles by stretching the dough multiple times when you look in the kitchen. It's quite fun watching them prepare the noodles that eventually end up in your food, like those satisfying food videos you watch online... the restaurant itself has a very zen feel to it despite being in a strip mall, so it's a great place to relax, too. Noodle soups and noodle dishes are the name of the game here, but they also serve wok-fried dishes, various street foods, and different kinds of fried rice if you're craving it. Their noodles are among the best I've had, only matched by the noodles I've eaten at Shang -- soft, yet still having a chew to them as they do an amazing job of soaking up the flavor from the soup or sauce that they're cooked in. The fact that I come here repeatedly is a testament to how delicious their food is -- and how cheap, too! A bowl of noodles with appetizers will only run you $20 at most, and considering the quality, it's well worth it! My go-to is the beef brisket noodle, and I order a side of wonton soup from the appetizers to add to the soup. Other standouts include their seafood delight, kung pao chicken, their beef chow mein, and their shrimp tempura and potstickers! It'd be much easier to list the food I've ordered here that I didn't like, which is... nothing, lol. The best part is, the service here is pretty quick, so you're not having to wait long for your food or drinks. Needless to say, I consider this place one of Henderson's best-kept secrets, which is why I'm willing to spill this particular secret since you really can't go wrong with delicious noodles, whatever form they come in. The Ultimate Ramen, despite its name, was underwhelming -- mediocre at best, lacking the depth and richness you'd expect from a bowl with that kind of billing. The sushi rolls were equally disappointing. Both the California Roll and the Philly Roll suffered from bland, flavorless rice -- the foundation of any good sushi. The sweetness and tanginess that should come through in well-seasoned sushi rice were completely absent. The Philly Roll was especially let down by the cream cheese, which had virtually no taste and added nothing to the roll. Even the wasabi lacked any real heat or pungency, which honestly surprised me the most. The one bright spot was the service. Our server was working the floor entirely on her own and still managed to be attentive and pleasant throughout. That kind of dedication deserves recognition. Overall, the kitchen needs to revisit its seasoning and flavor profiles across the board. With some attention to the basics properly seasoned rice, quality ingredients, and bold condiments,this place could be so much better. For now, it's hard to recommend.
