I was particularly curious about the Ceviche wings because I'd never heard of them before. The ceviche sauce is inspired by Aji Limo Ceviche, a lively Peruvian dish featuring fresh, raw white fish like sea bass or flounder "cooked" in lime juice, seasoned with citrusy, spicy Aji Limo peppers, red onions, and cilantro. It's usually served with sweet potato, corn, and leche de tigre (tiger's milk), offering a tart, spicy, and refreshing flavor. The Ceviche wings were fantastic. They had a bright citrus kick, and I could taste all the distinct flavors, including the spices and chilies. They really hit the spot. The barbecue wings were just as enjoyable, with a sweet yet tangy sauce and perfectly seasoned chicken.
